EASY BREAKFAST CASSEROLE WITH SAUSAGE AND POTATOES



Easy Breakfast Casserole With Sausage and Potatoes image

This easy breakfast casserole recipe is prepared with hash browns, eggs, and layers of browned sausage and cheese. It's great for a family brunch.

1/2 pound pork sausage (spicy or mild)
1 medium onion (chopped)
4 cups hash brown potatoes (frozen, diced; thawed; about 16 ounces)
1 1/2 cups Monterey jack (or cheddar cheese, shredded and divided )
3 eggs ( beaten )
1 cup milk
1/4 teaspoon pepper
Optional: mild salsa

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F/180 C/Gas 4. Butter an 8-inch-square baking dish.
  • In a large skillet, cook sausage and onion, breaking up sausage with a spatula. When sausage is cooked through, drain off excess fat.
  • In the prepared baking dish, layer the hash brown potatoes , half of the shredded cheese, browned sausage and onion mixture, then the remaining shredded cheese.
  • In a bowl, whisk together the eggs, milk, and pepper; pour the egg mixture over cheese.
  • Cover the baking dish with foil and bake for 45 to 55 minutes, or until a knife inserted near center comes out clean.
  • Transfer the casserole to a wire rack and let stand for 10 to 15 minutes.
  • Cut into squares. Serve with salsa, if desired.
  • Enjoy!

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

Steps:

  • Preheat oven to 350 degrees F. Spray 8x8-inch glass baking dish with cooking spray; set aside.

1 ½ pounds potatoes, peeled
cooking spray
1 (16 ounce) package pork breakfast sausage
1 sweet onion, chopped
7 eggs
1 (8 ounce) package Cheddar cheese, grated, divided
½ cup milk
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
  • Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.
  • Grate potatoes and add to the bowl of sausage mixture. Pour mixture into the prepared dish; place remaining Cheddar cheese on top.
  • Bake in the preheated oven until casserole is heated through and cheese is melted and bubbly, about 35 minutes.

1cup whole milk

1cup all-purpose flour
1tablespoon unsalted butter, melted
2 scallions, chopped
3/4pound Yukon Gold potatoes (about 2), peeled and cut into 1/4-inch dice
1 (12-ounce) package bulk sausage meat
2tablespoons vegetable oil
1/2cup grated Parmesan cheese

Steps:

  • 1. Adjust oven rack to upper-middle position and heat oven to 425 degrees. Prepare 9-inch springform pan as shown in photos, and set aside on rimmed baking sheet. 2. Whisk eggs, milk, and 1/2 teaspoon salt in bowl until well combined. Stir in flour until just incorporated--the mixture will still be a bit lumpy. Whisk in butter until batter is smooth. Stir in scallions and set batter aside while preparing filling. 3. Toss potatoes with 1 tablespoon water in large microwave-safe bowl. Cover with plastic wrap, cut vent holes in plastic, and microwave on high power until potatoes just begin to soften, 3 to 4 minutes. Meanwhile, cook sausage in large nonstick skillet over medium heat, breaking up clumps, until meat has lost most of its pink color, about 4 minutes. Using slotted spoon, spread sausage evenly over bottom of prepared springform pan. 4. Heat oil in skillet with sausage fat over medium-high heat until shimmering. Add potatoes and 1/4 teaspoon salt and cook until potatoes are golden and crisp, 8 to 10 minutes. Drain potatoes on paper towels. 5. While potatoes are cooking, place springform pan with sausage in oven for 10 minutes. Remove pan from oven and, working quickly, sprinkle 1/4 cup cheese over sausage and pour batter evenly over filling. Scatter potatoes on top and sprinkle with remaining cheese. Bake until puffed and golden, 25 to 30 minutes. Remove pan from oven, run knife around edges of pan, and let cool 5 minutes. Release outer ring and, using spatula, transfer casserole to serving plate. Serve.

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

Steps:

  • Preheat oven to 350°F. Butter 8x8x2-inch glass baking dish. Cook sausage in heavy large skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes. Mix in flour, then milk. Cook until mixture thickens and comes to boil, stirring occasionally, about 5 minutes.
  • Arrange potatoes in prepared dish. Top with 1/3 of green onions, 1 cup cheese, 1/3 of green onions, sausage mixture and remaining 1/4 cup cheese.
  • Bake casserole until potatoes are tender, about 45 minutes. Sprinkle with remaining green onions and serve.
