This recipe was popular in the 60's. It was one of the first tuna casserole's and is still a great comfort food today. Easy to make and has all the things that are usually on hand. This can also be made with the same size can of chicken. Sometimes I add mushrooms and english peas.

1 1/2 cups noodles
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk
1 (5 ounce) canned tuna, drained
1/2 cup potato chips
1/2 cup chopped onion
1 cup shredded cheese

Steps:

  • Cook noodles in unsalted water.
  • Drain noodles. Mix soup, milk and tuna with noodles.
  • Add shredded cheese and onion.
  • Pour into casserole dish.
  • Crush potato chips and sprinkle on top. Bake 15 minutes at 425 degrees.

4 tablespoons unsalted butter, plus more for the baking dish
1 medium onion, finely chopped
8 ounces cremini mushrooms, sliced
1/4 cup all-purpose flour
2 cups whole milk
1 cup chicken broth
8 ounces medium pasta shells (about 3 cups)
One 6-ounce jar Italian tuna in olive oil, drained and flaked
2 tablespoons chopped fresh flat-leaf parsley
2 cups grated sharp white Cheddar
1 1/2 cups crumbled flavored potato chips, such as salt-and-vinegar, onion or jalapeno

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil. Butter a 2-quart casserole or baking dish.
  • Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Increase the heat to medium high and add the mushrooms and 1/4 teaspoon salt. Cook, stirring, until the mushrooms release their liquid and turn golden brown, 8 to 10 minutes. Sprinkle the flour over the mushrooms and cook, whisking, about 1 minute. Gradually add the milk while whisking constantly, then whisk in the chicken broth. Bring the mixture to a simmer, stirring often. Simmer until thickened, about 5 minutes.
  • Meanwhile, cook the pasta in the boiling water until al dente according to the package directions. Drain the pasta and stir it into the mushroom mixture. Add the tuna and parsley and stir to combine. Turn off the heat and add 1 cup of the Cheddar. Stir to combine. Season with salt and pepper.
  • Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1 cup Cheddar on top and then cover with the potato chip crumbs. Bake until bubbling and golden brown on top, about 20 minutes. Let stand 5 minutes before serving.

1 (10.75 ounce) can condensed cream of mushroom soup
½ cup evaporated milk
1 (5 ounce) can tuna, drained
3 cups shredded American cheese
⅓ cup chopped onion
½ cup crushed potato chips
1 pinch paprika

Steps:

  • In a large pot with boiling salted water cook egg noodles until al dente. Drain.
  • In a large bowl combine the cooked egg noodles, cream of mushroom soup, evaporated milk, tuna, grated American cheese, and chopped onion. Pour into a greased 1.5 quart casserole dish. Sprinkle the top with the crumbled potato chips and the paprika.
  • Bake in a preheated 425 degree F (220 degree C) oven for 15 to 20 minutes.

1 (10 2/3 ounce) can cream of mushroom soup

Steps:

  • Make soup according to directions on label.
  • In a casserole dish: put a layer of potato chips on bottom.
  • Alternate with layers of tuna to end up with 3 layers of tuna; 4 layers of chips.
  • Pour soup over all. Add another layer of chips on top.
  • Bake in a 350° oven (uncovered) for 15 minutes.

1 can (5 ounces) light tuna in water, drained and flaked
1 package (10-1/2 ounces) frozen asparagus tips, thawed and patted dry or 1 can (15 ounces) asparagus spears, drained and sliced
SAUCE:
2/3 cup evaporated milk
1 tablespoon lemon juice
1/4 teaspoon ground mustard

12 oz. wide egg noodles
1 10.5 oz. can condensed cream of mushroom soup
1/2 cup 2% milk
2 5 oz. cans solid white albacore tuna (drained)
1/2 cup frozen peas (DO NOT THAW BEFORE USING)
1/2 cup yellow onion (diced (optional))
1 tsp. kosher salt
1 tsp. black pepper
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 cup potato chips (roughly crushed )

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly spray an 8 x 8 baking dish. If you have doubled the recipe, spray a 9 x 13'baking dish, set aside.
  • If you are adding onion to the dish, dice the onions and lightly sauté them in a non-stick pan with a little bit of olive oil or butter until they are translucent and then set aside.
  • Salt the water and bring it to a boil in a large pot. Prepare the noodles according to the directions on the bag or the box. BUT make sure to cook just until they are al dente (NO LONGER). Then drain. DO NOT RINSE.
  • While the pasta is cooking, in a large bowl, add in the milk, and cream of mushroom soup and combine together thoroughly. Add in the cooked egg noodles, the drained albacore tuna, the onions, and the frozen peas and the salt and pepper. Stir all of the ingredients together and make sure the noodles are completely coated.
  • Pour the mixture into the prepared dish. Sprinkle the cheese all over the top of the casserole then sprinkle on the potato chips.
  • Place the dish into the oven and bake for 20 to 25 minutes or until the casserole is bubbly and hot inside. Turn the oven to boil (low) and let the top become golden brown.
  • Remove from the oven and let it cool briefly before serving.
  • Enjoy!
