EASY SPANISH CHICKEN AND CHORIZO STEW RECIPE



Easy Spanish Chicken and Chorizo Stew Recipe image

This Spanish chicken and chorizo stew is the perfect recipe for a weeknight meal. It's easy to make, super tasty, and always yields plenty of leftovers! Plus, you can use whatever you already have in your pantry - just make sure to get the good chorizo.

6 bone-in chicken thighs
Salt and pepper
2 tablespoons olive oil
1 lb semi-cured chorizo, sliced into roughly 1/2-inch pieces (if you can't find semi cured, use fresh) (about 450g )
1 large yellow onion (thinly sliced)
2 red bell peppers (seeds removed and thinly sliced)
2 garlic cloves (minced)
4 sprigs fresh thyme (or 1 teaspoon dried)
1 teaspoon smoked paprika
1 teaspoon ground cumin
2 bay leaves
1 cup dry sherry (or any other dry white wine)
2 cups chicken stock
2 cans of tomatoes
1 tablespoon tomato paste
1/2 cup green olives (pits removed (you can keep whole or cut into slices -- I prefer the latter!))

Steps:

  • Season the chicken thighs liberally with salt and pepper.
  • Place a large dutch oven (or heavy pan) over medium-high heat and add the olive oil. When the oil is hot, sear the chicken on all sides until brown (in batches if necessary), about 7-8 minutes total. Transfer to a plate and set aside.
  • Return the dutch oven to medium-high heat and add the chorizo. Sear for about 2-3 minutes, until the chorizo is brown and releasing its fat to the pan. Add the onion and bell peppers and saute until softened and translucent (about 5 minutes). Stir frequently to avoid burning.
  • Next, add the garlic, thyme, paprika, cumin, and bay leaves. When aromatic (about a minute), add the dry wine and stir to remove anything stuck to the bottom of the pan.
  • When the wine has reduced by half, add the chicken stock, tomatoes, and tomato paste to the pan. Stir to combine and then return the chicken to the pan.
  • Bring to a boil and then reduce to a simmer. Cover the dutch oven and leave to cook for 50 minutes and until the chicken is cooked through.
  • If the sauce is still thin after this time, remove the chicken and increase the heat to medium-high so that the sauce can further reduce.
  • Add in the sliced olives, along with the chicken and chorizo (if you removed it). Make sure everything is heated through and serve with rice, potatoes, bread, or salad.

1 small onion, chopped
1 clove garlic, chopped
1 (15 ounce) can canned tomato sauce
6 cups water
2 small potatoes, diced
2 teaspoons red pepper flakes

2 (15 ounce) cans green beans, drained

Steps:

  • Heat a Dutch oven over medium-high heat. Saute chourico, onion and garlic until onion is tender. Stir in tomato sauce, water and potatoes. Season with red pepper and paprika. Bring to a boil, reduce heat, and simmer 25 to 30 minutes, or until potatoes are tender. Stir in green beans, and simmer 5 to 10 minutes, or until heated through.

8 skinless chicken thighs, bone-in
Kosher salt and freshly ground pepper
1 cup all-purpose flour
2 tablespoons sweet paprika
1/4 cup EVOO
4 ounces chorizo, chopped
1 1/2 pounds baby Yukon Gold potatoes, quartered
2 tablespoons finely chopped fresh thyme
3 to 4 cloves garlic, thinly sliced
2 to 3 small stalks celery, sliced
1 large bay leaf
1 Fresno chile pepper, thinly sliced
1 onion, chopped
1/3 cup dry sherry
1 cup chicken stock
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
One 14-ounce can chunky crushed tomatoes
A couple handfuls fresh flat-leaf parsley, coarsely chopped
4 Portuguese rolls

Steps:

  • Sprinkle the chicken liberally with salt and pepper. Combine the flour and paprika in a large bowl, and then toss the chicken in the mixture to coat, shaking off the excess. Heat 3 tablespoons EVOO in a Dutch oven over medium-high heat. Brown the chicken, then remove to a large plate and add the remaining 1 tablespoon EVOO to the pot. Add the chorizo and cook until browned; remove with the slotted spoon and add to the plate with the chicken. Add the potatoes, thyme, garlic, celery, bay leaf, chile peppers and onions to the pot, partially cover and cook until softened, 7 to 8 minutes, stirring occasionally. Deglaze with the sherry, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Stir in the stock, lemon and orange zests and tomatoes. Slide the chorizo and chicken back into the pot and simmer until the chicken is cooked through, about 10 minutes. Ladle the stew into shallow bowls. Sprinkle with the parsley and serve with the rolls for mopping up the sauce. Cook's Note: The stew can be covered and refrigerated for a make-ahead meal. Reheat over medium heat.

1 chorizo sausage, sliced 1/2 inch thick
5 potatoes, peeled and diced
1/8 cup red wine
2 cups water (or more if required)

  • Heat the oil and sauté the whole onion and smashed garlic for several minutes. Add the sliced chorizo to the pan and cook for five minutes. Remove the garlic and then add the remaining ingredients except for the beans and peas to the pan. Cook covered until the potatoes are tender. Drain the canned beans and peas and rinse.
  • Remove the whole onion, then add the beans and peas to the pan and toss gently. Cook for several minutes more or until the beans and peas are hot.

4 carrots, peeled and cut into large pieces on an angle
3 celery ribs, cut into large pieces on an angle

1 cup dry white wine

1 tablespoon extra-virgin olive oil
2 cups chicken broth
3/4 lb chorizo sausage, Spanish-style, cut into 1 1/2 inch slices on an angle
1 cup tomato sauce
4 boneless skinless chicken breasts, sliced on an angle into 1 inch strips (poached or cooked already)
1/4 cup flat leaf parsley, chopped

Steps:

  • Place potatoes, carrots, celery and onion in a pot. Add wine, sugar, salt, oil and chicken broth. cover the pot and bring to a boil. reduce heat and simmer for 15 minutes.
  • While the veggies cook, brown the chorizo in a nonstick skillet over med-high heat.
  • Uncover the veggies and add in the chorizo and the tomato sauce. Set cooked chicken into the pot and heat through for 5 minutes. Adjust seasoning to taste. ladle the Portuguese Chicken into shallow bowls, garnish with parsley and serve with the crusty bread for dipping.

Essence, recipe follows
1 whole chicken, about 4 pounds, cut into 8 pieces
3 tablespoons olive oil
1 pound chorizo, cut on the bias in 2-inch pieces
1 medium onion, diced
2 cups diced potatoes
1 red pepper, julienned
1 yellow pepper, julienned
2 cups chopped tomatoes, peeled and seeded
2 tablespoons minced shallots
1 head garlic, skin removed and cloves left whole
1 cup pitted kalamata olives, sliced
1 cup white wine
1 cup chicken stock
1/2 cup finely chopped parsley leaves
Pinch crushed red pepper flakes
1/2 cup sliced green onions
Salt and black pepper
2 cups white rice, cooked, hot
Freshly grated Parmesan, for garnish
Chives, for garnish
Small loaf crusty bread, for serving
2 1/2 tablespoons paprika

Steps:

  • Season the flour with Essence. Toss the chicken in the seasoned flour.
  • Heat the olive oil in a large cast iron skillet, over medium-high heat. When the oil is hot, add the chicken and sear until golden brown on all sides, about 4 to 6 minutes on each side. Remove the chicken from the skillet and set aside. Add the chorizo to the skillet and cook until browned on both sides.
  • Add the onions, potatoes, and peppers. Cook the vegetables for 2 minutes, stirring occasionally to prevent sticking. Add the tomatoes, shallots, garlic cloves, and olives. Season the vegetables with Essence. Stir in the white wine, chicken broth, and parsley and return the browned chicken to the skillet.
  • Bring the liquid up to a boil and reduce to a simmer. Cover and simmer the chicken and vegetables for about 45 minutes or until the chicken falls off the bone.
  • Add the crushed red pepper flakes and green onions. Adjust the seasonings with salt and pepper.
  • Mound the rice in the center of the bowl. Arrange the stewed chicken around the rice. Garnish with freshly grated cheese, chives and Essence. Always serve with crusty bread.
  • Combine all ingredients thoroughly.

1 (6-ounce) can tomato paste
1 (14-ounce) can artichoke hearts (drained and chopped)

Steps:

  • Gather the ingredients.
  • In a medium saucepan, cook the chorizo until some of the fat has rendered. Set the chorizo aside.
  • Cook the onions and garlic in the pan drippings until almost tender, about 4 minutes.
  • Combine the sausage, onions, garlic, pan drippings, chicken, tomatoes, oregano , pepper, and tomato paste in a 4-quart crock pot; mix well.
  • Cover the slow cooker and cook on low for 7 to 9 hours or until the chicken is thoroughly cooked to 165 F on a meat thermometer. Stir in the artichoke hearts and olives and cook on low for 10 to 15 minutes longer. Serve over cooked rice if desired.
