SOUR CREAM AND CHIVE POTATO PANCAKES

Sour Cream and Chive Potato Pancakes image

Yummy pancakes which can be served for breakfast, brunch, as a snack or as a side-dish. Although the recipe specifies sebago potatoes, you can also use russet burbank or spunta potatoes. All of these are potatoes that are varieties which are good for baking. This recipe has been adapted from a recipe in the Australian Women's Weekly's 'Potatoes: over 100 exciting ways to cook the humble spud', recently reprinted by popular demand. It is essential to squeeze as much moisture as possible from the potatoes in step one before adding the potatoes to the other ingredients. Please feel free to vary the herbs according to your taste preferences.

Categories     Breakfast

Time 35m

Yield 20 Sour Cream and Chive Potato Pancakes, 6 serving(s)

Number Of Ingredients 13

900 g sebago potatoes, peeled (just under 32oz)
1 medium brown onions (150g) or 1 yellow onion, finely chopped (just under 5oz)
2 -3 garlic cloves, finely chopped
1/4 cup fresh chives, finely chopped
1 teaspoon dried rosemary, to taste
1 teaspoon dried sage, to taste
sea salt, to taste
fresh ground pepper, to taste
2 eggs, separated
2 tablespoons plain flour
1/2 cup sour cream, low fat is fine (120g)
2/3 cup vegetable oil (160ml)
80 g butter (just under 3oz)

Steps:

  • Grate the potatoes coarsely; squeeze the excess moisture from the potatoes; combine the potato in a large bowl with the onion, garlic, chives, rosemary, sage, salt and pepper to taste, egg yolks flour and sour cream.
  • Beat the egg whites in a small bowl with an electric mixer until firm peaks o the potato mixture.
  • Heat 2 tablespoons of the oil with 20g of the butter in a non-stick pan; cook heaped tablespoons of the potato mixture, uncovered, until browned on both sides; drain the pancakes on absorbent kitchen paper and cover to keep warm; repeat with the same amounts of the remaining oil, butter and potato mixture.
  • Notes: One Australian measuring cup holds approximately 250ml (8 fluid ounces), one Australian tablespoon holds 20ml and one Australian teaspoon holds 5ml. North America, New Zealand and the United Kingdom use a 15ml tablespoon. In this recipe, the addition of the rosemary and sage is really best guided by taste. I never measure herbs.

Roasted Sea Scallops with Chive Potato Pancake and Caviar-Sabayon Sauce image

Provided by Food Network

Yield 5 servings

Number Of Ingredients 11

1 medium Idaho potato, shredded
Salt and pepper to taste
2 tablespoons chives, chopped
1 teaspoon flour
5 fresh scallops
4 tablespoons olive oil
2 egg yolks
2 tablespoons champagne vinegar
4 tablespoons champagne
1 teaspoon beluga caviar
salt and pepper to taste

Steps:

  • To prepare the scallops:

TRADITIONAL HANUKKAH POTATO LATKES

Traditional Hanukkah Potato Latkes image

Celebrate Hanukkah with a traditional recipe for kosher, dairy-free fried potato latkes. All you need are potatoes, onions, eggs, and flour.

Provided by Giora Shimoni

Categories     Appetizer     Side Dish

Time 51m

Number Of Ingredients 8

2 1/2 to 3 pounds potatoes
2 onions (peeled)
3 large eggs ( lightly beaten )
1 teaspoon salt
1/4 teaspoon pepper
1/4 to 3/4 cups all-purpose flour
1 cup canola oil (for frying)
Garnish: applesauce or sour cream for serving

Steps:

  • Gather the ingredients.
  • Line a platter or plate with paper towels and set aside.
  • Peel the potatoes. Place them in a bowl and add enough cold water to cover them, so they won't turn brown. When ready to prepare the latkes, drain the potatoes.
  • Place potatoes and onions in a food processor fitted with a knife blade (also known as the s-blade). Pulse until smooth. Drain the mixture well.
  • Pour the potato mixture into a large bowl. Add the beaten eggs, salt, and pepper, and mix well.
  • Add enough flour so that the mixture holds together.
  • Pour the oil into a large, deep frying pan for shallow frying. Heat the oil over medium-high heat.
  • Carefully drop 1/4 cup of the potato mixture into the hot oil. Flatten the pancake slightly so the center will cook. Repeat with additional batter, taking care not to crowd the pan.
  • Fry for several minutes on each side until golden brown and cooked through.
  • Transfer to the paper towel-lined platter to drain, and continue frying the remaining latke batter in batches. Serve immediately with applesauce or sour cream if desired.
