Growing up, I would eat this sausage and potato skillet recipe almost every day. I could never get enough of my favorite meal! -Amelia Bordas, Springfield, Virginia

2 fresh Italian sausage links
1 tablespoon canola oil
1 small onion, sliced
1/4 cup each sliced green and sweet red pepper
2 small potatoes, sliced
Salt and pepper to taste

Steps:

  • In a large skillet, brown sausage in oil until a thermometer reads 160°. Add onion and peppers; saute until vegetables are tender. Add potatoes and 2 cups water; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes are tender. Drain; add salt and pepper.

I took another of my posted recipes and tweaked it and came up with this. My kids really liked this. Instead of slicing a sausage, you take it out of the casing and crumble and brown it first. The Adobo I use is from Penzey's. You could add sliced or chopped carrots to this too, for added nutrition. Using 4 T of cider vinegar, you can taste it more, so if you aren't a vinegar fan, use the lesser amount.

3/4-1 lb bratwurst, casings removed (or ground pork)
1 teaspoon adobo seasoning
4 tablespoons honey
3 -4 tablespoons cider vinegar
4 tablespoons yellow mustard
2 tablespoons dried onion
salt and pepper
3 medium potatoes, sliced thin

Steps:

  • Mix the honey, cider vinegar and mustard in a bowl until well blended.
  • In a large skillet, brown the pork, removed from the casings, on medium heat, separating ground meat while cooking. Add adobo seasoning while cooking.
  • Add salt and pepper, to taste.
  • Add sliced potatoes and cover with the honey mixture.
  • Cover and simmer until potatoes are tender, stirring occasionally. You may get a caramelized bottom that you can scrape up and distribute within the dish. Yummy!

1 tablespoon olive oil
1 lb kielbasa or 1 lb similar garlicky smoked sausage, cut into 1/4 inch thick slices
1 large onion, sliced
2 lbs potatoes, peeled and sliced (5 to 6 cups)
2 tablespoons all-purpose flour
3 tablespoons chopped fresh thyme or 2 teaspoons dried thyme
1/2 teaspoon fresh ground black pepper
2 cups chicken broth
1 cup apple juice or 1 cup apple cider
1/2 cup dry white wine
1 bay leaf, broken in half

Steps:

  • Heat the oil in a very large skillet with sides at least 2 inches high. Add the sausage and onion and sauté over medium heat, stirring, until the onion is softened and the sausage begins to brown, about 6 minutes.
  • Add the sliced potatoes, sprinkle with the flour, thyme, and pepper and toss gently but thoroughly to combine well. Pour the broth, apple juice, and wine over the potato mixture and add the bay leaf.
  • Bring to a boil over high heat, reduce the heat to low, and cook, covered, until the potatoes are tender, 35 to 40 minutes.
  • Remove the bay leaf halves before serving.
