This is potato salad the old-fashioned way, with eggs, celery and relish. It's really good to serve with chili.

Steps:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

GERMAN POTATO SALAD

- Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes. Drain and slice into 1/4-inch rounds.
- Cook the bacon in a large skillet over medium-high heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. Turn the heat to medium and add the onion. Cook until translucent and just beginning to brown, about 4 to 5 minutes.
- Whisk in the vinegar, sugar, mustard, and salt and stir until thick and bubbly. Add the sliced, cooked potatoes and toss to coat. Top with the crumbled bacon and garnish with the chives. Serve warm.

- In a skillet, saute the onion, and garlic until onion is translucent, 4-5 minutes or so.
- Stir in the tomatoes, followed by the potatoes, along with the salt and pepper (amounts are really to suit your taste).
- Cover, turn heat to low, for about 15 minutes, or as soon as the potatoes become tender.
- Uncover, raise heat to medium, and cook down the sauce until thickened, and mostly cooked away.
- Remove from heat, check the salt again, and add the cilantro and vinegar.
- Serve at room temperature.

- Fill a large stockpot with heavily salted water and the potatoes and bring to a boil. Cook until tender, 20 to 25 minutes. Drain the potatoes and quarter when cool enough to handle.
- Mix together the relish, mustard, garlic powder, onion powder, smoked paprika, eggs, onion, bell pepper, 3 cups mayo and a pinch of salt and pepper in a large bowl. Add the potatoes and toss until combined. Add additional mayo if the salad looks dry. Sprinkle with smoked paprika. Serve immediately or cover and refrigerate until ready to eat.

- Place the potatoes in a large pot of salted water and bring to boil. Cook until just fork tender, about 15 minutes. Fish out the potatoes with a spider or slotted spoon and place them in a bowl of ice cold water to stop them from cooking.
- Shuck the corn and break each ear in half. Cook in the same boiling water for 5 to 7 minutes until tender but not soft. Remove the cooled potatoes to a dish-cloth to drain. Immerse corn in the same ice bath until cool. Cut each potato into quarters and place in a large bowl.
- Remove corn from water and also let drain. Use a chef's knife to cut the kernels off each ear. Add kernels to bowl. Add grape tomatoes, onion, and whole basil leaves. Add olive oil and lemon juice and toss gently to combine. Season, to taste, with salt and pepper. Serve immediately.

- Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.

- Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. - When potatoes are cool enough to handle, peel and cut into 1/2-inch cubes.
- Place potato cubes in a bowl; sprinkle with vinegar while they are still warm.
- In a large skillet over medium heat; add the olive oil and let it get heated.
- Add the sausages; stir/saute for about 4 minutes or until lightly browned.
- Use a slotted spoon and transfer sausages to a paper-towel lined plate.
- To make the dressing: in a small mixing bowl, whisk the vinegar, salt and pepper together until the salt dissolves.
- Whisk in the mustard and anchovy paste until well blended.
- Gradually whisk in 4 tablespoons olive oil until an emulsion forms.
- If the dressing is too thick, go ahead and whisk in the remaining olive oil; set dressing aside.
- Add the sausages, garbanzo beans, bell pepper, onion, celery, and parsley to the potatoes.

- Cut each potato into an even rectangular shape by cutting off the bottom, top, and sides; cut into 1/2-inch cubes.
- Place potatoes in a medium, heavy saucepan. Add enough cold water to cover, season with salt, and bring to a boil.
- Reduce heat and simmer until potatoes are slightly tender, about 10 minutes.
- Remove from the heat and drain potatoes on paper towels.
- In a large saute skillet, heat olive oil over medium heat.
- Add the onions and saute until soft, about 3 minutes.
- Add the garlic and saute for 30 seconds.
- Add the drained potatoes and cook, turning, until browned on both sides, about 10 more minutes.
- The last few minutes, add the smoked paprika and mix.
- I like to get them nice and crispy on the outside. Enjoy!

- Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool.
- Peel potatoes and cut into 1 inch pieces.
- Chop egg whites.
- In a large bowl, stir together potato, egg whites, 1/2 t. salt and green onions.
- Using a fork, mash the yolks in a small bowl; add in remaining 1/2 t. salt, mayo, pickle relish, mustard, pepper, and celery seed; stirring until well blended.
- Gently stir yolk mixture into potato mixture; adjust seasoning to taste with salt and pepper.
- Cover and chill 2 hours (it is even better if you can chill this overnight and serve the next day).
