- Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion., Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. If desired, top with additional pepper.

- In a large saucepan, bring cream, milk, salt and garlic powder to a boil. Add potatoes; reduce heat. Cover and simmer for 10-15 minutes or until the potatoes are tender. Coarsely crush 1/4 cup of croutons. Remove potatoes from the heat. Gently stir in the crushed croutons and pepper. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with cheese and remaining croutons. Bake, uncovered, at 400° for 5-6 minutes or until the cheese is melted.

- Heat oven to 375°F. Grease 1 1/2-quart casserole with shortening or spray with cooking spray.
- In 2-quart saucepan, melt butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
- Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 1/2 cups of the cheese until melted.
- Spread potatoes in casserole. Pour cheese sauce over potatoes. Bake uncovered 1 hour.
- In small bowl, mix remaining 1/2 cup cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes or until top is brown and bubbly and potatoes are tender.

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

CLASSIC FRENCH GRATIN DAUPHINOIS
Steps:
- Gather the ingredients.
- In a large saucepan over medium heat, bring the potatoes, milk, and garlic to a gentle simmer.
- Continue to cook the potatoes, gently stirring occasionally and adjusting the heat as necessary to maintain a simmer, until just tender, about 15 minutes. Be very careful not to overcook them as they need to hold their shape for layering in the pan. Position a rack in the center of the oven and preheat to 350 F.
- Transfer the potatoes to a medium bowl with a slotted spoon, taking care not to break the slices. Drain the milk from the pan and reserve for another use. Add the heavy cream, crème fraiche or sour cream, salt, pepper, and nutmeg to the saucepan and whisk to combine. Gently return the potatoes to the pan.
- Heat the potato-cream mixture to barely a simmer (a few bubbles are fine but no more) for 10 to 15 minutes until the potatoes are very tender but not falling apart.
- Butter a large baking dish. Transfer the potatoes to the baking dish with a slotted spoon, layering them without breaking them up too much.
- Cover with the cream from the pan.
- Sprinkle the Gruyere cheese over the potatoes (if using).

SUPER EASY POTATO GRATIN
Steps:
- Gather the ingredients. Preheat the oven to 350 F (175 C/Gas Mark 4).
- Peel, rinse, and dry the potatoes and slice as thinly as possible (a mandoline is good for this, but a sharp knife works too).
- In a large saucepan, place the potatoes, milk, cream, 1 of the crushed garlic cloves, salt to taste, a dash of pepper, and a dash of nutmeg or mace.
- Bring to a very gentle boil over medium-low heat and simmer for 10 minutes until the cream thickens.
- Remove from the heat and add the grated Gruyère. Stir until the cheese has melted.
- Generously grease a 1 1/2 to 2-quart baking dish with 1 teaspoon of the butter, then rub the dish all over with the remaining lightly crushed clove of garlic.
- Pour the potato mixture into the dish, using a spoon to gently move the potatoes in the cream mixture to make sure they are all covered.
- Finely slice the brie into long strips and lay across the top of the gratin. Dot the surface with the remaining 2 tablespoons butter. Season with salt and pepper.
- Bake for about 40 minutes or until the top is bubbly and golden brown and the potatoes are soft when pierced with a knife. If the top is browning too quickly before the potatoes are cooked, cover with aluminum foil. Serve immediately. Enjoy.

- Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.

- Peel and slice the potatoes about 3-5mm thick.
- Add to a saucepan and cover with water, bring to the boil and reduce to a simmer for 7- 10minutes, they should be JUST cooked.
- Grease a 25x25 cm square baking dish with butter.
- Well drain the potatoes and pour into the dish, let cool for 20 minutes.
- In a bowl, mix the other ingredients in and pour over the almost cold potatoes. More butter can be dotted over the top if desired.
- Bake at 180oc for 25 minutes.

- Flavored ROUX: First, melt butter over medium-high heat, then add the garlic and toast, following with the flour and coat all the flour in the butter.
- First, wash off the potatoes well. Using a mandolin or sharp knife, make thin slices. The thickness choice is up to you. I suggest 1/8 inch slices. Remember the potato skin is where most of the health benefits reside. I took a peeler and removed only part of the skins. Made peeled stripes going down the length of the potato in an alternating pattern. It helps with the presentation. See Video Above./Below
- First, pour Bechamel sauce covering the bottom of your casserole dish. Using glass-bakeware is suggested for even cooking. The bechamel sauce acts to protect the potatoes from burning and sticking. Next, add two layers of potatoes. Lay the potatoes out with each potato slightly covering the last potato. Shingle pattern. Then add a layer of cheese and cover it with Bechamel sauce. Add a small amount of salt & pepper, cheese of your liking, and julienne cut an onion for more flavor and texture. Repeat the process till you've filled your bakeware to the desired level. Add the remaining Bechamel sauce, allow for the potatoes to stick out a small amount. Don't drown the potatoes in sauce, helps with presentation. Cover with more cheese and place on a cookie sheet to prevent bubbling over.
