SKILLET HAM AND VEGETABLES AU GRATIN
Busy day? Let's cook up something simple, tasty and hearty. You may never heat up another frozen meal once you try this recipe. A skillet dish full of ham, au gratin potatoes, broccoli, carrots and onions cooked in a cheesy sauce makes for an easy and delicious weeknight dinner.

Steps:
- In 10-inch nonstick skillet, melt butter over medium heat. Add carrot and onion. Cook 6 to 8 minutes, stirring frequently, until vegetables are softened.
- Add potatoes and sauce mix (from box), hot water and milk; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover; simmer 10 minutes, stirring occasionally. Stir in ham and broccoli; cover and cook 10 to 12 minutes, stirring occasionally, until potatoes and broccoli are tender.
- Remove from heat; stir in cheese, and continue stirring until cheese is melted. Serve immediately.

- Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes. Stir in flour, white pepper and salt until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes., Stir in 1 cup cheese. Reduce heat; cook until cheese is melted (sauce will be thick), 1-2 minutes. Remove from heat., Add potatoes, ham and broccoli to sauce; stir gently to coat. Transfer to 8 greased 8-oz. ramekins., Bake, covered, 40 minutes. Sprinkle with remaining cheese. Bake, uncovered, until potatoes are tender and cheese is melted, 20-25 minutes longer.

- Preheat oven to 375 degrees F (190 degrees C).
- Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
- Bake uncovered in preheated oven for 40 minutes.

- Spray a large skillet with pam.
- In the skillet cook ham, celery, and onion till vegetables are tender.
- Stir in potatoes, fresh green beans if using them, water, thyme and pepper.
- Bring to boiling; reduce heat.
- Cover and simmer for 20 minutes or till potatoes are tender and most of the liquid is absorbed.
- If using frozen green beans, add to ham and potato mixture the last 7 minutes of cooking.
- To serve, sprinkle with parmesan cheese.
