RED POTATO BITES
These wonderful sour cream, bacon and chive-stuffed red potatoes are a perfect appetizer for any occasion. Easy to prepare ahead of time, top off with Cheddar cheese, and broil as your guests arrive. A friend forwarded me this recipe and I cherish it.

- Preheat the oven to 375 degrees F (190 degrees C). Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water.
- Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
- Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside.
- In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese.
- Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley, and serve.

- Cook potatoes in boiling water until tender. Or, prick skins with a fork to release steam, and microwave on 100% power about 12 minutes. Slice potatoes in half crosswise. Remove a small scoop from each half with a melon baller or small spoon. Grind pepper onto potatoes. Fill each hollow with a dollop of sour cream and top with ripe olives and chives. Serve on a bed of watercress. Variation: a) Mix sour cream with Dijon mustard or horseradish to taste. b) use caviar instead of black olives.

- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook just until tender, 8-10 minutes. Drain., When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells. Remove 1/3 cup pulp (discard or save for another use)., In a large bowl, mash the remaining pulp with cream cheese. Add sour cream and half of the bacon. Stir in the cheeses, green onions, salt and pepper; spoon into potato shells., Place in a 15x10x1-in. baking pan. Sprinkle with remaining bacon. Bake, uncovered, at 400° until heated through, 15-20 minutes.

Steps:
- Set oven to 400°F.
- In a bowl mix together the oil with salt and garlic powder.
- Slice the potatoes in half then coat all sides with the oil mixture.
- Place on a greased baking sheet cut-side down.
- Bake for about 25 minutes or until just tender; cool completely.
- In a medium bowl combine sour cream with green onions and crumbled cooked bacon, then season with black pepper.
- Slice a small thin piece off of the bottom of the baked potato half so that it will sit upright, then turn potato over.
- Using a melon baller or small spoon scoop out some of the center pulp (reserve the pulp for later use).
- Fill with about 1 tablespoon sour cream mixture, then sprinkle more chopped green onion on top of the sour cream.
- Serve immediately or chill until needed.
- Delicious!

- Peel and chop potatoes.
- Place potatoes in a pot and cover with water.
- Boil until soft. Mash cooked potatoes with oil, then add seasonings.

- Cut the potatoes in half lengthwise (so the cut surface is oblong-ish rather than circle-ish). Put them in a 9″x11″ cake pan (if your pan is prone to sticking, add some foil or parchment paper first). Toss the potatoes with 1 teaspoon of the olive oil, 1/4 tsp coarse salt and 1/8 tsp coarse black pepper. Scoot the potatoes to one side of the pan and arrange them cut side up.
