An air fryer makes these easy apple fritters healthier than old-fashioned fritters, yet they are still just as delicious. They're a quick and easy dessert that includes a scrumptious brown butter glaze! -Alyssa Castriotta, North Scituate, Rhode Island

Cooking spray
1-1/2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
2/3 cup 2% milk
2 large eggs, room temperature
1 tablespoon lemon juice
1-1/2 teaspoons vanilla extract, divided
2 medium Honeycrisp apples, peeled and chopped
1/4 cup butter
1 cup confectioners' sugar
1 tablespoon 2% milk

Steps:

  • Line air-fryer basket with parchment (cut to fit); spritz with cooking spray. Preheat air fryer to 410°. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Add milk, eggs, lemon juice and 1 teaspoon vanilla extract; stir just until moistened. Fold in apples. In batches, drop dough by 1/4 cupfuls 2-in. apart onto air-fryer basket. Spritz with cooking spray. Cook until golden brown, 5-6 minutes. Turn fritters; continue to air-fry until golden brown, 1-2 minutes. Melt butter in small saucepan over medium-high heat. Carefully cook until butter starts to brown and foam, 5 minutes. Remove from heat; cool slightly. Add confectioners' sugar, 1 tablespoon milk and remaining 1/2 teaspoon vanilla extract to browned butter; whisk until smooth. Drizzle over fritters before serving.

Regardless of their variety or whether they were sliced or grated, the apples in our Apple Fritters exuded juice and produced soggy, undercooked interiors. We found that the best solution was to dry the apples with paper towels and mix them with the dry ingredients. The dry ingredients sucked up the moisture that would otherwise have leached out during frying. We like Granny Smith apples in these fritters because they are tart and crisp. Apple juice doesn't have enough flavor-you really do need the cider. Penzeys Extra Fancy Vietnamese Cassia Cinnamon is the test kitchen's favorite brand.

2 granny smith apples, peeled, cored, and cut into 1/4-inch pieces
2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup apple cider
2 large eggs, lightly beaten
2 tablespoons unsalted butter, melted
3 cups vegetable peanut oil
2 cups confectioners' sugar
1/4 cup apple cider
1/2 teaspoon ground cinnamon
1/4 teaspoon groud nutmeg

Steps:

  • 1. Spread prepared apples in single layer on paper towel-lined baking sheet and pat thoroughly dry with paper towels. Combine flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg in large bowl. Whisk cider, eggs, and melted butter in medium bowl until combined. Stir apples into flour mixture. Stir in cider mixture until incorporated.
  • 2. Heat oil in Dutch oven over medium-high heat to 350 degrees. Following step 1, use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
  • 3. Meanwhile, whisk confectioners' sugar, cider, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.

  • 1. Use a 1/3-cup measure and a spoon to carefully and gently portion batter into the hot oil.
  • 2. Use the spoon to gently press on each fritter. The flattened shape helps the interior cook through.

2 large granny smith apples
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 large eggs or 2 large extra large eggs
2 tablespoons butter, melted
3/4 cup apple cider
2 cups confectioners' sugar
1/4 cup apple cider
1/4 teaspoon nutmeg
1/2 teaspoon ground cinnamon
oil, to fry (see below)

Steps:

  • Heat 3 cups of vegetable oil to 350 degrees farenheit on medium-high heat in a large shallow pot.
  • Glaze: Combine confectioners sugar, 1/4 Celsius cider, 1/4 t. ground nutmeg and 1/2 t. ground cinnamon and set aside.
  • Mix dry ingredients (flour, sugar, powder, salt, cinnamon, nutmeg.).
  • Chop peeled Granny Smith apples into 1/4" cubes. Place into dry ingredients and toss. Whisk 2 eggs and melted butter, then add in 3/4 Celsius cider. Mix with a large spoon or spatula only until incorporated.
  • Measure 1/3 cup portions of the batter and place into the oil (no more than five fritters at a time and press the center down to flatten a bit with a large spoon, allowing fritter to be of equal thickness. Fry 3 (or more) minutes until nicely browned and flip, frying other side for 3 minutes. Drain on a paper towel-lined baking sheet. Spoon 1 Tablespoon of glaze over each fritter and spread over entire surface. WAIT TEN MINUTES BEFORE ENJOYING.

A FAVORITE treat from childhood. My mother always liked to prepare these delicious goodies for her three daughters. We could not wait until they were cool enough to eat. The cinnamon and nutmeg add to the flavor.

1/2 cup sugar
1 egg, beaten
1 cup milk
1/2 teaspoon vanilla
1 1/2 cups apples, finely chopped
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cups self rising flour
vegetable oil
confectioners' sugar (optional)
sugar, and cinnamon mixture (optional)

Steps:

  • Blend sugar with beaten egg. Add milk and vanilla.
  • Stir in apples. Mix cinnamon and nutmeg with flour. Lightly fold in flour mixture just until blended. Do not overstir.
  • Drop by small spoonfuls into hot oil on low to medium heat. Fry until light brown on both sides.
  • Place on paper towels.
  • If desired, sprinkle with confectioners' sugar or a mixture of half sugar and half cinnamon while hot.
  • Skin may be left on chopped apples.

1/2 cup cold water
1 egg
1/4 cup granulated sugar

Steps:

  • In deep fryer or 4-quart heavy saucepan, heat oil to 350°F.

5 Ingredient Fix Contest Entry I have an 8 year old son with Asperger Syndrome. Eating any fruits or veggies is nearly unheard of for him. I have become very clever sneaking in items undetected by his sensitive palate. The potatoes add amazing texture to these fritters. He eats them like donuts, and I don't feel so guilty. I used Martha White brand Cinnamon Biscuit mix for these.

2 (7 ounce) packages of cinnamon biscuit mix
1 1/2 cups Simply Potatoes® Shredded Hash Browns
1 cup shredded apple (I used Red Delicious)
3/4 cup buttermilk
oil (for frying)

Steps:

  • 1. Preheat Oil to 350.
  • 2. In a large bowl, combine cinnamon biscuit mix, potatoes and apples. Toss to coat well with dry biscuit mix. Add buttermilk, stirring to mix well. Drop by teaspoonful into hot oil. Fy until golden brown.
  • 3. Remove, drain on paper towels.
  • 4. Serve tossed with powdered sugar, with caramel sauce or apple butter.
