1,2 kg Beef Roast (i.e. from shoulder or roundroast)
1 Carrot
¼ Root Celery
2 cloves Garlic
½ Leek
1 Onion (large)
2 Cloves
2 Bay Leafs
5 Juniper Berries
10 Pepper Corns
2 Allspice Berries
some Salt
some Pepper
400 ml Red Wine
200 ml Red Wine Vinegar
2 tbsp. Oil for frying
1 Onion (large)
2 tbsp. Honey
200 ml Beef Stock / Beef Broth
4 tbsp. Raisins
100 g Ginger Snaps (optional)

Steps:

  • Chop the vegetables.
  • Add roast, vegetables, and spices into a fitting pot.
  • Spice with salt and pepper if needed.
  • Cover with wine and red wine vinegar.
  • Close the lid, place the pot into the fridge and marinade for 5 to 7 days.
  • After marinating the roast, take the meat out of the pot and pad it dry from all sides.
  • Strain the marinade through a sieve, keeping the liquid and discarding the vegetables.
  • In a large pot, heat the oil.
  • Add the meat and roast it from all sides.
  • Add the chopped onions and sauté for a bit.
  • Now pour the marinade and beef stock over the roast and bring to a boil.
  • Add the honey.
  • Let the roast simmer for 2hours, flip the meat every 30 minutes.
  • After 2 hours, remove the roast from the pot, cover, and let rest while making the gravy.
  • Put the Ginger Snaps into the gravy and let soak for a few minutes. Then blend with an immersion blender until smooth.
  • Add honey and spices if needed, optional smoothen with a little cream if the gravy has too much acid.
  • Add the raisins.
  • Cut the roast into slices, serve with the gravy and potato dumplings or spätzle or potatoes and red cabbage or carrots.

12 carrots, chopped
1 cup chopped onion
1 tablespoon canola oil
1 (3 pound) boneless beef chuck roast
1 (15 ounce) can tomato sauce
¼ cup packed brown sugar
2 tablespoons Worcestershire sauce, or more to taste
2 tablespoons cider vinegar
1 teaspoon salt

Steps:

  • Combine potatoes, carrots, and onion in the bottom of a slow cooker.
  • Heat canola oil in a large skillet over medium-high heat. Cook beef roast in the hot oil until browned completely, 2 to 3 minutes per side; place beef roast atop the vegetables.
  • Stir tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, and salt together in a bowl; pour over the roast.
  • Cook on Low for 10 to 12 hours (or on High for 5 to 6 hours).
  • Remove roast and vegetables to a serving platter. Pour sauce into skillet and cook over medium-high heat until thickened, 5 to 10 minutes; serve with the beef and vegetables.

2 tablespoons vegetable oil
1 boneless beef bottom round roast* (3 to 4-pound), trimmed, cut into 2-inch chunks, and seasoned with salt and black pepper
2 tablespoons tomato paste
1 tablespoon fresh ginger, minced
1 cup dry red wine
1 cup low-sodium beef broth
1/2 cup red wine vinegar
1/4 cup gin
1 tablespoon quick-cooking tapioca**, ground
1 teaspoon kosher salt
2 tablespoon pickling spices, wrapped in cheesecloth and tied with kitchen string
2 teaspoons sugar (my addition to the sauce, which seemed just a tad too tart, when I tasted it)
6 medium carrots, halved crosswise, then halved lengthwise
4 ribs celery, cut into 2-inch pieces
1 medium onion, quarted
10 gingersnap cookies, crushed
Ask your butcher for chuck-eye roast, which is a very tender cut of beef, and has more marble to it You'll be much happier with this cut of beef.
I used one tablespoon of Clearjel, that I order from King Arthur Flour.com. It's great for thickening stews and pies.

Steps:

  • Heat oil in a large skillet over medium-high. Brown beef in oil in 2 to 3 batches, about 5 minutes per batch. Transfer beef to a 4- to 6-quart slow cooker. Stir tomato paste and ginger into skillet; cook 1 minute. Deglaze skillet with wine and reduce by half, scraping up any brown bits. Whisk in broth, vinegar, gin, tapioca, and salt; simmer 5 minutes. Taste the sauce. I found it to be a tad much on the sour side, and when I add the sugar, I felt it gave the perfect balance to the sauce. Pour broth mixture over beef in slow cooker and submerge spice sachet in it. Cover slow cooker and cook until beef is tender on high setting, 2 1/2 to 3 hours. Add carrots, celery, and onion to slow cooker; stir in gingersnaps. Cover slow cooker and cook until sauce thickens and vegetables are tender, stirring halfway through,about 1 hour more. Transfer beef and vegetables to a serving dish; discard spice sachet. Serve beef and vegetables with sauce. Tasting notes: The carrots aren't mushy at all-- in fact just slightly "al dente" which we liked. The sauce turned out with just the right amount of thickness. The gingersnaps melted right into the sauce, and really gave this sauce an authentic sauerbraten flavor . I have a homemade Spaetzle recipe, but you could serve this over buttered thick noodles or mashed potatoes. Definitely worth a repeat performance!

3 pounds boneless rump roast or top round in one piece
1 cup dry white wine
1/3 cup cider vinegar
1 tablespoon cooking oil
2 cups chopped onions
1 cup chopped carrots
3 cloves minced garlic
1/2 cup raisins
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
3 tablespoons light brown sugar
1 cup beef or veal stock
1/2 cup crushed canned tomatoes
2 bay leaves, crushed
Salt and freshly ground black pepper
1 to 2 tablespoons fresh lemon juice, or to taste

Steps:

  • Place the meat in a deep bowl, add the white wine and vinegar and allow to marinate six to eight hours.
  • Preheat oven to 350 degrees.
  • Remove the meat from the marinade, reserving the marinade, and pat the beef dry. Heat the oil in a heavy three-quart casserole. Add the beef and brown it on all sides. Remove the meat from the casserole and add the onions and carrots and cook over medium-low heat until tender and lightly browned. Stir in the garlic, then add the raisins, ginger, allspice and brown sugar. Add the stock, the reserved marinade and the tomatoes. Bring to a simmer, scraping the bottom of the pan. Stir in the bay leaves and salt and pepper to taste. Return meat to casserole.
  • Cover the casserole and place in the oven. Bake for about two hours, until the meat is tender.
  • To serve, remove the meat from the casserole and slice it. Arrange on a platter. Reheat the sauce and check seasoninings. Add some or all the lemon juice if the sauce does not seem tart enough. Spoon some of the hot sauce over the meat and pass the rest.
  • Alternatively, the meat can be refrigerated overnight in the cooking liquid and the next day the meat can be sliced and the sauce reheated before serving. This will improve the meat's flavor and texture and allow the layer of chilled fat on liquid's surface to be removed and discarded.

3 lbs certified angus beef cross-rib roasts (English or Chuck arm pot roast)
1/4 cup brown sugar
1/4 cup red wine vinegar
1/4 cup soy sauce
2 cups pineapple juice
2 tablespoons cornstarch
1/4 cup water
1/2 teaspoon garlic salt
2 teaspoons vegetable oil

Steps:

  • Brown roast on all sides in hot oil in a heavy skillet over medium heat.
  • Place browned roast on a rack in a Dutch oven or in a roasting pan with a tight-fitting lid. Combine pineapple juice, soy sauce, brown sugar, vinegar and garlic salt and pour over roast. Cover tightly.
  • Bake in the oven at 325 for 60-70 minutes (to medium doneness) or until tender.
  • Remove roast from roasting pan and cover to keep warm. On top of range, bring liquid in pan to a boil. Add cornstarch mixture and cook for 2 minutes or until sauce thickens. Slice meat and serve with wild rice and sauce.

Prep time includes browning the roast, this is started on top of the stove then finished cooking in the oven --- the exact amounts really do not matter for this recipe I just eyeball all ingredients, start with 1/3 cup brown sugar and add in more if needed while cooking, when I make this I find that for my taste I need more than 1/3 cup --- the cayenne was left as optional if you like some heat then add it in and adjust to taste or you may used crushed chili flakes, there is tons of sauce to this so there is no need to double the amounts --- cooking time is only estimated it will depend on the size of your roast, this will also work well using a pork roast.

  • Heat oil in a 5-quart Dutch oven over medium-high heat (use enough oil to cover the bottom of your Dutch oven).
  • Season the roast liberally with seasoned salt and fresh ground black pepper; add to the pot and brown well on all sides, then remove to a plate or bowl.
  • Add in onions and bell pepper; saute for about 3-4 minutes or until softened).
  • Add in the sauce; bring to a medium simmer.
  • Add the roast back to the pot and turn a few times to coat in the sauce.
  • Cover with a lid then transfer to oven.
  • Cook for about 3 to 3-1/2 hours turning the roast over every hour of cooking or you may turn halfway through cooking (cooking times will vary depending on the size of your roast).
  • Remove the roast to a cutting board and slice thinly, transfer to a serving platter.
  • Remove any fat the has accumulated on top of the sauce, then drizzle some on top of the beef slices.
  • Serve remaining sauce on the side.

salt and freshly ground black pepper (to taste)
1 large carrot (peeled and chopped)

3/4 cup sour cream
3 tablespoons flour
1/2 cup dry white wine

Steps:

  • Rub roast with garlic and season with salt and pepper.
  • Place in the Crockpot and add chopped carrot, celery, and sliced onion.
  • Cover and cook on low for 8 to 10 hours.
  • In a bowl combine the sour cream with the flour and white wine.
  • Add the sour cream mixture to the pot roast liquids about 15 to 20 minutes before the roast is done. Or remove the roast and keep warm; strain the liquids into a saucepan and add the sour cream mixture. Heat until hot and thickened. Do not boil.
  • Serve with the sour cream sauce and hot cooked noodles. We recommend doubling the sauce.

  • First, salt, pepper, mustard, and red pepper flakes in a bowl. Once your spices are combine; massage all over roast until covered. Next, add coconut oil to a preheat cast iron skillet. Place your roast in the cast iron to brown each side; flip every three-four minutes. Do not cook the roast but, lightly brown the outside to contain all the juices from within.
  • Browning your roast in a cast iron skillet on each side will amp the flavoring and preserve the internal juices.
