- Spray 13x9-inch (3-quart) baking dish with cooking spray. Separate dough into 8 biscuits; cut each biscuit into 8 pieces. Arrange evenly in baking dish.
- Top biscuits with potatoes, frozen sausage, bacon, green onions and 1 1/2 cups of the cheese. Set aside.
- In large bowl, beat eggs, half-and-half, salt and pepper with whisk until well blended. Pour evenly over biscuit mixture in baking dish. Cover; refrigerate at least 8 hours or overnight.
- Heat oven to 350°F. Uncover baking dish. Sprinkle with remaining 1/2 cup cheese. Bake 48 to 53 minutes or until center is set and edges are deep golden brown. Let stand 15 minutes before serving. Cover and refrigerate leftovers.

EGG AND POTATO CASSEROLE

- In a large bowl, whisk egg substitute and milk. Stir in the potatoes, 1 cup cheese, onion, 2 tablespoons bacon, salt, seasoning blend and chili powder. Pour into an 8-in. square baking dish coated with cooking spray. , Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese and bacon. Bake 3-5 minutes longer or until cheese is melted. Sprinkle with green onions. Let stand for 5 minutes before cutting.

- Preheat oven to 375 degrees F. Cook the potato dices in salted boiling water for about 5 minutes. Drain and let cool.
- Remove casings from sausage, unless you are making your own mix like me. Heat a large skillet to medium-high and cook the sausage until browned. Break it up in the process. Remove from skillet with a slotted spoon. Leave 1 tablespoon of grease.
- Cook the onion and red pepper in the sausage grease for about 5 minutes. Add the garlic and cook a couple more minutes. Fill into a large baking dish (9x13 inches) together with sausage and potato dices.
- In a large bowl, whisk together the eggs, milk and black pepper. Add 1.5 cups of the shredded cheese and stir to combine everything. Pour into the baking dish.
- Sprinkle the remaining cheese on top, cover with foil and bake for 20 minutes. Uncover and continue baking for 10-15 more minutes.
- Let the breakfast casserole rest for a few minutes. Add sliced green onion and serve hot.

This is a casserole that was used for Lenten meals by my in-laws. It is Hungarian in origin and everywhere I take it, I get requests for the recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
- In a 9x13 inch casserole dish layer potatoes and eggs, sprinkling each layer of eggs with seasoning salt, ending with potatoes.
- In a small saucepan over low heat, melt margarine with sour cream. Pour over potatoes and sprinkle lightly with seasoning salt.
- Bake in preheated oven for 30 minutes.

- Preheat oven to 350 degrees and spray a 9x13 casserole dish with cooking spray.
- Open up a package of biscuits and cut each into 6 pieces.
- Spread cut biscuits in the bottom of the greased casserole dish.
- Cook breakfast sausage according to package directions. Cut into bite sized pieces and spread over top of biscuits.
- Sprinkle 1/2 cup of shredded cheese over the sausage.
- Beat 6 eggs with milk and pour over the biscuits and sausage.
- Sprinkle remaining cheese over the top and add a shake of salt and pepper.

- Brown the sausage, or cube ham ready for the casserole. Whisk together eggs, milk, salt and pepper. Stir in the cooked sausage or cubed ham if using along with the cheese. Spray a 9x13-inch baking dish. If using ham slices or sausage patties, lay them across the bottom of the prepared baking dish. Cut canned biscuits into quarters and fold into the egg mixture. Pour the egg mixture into the baking dish and bake at 350°F for 30-40 minutes or until the biscuits are nicely browned and the eggs set. Allow to cool a few minutes before cutting.
POTATO, EGG AND BISCUIT BREAKFAST CASSEROLE
I threw this together last night to cook for breakfast this morning using just what I had on hand and it turned out beautifully. This is very adaptable to your individual taste. You can leave out the bacon bits, or substitute cooked sausage or ham. Next time I will definitely add mushrooms and green peppers! This is wonderful served with fresh tomato slices and/or other fruit.

This is a great breakfast casserole for company as you can make it ahead and pop it in the oven an hour before you need it. It also makes for a great brunch dish...I always make it for Christmas just to have something good and handy to eat whenever the kids show up. Then later comes the big dinner!

- First, brown the breakfast sausage. Heat the olive oil in a cast iron skillet over medium high heat. Cook the sausage in it as you break it up until it is browned and cooked through completely. Take the pan off of the heat and set it aside to let the sausage cool. This is important so that it doesn't scramble the eggs in the custard!
- While the sausage cools, get out an 8 x 8 baking pan and spray it liberally with cooking spray. Crumble all of the biscuits into the baking pan in a coarse crumb and press them down to be an even layer. Whisk the eggs, milk, Sriracha, salt and pepper together in a bowl to make the custardy binder for the casserole.
- Spread the cooled sausage out in an even layer on top of the biscuits and pour the custard over everything to coat it all. Press down gently to make sure everything gets coated in the custard evenly. Top the casserole with the four slices of pepper jack cheese. Cover the baking dish with foil and let the casserole sit in the refrigerator overnight.
- In the morning, pre-heat the oven to 350 and uncover the casserole. Bake it for 40 minutes or so to completely melt the cheese and set the custard. Take it out and let it cool for a few minutes, then cut into quarters and serve immediately!
