POTATO CROWNS

Steps:
- Peel the potatoes and cook them in salted water. Fry the onion in a frying pan in a drizzle of olive oil and then add the ground beef with salt and pepper. Cook until meat is cooked through.
- Line the inside of the bowls with plastic wrap. Mash the potatoes along with the corn starch, eggs, salt, and pepper. Spread 1 layer of mashed potatoes inside each bowl and then spread half of the ground beef inside. Sprinkle with mozzarella and cover with the remaining meat. Close the bowls with a layer of mashed potatoes and place them in the freezer for 2 hours.
- Fill the Ziplock bag with the remaining puree and cut 1 of the lower corners to make a piping bag. Unmold the bowls of mashed potatoes by turning them over and remove the cling film. Cover each dome with spikes of mashed potatoes formed using the "piping bag" and place in the freezer for 1 hour.
- Remove from the freezer, sprinkle with flour then fry. Drain and place on a baking sheet covered with baking paper. Bake for 15 minutes at 335 °F and enjoy!

- In several large bowls, combine all ingredients. Transfer to 10 greased 11x7-in. baking dishes. Bake, uncovered, at 350° for 45-55 minutes or until potatoes are tender.

LOADED CRISPY CROWN CUPS
Loaded Crispy Crown Cups are crispy potato cups filled with your favorite loaded baked potato fixin's. Crispy Crowns form the Cups that are topped with melted cheese, sour cream, and crumbled bacon. Be sure to make plenty because they disappear quickly.

- Preheat oven to 425° F
- If you're not using a non-stick muffin pan, spray the cups with non-stick spray. It's not necessary to spray the cups with non-stick spray if using a non-stick pan. (Note 3)
- Place 3 frozen Golden Crispy Crowns in each cup of the muffin pan. Bake for 10 minutes. (See Note 1)
- Remove the muffin pan from the oven and use a greased shot glass or similar item to press the Golden Crispy Crowns to form a Crispy Crown Cup.
- Return to oven for 15 additional minutes. Remove from oven. Add about a tablespoon of shredded cheese to each Crispy Crown Cup.
- Bake at 425° F for 5 minutes, or until cheese is fully melted. Remove from oven; allow to cool for 10 minutes before removing from muffin pan. Transfer to paper towel lined plate to absorb any excess grease.
- Pipe 1/2 to 3/4 teaspoon of sour cream onto melted cheese. (See Note 4)
- Sprinkle on crumbled bacon; garnish with chopped parsley or chives if desired. Yield: 12 Loaded Crispy Crown Cups.

CARAMELIZED SWEET POTATO CROWNS
Instead of that same ol' baked sweet potato casserole for Christmas this year, we've come up with a new recipe, that's got a bit of a regal feel. What really gives our Caramelized Sweet Potato Crowns a special something is the ooey, gooey butter pecan topping that has just enough crunch to compliment the creamy potatoes! This new can't-resist twist on an old-time favorite is guaranteed to get everyone excited for Christmas dinner!

- Preheat oven to 400 degrees F.
- In a large bowl, combine oil and salt; mix well. Add sweet potato slices and toss until evenly coated. Place on a rimmed baking sheet.
- Bake 25 to 30 minutes or until fork-tender.
- Meanwhile, in a small bowl, mix together brown sugar, pecans, cinnamon, and butter until crumbly. Sprinkle on top of each potato and return to oven; cook 8 to 10 minutes or until sugar is melted and nuts start to toast up. Serve immediately.
COWBOY CASSEROLE WITH TATOR TOTS
It's comfort food on a fork. I've made it two times in 3 weeks. Think shepherd's pieish, with a wicked twist. A delicious mix of hamburger, cheese and corn sandwiched in between a layer of crunchy tots.

- Before I got ready to make this casserole, I let the Crispy Crowns sit on the counter to defrost for an hour or so. The original recipe used still frozen tater tots, but I felt they wouldn't cook as well if they were still frozen solid.
- In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.
- In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.
- Grease a 9x13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.

- Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again. Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in small batches. Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried. Season with additional salt if desired.
