Steps:
- In a small bowl whisk together the lemon juice, salt, pepper and olive oil. Set aside.
- Put the endive and apples into a large decorative serving bowl. Squeeze the juice of half a lemon into the bowl and toss to coat the endive and apples so they don't turn brown. Add the cheese and avocado, and then add the cranberries and corn.
- Pour the dressing over the salad just before serving and toss to coat.
HOLIDAY SALAD
Steps:
- In a small bowl, combine the pomegranate juice and orange zest, vinegar, shallots, salt, pepper and mustard and whisks thoroughly to combine. Add the oil in a steady stream and whisk until emulsified. Fold the segmented oranges and sliced onions into 1/4 cup of the dressing and toss to combine and set aside.
- Wrap each slice of goat cheese in a slice of prosciutto. Heat a large skillet over medium high heat. Add the wrapped cheeses and sear on both sides. Remove from the heat.
- In a large salad bowl, combine the greens. Add the marinated orange sections and onion slices, and toss gently with enough extra dressing to coat evenly. Divide among salad plates and top each with a seared goat cheese package and a sprinkling of pomegranate seeds. Spoon a little extra dressing over each salad and serve immediately.

- Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.
- Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

- In a bowl, mix the turkey, pineapple, celery, onion, peanuts, and grapes. In a separate bowl, mix the mayonnaise, chutney, lime juice, curry powder, and salt. Gently toss the mayonnaise mixture with the turkey mixture to coat. Refrigerate 20 minutes or until chilled, and serve on plates lined with lettuce.

- To prepare the dressing, combine the vinegar, oil, water, dijon, garlic, and honey in a blender and blend until completely smooth. Set aside to let the flavors meld while you assemble the salad.
- Use a sharp knife to shred the romaine hearts, then place the shredded romaine in a large serving bowl. Add in the shredded cabbage, cranberries, almonds, and gorgonzola, and toss well.
- Dress the salad about 15 minutes before you plan on serving it, to help soften the cabbage a bit. You don't want to add the dressing too far in advance, or the romaine could get too soggy. Toss everything well, and serve with cracked black pepper, if desired.
- You can make this salad and dressing up to 48 hours in advance, as long as you don't pour the dressing over the salad until just before serving. Any leftover dressing can be kept in an airtight container in the fridge for up to 7 days.

- Bring 1 cup of orange juice to a boil in a small saucepan. Remove from heat and stir in cranberries. Leave the cranberries to soften in the juice for 30 minutes. Drain and set aside. Soaking liquid is not needed. Whisk 1/4 cup orange juice, 2 tbs vinegar, 2 tsp orange zest, ½ tsp salt and ⅛ tsp pepper in a small bowl. Slowly pour in 3 tbs olive oil while whisking. Add the soaked cranberries.
- Just before serving, toss orange segments in a small bowl with 2 or 3 tablespoons of dressing. Put greens in a large bowl and toss with the rest of the dressing. Divide greens between 6 plates. Add orange segments and toasted pecans. Enjoy!
