2 lemons, juiced, plus 1/2 lemon
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 cup and 2 tablespoons extra-virgin olive oil
5 medium heads Belgian endive, ends trimmed and cut into 1-inch circles
1 medium green apple, peeled, cored, and cut into 1-inch cubes
1/4 pound Gruyere cheese, rind removed and diced into 1-inch cubes
1/2 avocado, diced into 1-inch cubes
2 tablespoons dried cranberries, or the seeds of 1 small pomegranate
2/3 cup defrosted corn kernels or 1/2 ear corn, cooked and kernels removed

Steps:

  • In a small bowl whisk together the lemon juice, salt, pepper and olive oil. Set aside.
  • Put the endive and apples into a large decorative serving bowl. Squeeze the juice of half a lemon into the bowl and toss to coat the endive and apples so they don't turn brown. Add the cheese and avocado, and then add the cranberries and corn.
  • Pour the dressing over the salad just before serving and toss to coat.

6 large leaves Bibb lettuce, rinsed and patted dry
1 head Belgian endive, stem removed and cut crosswise into thin shreds
Pomegranate seeds, as garnish
2 tablespoons pomegranate juice
1 teaspoon grated orange zest
1/4 cup red wine vinegar
2 shallots, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon Dijon mustard
1/2 cup extra-virgin olive oil
3 oranges, peeled and segmented
1 small red onion, thinly sliced
8 ounces goat cheese, cut crosswise into 6 slices
6 thin slices prosciutto
1 large head radicchio, rinsed, patted dry and torn into bite sized pieces
1 bunch arugula or watercress, rinsed, patted dry and cut int bite sized pieces

Steps:

  • In a small bowl, combine the pomegranate juice and orange zest, vinegar, shallots, salt, pepper and mustard and whisks thoroughly to combine. Add the oil in a steady stream and whisk until emulsified. Fold the segmented oranges and sliced onions into 1/4 cup of the dressing and toss to combine and set aside.
  • Wrap each slice of goat cheese in a slice of prosciutto. Heat a large skillet over medium high heat. Add the wrapped cheeses and sear on both sides. Remove from the heat.
  • In a large salad bowl, combine the greens. Add the marinated orange sections and onion slices, and toss gently with enough extra dressing to coat evenly. Divide among salad plates and top each with a seared goat cheese package and a sprinkling of pomegranate seeds. Spoon a little extra dressing over each salad and serve immediately.

1 Romaine heart (3 cups)
5 cups leafy lettuce
1 large shallot
1 English cucumber (2 cups chopped)
1/2 cup cherry tomatoes
1/2 cup ripe green olives, halved
1/2 cup jarred sliced pepperoncini
1/4 cup Parmesan shavings or shreds, plus more to serve
1/4 teaspoon red pepper flakes, optional

Steps:

  • Make the Homemade Italian Dressing.
  • Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.
  • Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

¼ cup extra-virgin olive oil
3 tablespoons red wine vinegar
1 garlic clove (minced)
½ teaspoon dried oregano (more for sprinkling)
¼ teaspoon Dijon mustard
1 English cucumber (cut lengthwise, seeded, and sliced ¼-inch thick)
1 green bell pepper (chopped into 1-inch pieces)
2 cups halved cherry tomatoes
5 ounces feta cheese (cut into ½ inch cubes)
⅓ cup thinly sliced red onion
⅓ cup pitted Kalamata olives
⅓ cup fresh mint leaves
¼ teaspoon sea salt
Freshly ground black pepper

Steps:

  • In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.
  • On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.

I always look forward to 'post' turkey-day so I can use up the left-overs in this tasty salad. Easy and delicious. If you are concerned with the calorie content, use low or non-fat mayonnaise.

2 cups diced cooked turkey
1 cup pineapple chunks, drained
1 cup diced celery
½ cup sliced green onion
¼ cup dry-roasted peanuts
1 cup seedless grapes, halved
⅔ cup mayonnaise
2 tablespoons finely chopped chutney
1 tablespoon lime juice
½ teaspoon curry powder
¼ teaspoon salt
lettuce leaves

Steps:

  • In a bowl, mix the turkey, pineapple, celery, onion, peanuts, and grapes. In a separate bowl, mix the mayonnaise, chutney, lime juice, curry powder, and salt. Gently toss the mayonnaise mixture with the turkey mixture to coat. Refrigerate 20 minutes or until chilled, and serve on plates lined with lettuce.

  • To prepare the dressing, combine the vinegar, oil, water, dijon, garlic, and honey in a blender and blend until completely smooth. Set aside to let the flavors meld while you assemble the salad.
  • Use a sharp knife to shred the romaine hearts, then place the shredded romaine in a large serving bowl. Add in the shredded cabbage, cranberries, almonds, and gorgonzola, and toss well.
  • Dress the salad about 15 minutes before you plan on serving it, to help soften the cabbage a bit. You don't want to add the dressing too far in advance, or the romaine could get too soggy. Toss everything well, and serve with cracked black pepper, if desired.
  • You can make this salad and dressing up to 48 hours in advance, as long as you don't pour the dressing over the salad until just before serving. Any leftover dressing can be kept in an airtight container in the fridge for up to 7 days.

  • Bring 1 cup of orange juice to a boil in a small saucepan. Remove from heat and stir in cranberries. Leave the cranberries to soften in the juice for 30 minutes. Drain and set aside. Soaking liquid is not needed. Whisk 1/4 cup orange juice, 2 tbs vinegar, 2 tsp orange zest, ½ tsp salt and ⅛ tsp pepper in a small bowl. Slowly pour in 3 tbs olive oil while whisking. Add the soaked cranberries.
  • Just before serving, toss orange segments in a small bowl with 2 or 3 tablespoons of dressing. Put greens in a large bowl and toss with the rest of the dressing. Divide greens between 6 plates. Add orange segments and toasted pecans. Enjoy!
