We grow potatoes and found this recipe is a great way to use up leftover mashed potatoes. This dish is a favorite among our family and friends.

- In a bowl, combine potatoes, egg, Parmesan cheese, butter and salt. Press onto bottom and up the sides of a greased 10-in. pie plate. Spread pizza sauce over potato mixture to within 1/2 in. of edges. Top with pepperoni and mushrooms. Sprinkle with mozzarella cheese. Bake at 400° for 25-30 minutes or until heated through and cheese is melted.

Steps:
- Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper.
- In a large heavy skillet on medium heat, brown the sausage, breaking into small pieces as it cooks. After 5 minutes, add the Simply Potatoes Cubed Potatoes w/Onions and cook for another 3 minutes. Set aside.
- Remove the pizza dough from the tube, cut the rolled dough in half and unroll each onto a parchment paper lined baking sheet. Shape them both into a rustic shaped rectangle, about 7 1/2" x 11" each.
- Spread half of the pasta sauce onto each rectangle, then top the sauce with half of the sausage and potato mixture on each. Sprinkle equal portions of cheese over both pizza tops and bake for 15 minutes, or until the crust is nicely browned and cheese is melted.
- Cut each rectangle into 4 pieces and serve.

- Preheat oven to 400 degrees F. Heavily oil a 9-inch metal pie pan. Squeeze out excess liquid from grated potatoes and place in large bowl. Mix in salt And egg until well combined. Press potatoes into pie pan and up the sides. If mixture is too sticky, dip fingers in flour. Bake crust for 30 minutes or until it begins to turn golden brown, brushing occasionally with oil.
- In a medium skillet melt butter over medium heat and cook onion until tender. Stir in the mushrooms and cook until golden brown.
- Spread grated cheese over bottom of potato crust. Spread out the onion and mushroom mixture over the cheese. In a medium bowl, whisk or beat together with a fork the eggs and the cream. Season mixture with salt and pepper and pour over vegetables and cheese.
- Reduce oven heat to 375 degrees F and bake for 40 minutes or until firm. Allow quiche to cool for 15 minutes before slicing and serving.

- Preheat your oven to 400 degrees.
- Combine the Simply Potatoes mashed potatoes and your mashed butternut squash in a large bowl until thoroughly blended. Reserve half of the mixture in a smaller bowl.
- Returning your focus to the large bowl now containing half of the total mash mix, sift in the flour and baking powder. Work the dry and wet ingredients together until well combined and a ball of dough forms. Add flour as necessary in tablespoons to keep it from sticking.
- Once you've successfully formed a ball of dough, cover the bowl with plastic wrap and set aside for a few minutes to rest.
- Meanwhile: grease a pizza pan or baking sheet and shred your cheese.
- Once the dough has rested, roll it to your desired thickness and transfer to your pan, or simply press it into shape on the pan itself. Set the crust in the oven to pre-bake for about 10 minutes. Doing this will ensure that your crust cooks through entirely once you add your toppings.
- Once pre-baked, remove from the oven and spread with your reserved mashed potato-squash mix. Top the mix with the cheese, and return your pizza to the oven.
- Cook for 8-15 more minutes, or until the crust underneath has cooked through and the cheese is beginning to turn golden. Note that the exposed crust will not get very brown on top, but that the dough in contact with the pan should turn a light golden brown.

- Mix mashed potatoes, ricotta cheese, chives and garlic together. Season with salt and pepper to taste.
- Lay out wonton wrapper on counter. Spoon mixture one inch apart on wanton wrapper. Using water, brush edges of wrapper. Lay second sheet on top, careful to line up the sheets. Using a pastry or ravioli cutter, cut down horizontally and vertically on pasta, making 4 even squares of ravioli.
- Do this until all of the mixture is used up.
- Bring pasta to a boil in a pot, seasoned with salt and olive oil. Wait until you can clearly see through them and carefully take them out on a plate topping with a sauce or cheese of your choice.
