Potatoes Au Gratin image

Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food.

Butter to grease the baking dish
2½ pounds Russet potatoes (3 to 4), peeled and sliced very thin
1½ teaspoons salt
¼ teaspoon freshly ground black pepper
1 cup (4 oz) finely grated Parmigiano-Reggiano
2¼ cups heavy cream
Fresh thyme, for serving (optional)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.
  • In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated.
  • Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the prepared baking dish. Sprinkle a quarter of the cheese over the potatoes, and then pour a quarter of the cream over the cheese. Repeat with the remaining potatoes, cheese, and cream, forming 4 layers. Pour any leftover cream over top.
  • Place in the oven and bake, uncovered, for 60 to 75 minutes, or until the potatoes are tender when pierced with a knife and golden brown on top. Let the dish settle on the counter for about ten minutes. Sprinkle with fresh thyme, if using, and then serve.
  • Make Ahead: This dish can be assembled a day ahead; cover tightly with plastic wrap (pressing the wrap directly against the potatoes so they don't discolor), store in the refrigerator, and bake before serving. The potatoes on top will still discolor a bit in the fridge, but it shouldn't be noticeable after baking.

This recipe is the perfect compliment to a nice filet or ribeye. It's a little time consuming, but well worth it in the end. It adds the perfect amount of spice without going overboard. I got the idea from a local steakhouse, but I made it my own.

2 pounds russet potatoes, peeled and sliced 1/8 inch thick
2 cups shredded Gruyere cheese
3 jalapeno peppers, seeded and minced (wear gloves)
1 pinch salt and ground black pepper to taste
2 cups heavy whipping cream
1 tablespoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Spread 1/4 of the sliced potatoes into the bottom of the casserole dish, followed by 1/3 of Gruyere cheese, and about 2 tablespoons of minced jalapeno peppers. Sprinkle with salt and pepper. Repeat the layers 2 more times; top casserole with last 1/4 of the sliced potatoes. Pour the cream evenly over the casserole. Sprinkle top with paprika.
  • Bake in the preheated oven until the casserole has browned and the potatoes are tender, about 1 1/2 hours.

Creamy Au Gratin Potatoes image

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
½ teaspoon salt
2 cups milk
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
  • Bake 1 1/2 hours in the preheated oven.

1/2 pound bacon
3 tablespoons butter
3 tablespoons flour or rice flour for gluten-free meal
2 cups milk
4 ounces cream cheese
2 cups cheddar cheese, shredded
salt and pepper to taste
4 jalapeños, thinly sliced
4 pounds potatoes, peeled and thinly sliced
1 cup cheddar cheese, shredded

Steps:

  • Cook the bacon, set aside on paper towels to drain and crumble when cool. Meanwhile, melt the butter in a pan over medium heat, cook until frothy, sprinkle in the flour and cook, stirring, until a light golden brown. Mix in the milk and simmer, stirring, until it starts to thicken before adding the cheese, cooking until melted and seasoning with salt and pepper to taste. Spread some of the cheese sauce in the bottom of an 8-inch square baking pan topped with layers of potatoes, cheese sauce, bacon and sliced jalapenos all finally topped with the cheddar cheese. Bake in a preheated 350°F oven until the potatoes are tender, the sides are bubbling and the cheese on top is a light golden brown, about 45 minutes. OPTIONS: Top with panko breadcrumbs for a crispy topping. Assemble the gratin the day before and just bake on the day of.

This is a wonderful recipe from "Texas Home Cooking" by Bill and Cheryl Jamison. When I serve this, DH forgets about anything else that is on his plate. It's great! (When I make this I reduce the corn oil by 2 Tablespoons).

3 lbs baking potatoes, peeled
1 1/2 teaspoons salt
4 tablespoons unsalted butter
4 tablespoons corn oil, unrefined
1 medium green bell pepper, chopped
8 green onions, sliced
3 garlic cloves, minced
4 ounces pimientos, drained and diced
1/3 cup pickled jalapeno pepper, chopped
1 tablespoon pickled jalapeno pepper juice
2 tablespoons flour
2 cups evaporated milk
2 cups cheddar cheese, grated

Steps:

  • Place the potatoes in a large pot and cover with water by at least 1 inch.
  • Add the salt.
  • Cook the potatoes over moderate heat until they are tender (about 25 minutes).
  • Drain the potatoes, allow to cool.
  • When potatoes have cooled enough to handle, slice them very thin.
  • Preaheat the oven to 350°F.
  • Grease a large baking dish (9x13).
  • Warm the butter and oil in a sacuepan over medium heat.
  • When the butter has melted, add the bell pepper, onions and garlic, and saute them until they are softened.
  • Stir in the pimientos, the jalapenos, and the jalapeno liquid.
  • Sprinkle the flour over the vegetables; mix it in well.
  • Pour the milk in gradually, stirring to avoid lumps.
  • Simmer briefly until the mixture is thickened.
  • Remove the pan from the heat, add the grated cheese, mix well.
  • Alternate layers of potatoes and sauce in the baking dish, ending with some of the sauce.
  • Cover the dish tightly, and bake for 50-60 minutes, until the potatoes are soft and much of the sauce has been absorbed.
  • Serve the potates hot.

1 egg
2 jalapeno peppers, minced
1 tsp minced fresh thyme
1 tsp minced fresh basil
¼ tsp salt
¼ tsp pepper
½ cup shredded cheddar cheese, 2 oz
½ cup shredded monterey jack cheese, 2 oz

Steps:

  • 1. Preheat oven to 425. Cut potatoes into 1/8 inch thick slices. Mix the potatoes, cream, egg one of the jalapeno peppers, thyme, basil, salt and pepper in a bowl. Mix well. Spoon half the potato mixture into an 8 x 8 inch baking dish. Sprinkle with half the cheddar cheese, half the Monterey Jack cheese, and the remaining jalapeno peppers. Layer with remaining potato mixture, remaining cheddar cheese and remaining Monterey Jack cheese. Bake for 1 hour or until potatoes are tender, covering with foil to prevent overbrowning. Add additional cheese for a cheesier flavor. You may substitute Gruyere cheese for the Cheddar cheese and green onions for the jalapeno peppers. Serves 4
