POTATO AND ROSEMARY PIZZA

Potato and Rosemary Pizza image

Adapted from a recipe in 'The Australian Women's Weekly's Cooking on a Shoestring'. If you aren't vegetarian and you can stretch your shoestring to include bacon, a couple of rashers of bacon tastes great as an additional topping. I've added a couple of extra herbs to the original recipe that had only the rosemary and, if you're making this, I'd encourage you to use whatever are your favourite herbs. I've included the pizza dough from the original recipe but I've also made this with Recipe #4892, which I found when checking on Zaar before posting this recipe. It also makes a deliciously crisp and flavoursome pizza base. The preparation time below includes the 60 minutes standing dough when making the dough.

POTATO, GOAT CHEESE AND GREEN ONION PIZZA

Potato, Goat Cheese and Green Onion Pizza image

I've never put potatoes on my pizza before, but this tasted quite nice. The goat cheese and green onions were a nice addition to the potatoes. I had some Feta left over and that is what I put on here. I used a very thin spelt crust with this pizza. The crust I used is my recipe: http://www.recipezaar.com/recipe/Easy-No-Yeast-Pizza-Dough-254063

Time 1h45m

Yield 6-8 medium slices, 6-8 serving(s)

Number Of Ingredients 7

3 medium yukon gold potatoes (sliced thin)
2 teaspoons sea salt
4 tablespoons olive oil (divided in half)
3 green onions (cut in pieces..I used my scissors)
2 tablespoons herbs (I used Rosemary-Garlic.. Baron's Savory Secrets)
2 -3 cups goat's cheese (I used Feta)
salt and pepper

Steps:

  • Slice up the potatoes thin. I used my mandolin and it worked perfect.
  • Then put the potato slices in a bowl and salt them, toss to coat. Then cover with water and put in the fridge for an hour.
  • Once the hour is up, remove the potatoes from the water and lay them out on paper towels to dry. Pat the tops dry if it is humid in your house.
  • Put the shelf in your oven up to at least the middle of the oven, otherwise the bottom of the crust might burn. Preheat your oven to 450-500'F. You need it good and hot.
  • While they are drying prepare your favourite pizza crust.
  • Once you have the crust on the pizza pan pour some of the olive oil on the top of the crust and with your hands, spread it around and cover the whole pizza.
  • Place the potatoes around the pizza like you would pepperoni. Then add the green onion, garlic rosemary mixture, salt and pepper and 3/4 of the goat's cheese.
  • Drizzle the remaining olive oil over the pizza toppings and bake for 15-18 minutes. Check it half way through to make sure the bottom isn't burning too much, if it is then put the shelf up higher in the oven.
  • Check it to make sure the potatoes are softened.
  • Remove from oven and sprinkle the rest of the goats cheese on top. If you can't serve it right away cover with a piece of heavy tin foil.
  • Bon Appetit!

  • In a bowl of a stand mixer, combine the water, yeast, and honey- stir with a wooden spoon until yeast is dissolved. Let sit until yeast begins to activate, 5-10 minutes. Once yeast is ready, add in oil, salt, and 1 cup of the all purpose flour. Turn your mixer on low with the dough hook on and let mix, scrapping down the sides as needed. From here on out, add 2-4 tablespoons of wheat flour at a time, letting the dough mix for a bit until adding more flour. When the dough starts to come together, continue to let the mixer run for 1-2 minutes and adding more flour until your dough has pulled away from the sides of the mixer. Remove from the mixer and place in a warm spot. Brush with oil and let rise for 1 hour.
  • Preheat oven to 375˚ and with a pizza stone placed in the lower third of your oven (you won’t use it now but you want it to heat up with your oven.)
  • Slice potatoes and onion into 1/4 " slices. Toss with 1 tablespoons olive oil and 1/4 teaspoon salt. Roast until potatoes are tender and brown. Remove and set aside.
  • In a small skillet, heat 2 tablespoons olive oil over low heat. Remove rosemary from sprig and mince together with garlic. Add to skillet and let cook until oil is warm. Turn off and let sit until ready to use.
