TURKEY MONTE CRISTO SANDWICH

2 tablespoons unsalted butter
Eight 1/2 inch thick slices challah bread or brioche
3 tablespoons Dijon mustard
6 ounces smoked Gouda cheese, shredded
12 ounces thinly sliced cooked turkey breast
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1/2 cup whole berry cranberry sauce or relish
3 large eggs
1/3 cup milk
2 tablespoons vegetable oil

Steps:

  • To make the sandwiches: Lay the bread out on the work surface. Spread one side of each slice with the mustard. Spread half of the cheese on 4 slices of the bread. Cover with half of the turkey and season with salt and pepper to taste. Evenly spread the cranberry on the turkey on the sandwich. Top with the remaining turkey; season with salt and pepper to taste, and cover with the remaining cheese and bread. Press down slightly on each sandwich. In a lipped plate or dish, whisk together the eggs and milk, and season with salt and pepper to taste. Preheat the oven to 350 degrees F. Heat 2 large skillets over medium-low heat, add a tablespoon of both butter and oil to each pan. Dip and coat each of the sandwiches in the egg mixture and lay in the pans. Cook until golden brown, about 4 minutes per side. Transfer the sandwiches to a baking sheet and bake until the cheese is melted, about 6 to 8 minutes.

2 tablespoons unsalted butter, softened, for brushing
6 large eggs, lightly beaten
1 1/4 cups whole milk
Coarse salt and freshly ground white pepper
1/2 cup cranberry sauce, coarsely chopped if chunky
8 3/4-inch-thick slices white bread, such as Pullman
12 ounces thinly sliced roast turkey
4 ounces extra-sharp cheddar, grated

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
  • Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
  • Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.

10 oz roasted turkey, shredded
1 cup gravy
8 slices brioche bread
¼ cup cranberry sauce
¼ cup whole grain mustard
8 slices swiss cheese
1 cup stuffing
6 large eggs
⅔ cup milk
1 ½ teaspoons kosher salt
½ stick unsalted butter, divided

Steps:

  • Preheat the oven to 250°F (120°C).
  • In a medium bowl, toss together the turkey and gravy until well combined.
  • Spread 1 tablespoon of cranberry sauce over each of 4 slices of brioche. Spread 1 tablespoon of whole-grain mustard over each of the remaining slices of brioche. Place a slice of cheese on top of each piece of bread.
  • Divide the turkey between 4 slices of bread, pressing down into a flat, even layer. Distribute the stuffing atop the turkey, spreading into a flat even layer. Place the other slices of bread, cheese-side down, over the stuffing and press down to adhere.
  • In a 2-inch-deep, square baking dish, whisk together the eggs, milk, and salt until well combined.
  • Melt 1 tablespoon of butter in a small skillet over medium heat.
  • Dip a sandwich in the egg mixture and press down to coat. Flip the sandwich to coat the other side. Lift the sandwich from the egg mixture, letting the excess drip off, then transfer the sandwich to the pan and cook until the bottom is golden and crispy, about 3 minutes. Flip and continue cooking until the other side is golden and crispy, 3 minutes more. Transfer the sandwich to a baking sheet and place in the oven to warm through while you repeat with the remaining sandwiches, adding more butter to the pan between each.
  • Serve immediately.

⅔ cup water
1 egg
⅔ cup all-purpose flour
1 ¾ teaspoons baking powder
½ teaspoon salt
8 slices white bread
4 slices Swiss cheese
4 slices turkey
4 slices ham
⅛ teaspoon ground black pepper
1 tablespoon confectioners' sugar for dusting

Steps:

  • Heat 5 inches of oil in a deep-fryer to 365 degrees F (180 degrees C). While oil is heating, make the batter: In a medium bowl, whisk together the egg and water. Combine the flour, baking powder, salt and pepper; whisk into the egg mixture until smooth. Set aside in the refrigerator.
  • Assemble sandwiches by placing one slice of turkey on one slice of bread, a slice of ham on another, then sandwich them with the Swiss cheese in the middle. Cut sandwiches into quarters, and secure with toothpicks.
  • Dip each sandwich quarter in the batter so that all sides are coated. Deep fry in the hot oil until golden brown on all sides. Remove toothpicks and arrange on a serving tray. Dust with confectioners' sugar just before serving.

Cranberry sauce, mustard, and cheese keep the sliced breast moist, and a golden-brown egg batter elevates that old chestnut to showstopper status.

1/2 cup leftover cranberry sauce
1 tablespoon Dijon mustard
1/2 teaspoon chopped rosemary
8 slices brioche bread
6 ounces cooked turkey breast, sliced
8 thin slices Swiss cheese
4 large eggs, at room temperature
3/4 cup heavy cream, at room temperature
1/8 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
3 tablespoons powdered sugar

Steps:

  • In a small bowl, mix together the cranberry sauce, mustard, and rosemary. Lay out the slices of bread. Divide the mustard mixture evenly over the 8 slices of bread and spread almost to the edges. Divide the cheese slices among the bread. Divide the turkey over every other slice of bread. Sandwich the turkey and cheese slices together.
  • In a medium bowl, whisk together the eggs, heavy cream, and salt.
  • Heat a large skillet over medium heat. Add the oil to the pan and heat for 1 minute. Working with one sandwich at a time, dip both sides of the sandwich in the batter and place directly into the hot pan. Repeat with the remaining sandwiches. Cover with a lid and allow to cook for 3 to 4 minutes or until the first side is golden brown.
  • Remove the lid, flip each sandwich and continue to cook on the remaining side until golden brown and the cheese is melted, approximately another 4 minutes. Cook in batches if needed. Sprinkle one side of each sandwich with powdered sugar and serve warm.
