CHEDDAR CHIVE BREAD

"THIS BREAD is the perfect accompaniment to a piping-hot bowl of chili. In addition to a garnish of cheddar cheese on the chili, which Mom often added, we had her wonderful bread, chock-full of cheese flavor. Sometimes I'll make the dough into rolls or soft breadsticks."

Yield 2 loaves (16 slices each).

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°)
3 cups shredded cheddar cheese
1/2 cup minced chives
1/4 cup butter, softened
1/4 cup sugar
1-1/2 teaspoons salt
1 teaspoon dried thyme
5-3/4 to 6-1/4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the cheese, chives, butter, sugar, salt, thyme and 3 cups flour. Beat on medium for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves and place in greased 9x5-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack.

Number Of Ingredients 12

2 packages (1/4 ounce each) active dry yeast
2 tablespoons plus 1 teaspoon sugar, divided
1/2 cup warm water (110° to 115°)
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup hot water
1/2 cup nonfat dry milk powder
1/2 cup sour cream
1/2 cup minced chives
2 tablespoons butter, melted
2 teaspoons salt
1 teaspoon dried tarragon, crushed
6 to 6-1/2 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand for 5 minutes. , In a large bowl, combine the soup, hot water, milk powder, sour cream, chives, butter, salt, tarragon, yeast mixture, remaining sugar and 5 cups flour. Beat until smooth. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Divide in half. Shape in two loaves and place in greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. Bake at 400° for 30 minutes or until golden.

Steps:

  • Place ingredients in bread machine pan in order suggested by manufacturer.
  • Select regular, rapid or delayed-time bake cycle and follow manufacturer's directions for starting machine.

Tarragon & Chive Potato Bread image

This soft, delicious bread stays moist for days. It's easy to make because it uses cream of potato soup instead of mashed potatoes.

Number Of Ingredients 11

6 -6 1/2 cups flour
2 (1/4 ounce) packages active dry yeast
1 1/2 cups milk
2 tablespoons sugar
2 teaspoons salt
2 tablespoons butter
1 cup condensed cream of potato soup
1/2 cup sour cream
1/4 cup fresh chives or 2 teaspoons dried chives
2 teaspoons tarragon
butter, for brushing finished bread

Steps:

  • Combine 3 cups flour and yeast in a large bowl.
  • Heat milk, sugar, salt and butter until butter melts, and stir into dry ingredients in bowl along with soup, sour cream, chives and tarragon.
  • Beat in more flour, gradually, until dough becomes too stiff to stir.
  • Turn out onto floured surface and knead 5 to 8 minutes, adding only as much flour as needed to produce a dough that is smooth, elastic and just past the point of being sticky.
  • Put in a large oiled bowl, and cover with plastic wrap.
  • Allow to rise in a warm place until doubled in bulk (about 1 hour).
  • Punch down, and divide in half to make 2 loaves.
  • Pre-heat oven to 375F (400 at 6000 ft).
  • Place loaves in well greased pans, cover and let rise until doubled in bulk (about 30 minutes).
  • Bake bread in the center of the oven for 30 minutes, or until browned and hollow sounding when tapped (May have to cover with foil tent the last 10 minutes to prevent excessive browning).
  • Brush hot loaves with butter.
  • Remove from pans and place on rack to cool.
