MAKEOVER BEEF & POTATO SOUP
Steps:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Combine flour and 1 can broth until smooth. Add to beef mixture. Bring to a boil; cook and stir until thickened, about 2 minutes., Transfer to a 5-qt. slow cooker. Stir in the potatoes, carrots, celery, seasonings and remaining broth. Cover and cook on low for 6-8 hours or until vegetables are tender., Stir in cheese and milk. Cover and cook until cheese is melted, about 30 minutes longer. Just before serving, stir in sour cream.

CREAM OF ONION AND POTATO SOUP

- In a large pot over high heat, combine the potatoes, onions and water to cover and boil for 30 to 45 minutes, or until tender. Drain the mixture, reserving 3 cups of the water. Transfer this in small batches to a blender and puree until smooth.
- In the same pot over medium heat, combine the flour and the butter, stirring together well, to form a roux. Slowly add the milk, stirring constantly, until well blended. Reduce heat to low and add the pureed potato mixture. Let simmer, stirring occasionally for 5 to 10 minutes. Add the parsley and season with salt and pepper to taste.

- Wash and cut unpeeled potatoes into chunks. I make 2 bowls and toss potatoes in olive oil and then in onion soup mix that is whisked together with black pepper and garlic powder.
- Spray a baking sheet with cooking spray. Spread potatoes on sheet and bake in preheated 425 degree oven for about 40 minutes or until nicely browned and cooked. Turn potatoes with spatula after 20 minutes.
IRISH-STYLE POTATO ONION SOUP
Steps:
- Gather the ingredients.
- Heat a 6- to 8-quart stockpot, add 4 tablespoons of the butter and onions, and cook gently. Do not let the onions brown. Add the peeled and sliced potatoes, milk, and chicken stock . Add 1/4 cup of the chives, celery seeds, and thyme . Cover and cook gently for about an hour.
- In a small saucepan melt remaining 2 tablespoons butter and whisk in the flour. Let the roux bubble for 2 minutes on medium-low heat, stirring constantly. Thicken the stock with the roux, whisking carefully to avoid lumps. Cook for 5 to 10 minutes and then puree together in a food blender .
- Add the cream and gently reheat, but do not boil. Season with salt and pepper . Serve with remaining 1/4 cup chopped fresh chives and the crisply fried bacon as garnishes.

- Cook and stir ground beef in a pot over medium-high heat until slightly browned, about 5 minutes. Stir in flour.
- While meat is browning, rinse starch from potatoes and keep in water until needed.
- Remove browned meat to a plate, discarding fat. Place butter in the pot along with celery and onion. Cook over medium-high heat until onion is soft and translucent, 5 to 7 minutes. Steps:
- Put a quarter of the onions into a large saucepan with the potatoes and 4 cups of water.
- Bring to a boil, then cover and let cook until the potatoes are completely tender.
- Meanwhile melt the butter or margarine and oil in another saucepan, put in the remaining onions, cover, and cook gently for about 15 minutes, or until they are very soft.
- Puree the potato mixture in a blender or food processor, then return it to the saucepan.
- Add the onions to the saucepan, together with their buttery juices.
- Season to taste with salt, pepper, and nutmeg, reheat gently, and serve.

- In a large saucepan over medium heat, saute onions in butter and olive oil, stirring occasionally until onions just begin to turn golden. Add garlic, steak, and potatoes to pan and continue to cook until beef is no longer pink and onions are a deep golden-brown.
- Add bay leaf, beef stock, wine, and thyme to pan and bring to a simmer over medium-high heat. Reduce heat to medium-low and let simmer covered 20-30 minutes until potatoes are tender. Remove bay leaf and season with salt and pepper to taste.
- Lay french bread in a single layer on a baking sheet and top with shredded swiss cheese. Broil slices under high heat 2-3 minutes until toasted and cheese is golden.

- Trim the ends of the onion, remove the peel, and slice in half. Lay the onion cut side down on your cutting board and thinly slice into ¼” slices using a sharp knife or madonline. Set aside.
- Heat a dutch oven over medium heat; add the ghee or butter and allow it to melt. Add the onions to the pot plus a pinch of salt, then stir to coat the onions in the fat.
- Saute the onions over medium heat, stirring every 5 minutes or so, until the onions soften, then brown, then caramelize. If the pot gets too dry and the onions start to burn and/or stick, add a bit of water or broth to deglaze the pan and keep the onions moist. I typically add up to ¼ cup of liquid during the caramelization process. Caramelization takes time, anywhere from 30-40 minutes. The onions are done when they are uniformly deep, golden brown.
- While the onions are caramelized, dice the potatoes and set aside. I leave the skins on, but you can peel if desired. Chop the garlic and herbs, and set aside separately.
