Number Of Ingredients 10

1 pound ground beef or turkey
1 medium onion, diced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (16 ounces) chili beans, undrained
1 can (4 ounces) diced green chilies, undrained
1 can (15-1/2 ounces) hominy, rinsed and drained
1 can (16 ounces) whole kernel corn, drained
Salt and pepper to taste
1 tablespoon cornstarch, optional
1/4 cup water, optional

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, chilies, hominy and corn; season with salt and pepper. , For a thicker stew, combine cornstarch and water, then stir into stew. Cook and stir until thickened.

A hearty beef and vegetable stew with a little spice that is quick to prepare. You can cook the whole thing in one hour, or let it simmer in the slow cooker all day.

1 pound ground beef
1 (20 ounce) can white or yellow hominy, rinsed and drained
2 (14.5 ounce) cans stewed tomatoes
1 (15.25 ounce) can whole kernel corn
1 (15 ounce) can kidney beans
2 (15 ounce) cans ranch-style beans
1 large yellow onion, chopped
2 green chile peppers, chopped

Steps:

  • In a large skillet over medium-high heat, cook ground beef until evenly browned, stirring frequently to crumble. Drain grease, and transfer to a soup pot. Pour in the hominy, stewed tomatoes, corn, kidney beans, ranch-style beans, and add the onion and green chilies. Cover, and cook over medium heat for 1 hour.

A chili-like ground beef stew. It can probably be assumed that it was eaten in the old west by posses out on the dusty trail. It's really great on a cold night like in Fall or Winter or maybe even on a rainy day in Summer when you can't cook outside.

Number Of Ingredients 10

1lb of ground hamburger, browned
1/2 cup onion
1 tbs minced garlic, drained
1 lg can stewed tomatoes or two smaller cans
1 can of corn, drained
1 can of hominy, drained
1 sm can of diced green chilies
1 can of Ranch Style Beans (or pinto and/or kidney work too)
1 cup of cooked barley
Salt and Pepper to taste

Steps:

  • You may cook the barley ahead of time and put it in with the indgredients when ready. Brown the meat in a large pot (we use a dutch oven), add about a 1 tablespoons of minced garlic and half a cup of chopped onion to the mix. Chop up the stewed tomatoes in a food processor. If you don't have a food processor using them as is out of the can is fine too but It will just make it really chunky. Combine the rest of the ingredients including the barley. Cook until heated through. You may want to add water if it is too thick.
  • Goes well with corn chips like Fritos but that's optional. I like a little Tabasco sauce on mine as well.

  • Put the drained meat mixture back into the pan and add the canned vegetables. Drain the mushrooms. Drain and rinse the black beans. There is no need to drain the remaining vegetables.
  • Stir the ingredients together to thoroughly mix them in the pan. Add salt and pepper to taste. Turn the burner on to med-low and allow the stew to simmer for 30 minutes to an hour (this recipe would also work great in a slow cooker). I like to let it cook long enough to make sure that the vegetables are soft, especially the black beans, and the flavors start blending.
