Potato Dumplings with Bacon and Onions image

These delicious potato dumplings have become a family tradition. Served with beef or pork roast, they are delicious with or without gravy. They are a little time-consuming but well worth the wait.

2 large potatoes, peeled and chopped
2 large eggs
Flour
¼ pound bacon, chopped
½ large onion, chopped

Steps:

  • Bring a large pot of lightly salted water to boil.
  • Place potatoes in food processor, and pulse until finely chopped. Add eggs, and pulse a few times to combine. Pour mixture into a large bowl. Mix in enough flour to make a very thick dough.
  • Place dough by spoonfuls into boiling water. Boil until done, about 20 minutes (depending on size). Drain, and set dumplings aside.
  • Place chopped bacon and onion in a skillet over medium heat. Cook a few minutes until bacon releases fat. Place hot dumplings into pan; cook until bacon is crisp and onions and dumplings are browned.

Polish Potato Finger Dumplings Recipe (Kartoflane Kluski) image

Potato finger kluski dumplings can be eaten as a side dish with butter or as the main course when combined with caramelized onions and bacon.

2 cups hot mashed potatoes (made from 3 large potatoes)
1/3 cup fine dry bread crumbs
2 egg yolks
3/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup all-purpose flour
2 egg whites, beaten until stiff, but not dry

Steps:

  • In a large bowl, mix all the ingredients in the order given.
  • Place mixture on a lightly floured surface. Knead in additional flour if mixture is too sticky.
  • Put a large pot of salted water on high heat to boil.
  • Meanwhile, divide dough in half and roll into a long cylinder, the thickness of a pencil. Cut at 2-inch intervals.
  • Drop dumplings into boiling salted water. Bring water back to a boil and, once dumplings rise to the surface, cook 5 minutes.
  • Using a slotted spoon, remove dumplings to a serving bowl. Add melted butter and breadcrumbs, if desired. Note: A variation of this dish is to add caramelized onions and fried bacon or other smoked meats.
