PORTUGUESE CHICKEN PIRI-PIRI



Portuguese Chicken Piri-Piri image

This is a classic Portuguese dish, popular wherever Portuguese people are to be found. The name comes from the chiles and traditional spice mixture of Angola, a former Portuguese colony. Prepared piri-piri sauce is available in some gourmet shops and on the internet, but you can substitute any hot sauce that you have on hand. The all mighty editor would not let me say "Piri Piri sauce to taste"...so start with a little and add as you can stand the heat. Adapted from Worldwide Recipes.

3 tablespoons olive oil
4 -6 chicken breast halves, skinless if desired
salt & freshly ground black pepper
1 onion, thinly sliced
2 carrots, cut into thin strips
2 parsnips, cut into thin strips
1 red bell pepper, cored, seeded, and cut into thin strips
1 green bell pepper, cored, seeded, and cut into thin strips
4 cups chicken or 4 cups vegetable stock
3 -4 tomatoes, cored and quartered
1 tablespoon tomato paste
1 cinnamon stick
2 bay leaves
1 sprig fresh thyme
piri-piri, sauce (or other hot sauce)
1 1/2 cups long-grain rice
1 tablespoon lime (or lemon juice)

Steps:

  • Heat the oil in a large skillet over moderate heat. Season the chicken generously with salt and pepper and brown on all sides. Add the onion and saute for about 3 minutes. Add the remaining vegetables and saute until tender but not brown, about 5 minutes.
  • Add the stock, tomatoes, tomato paste, cinnamon stick, bay leaves, thyme, and piri-piri sauce and bring to a boil. Ladle about 1 1/2 cups of the cooking liquid into a small pot and set aside. Place the rice in the bottom of a large baking dish. Transfer the chicken and vegetables to the baking dish and add the liquid from the skillet.
  • Bake tightly covered in a preheated 350F oven until the rice is cooked, about 30 minutes. Meanwhile, heat the reserved liquid and add the lime juice and additional piri-piri sauce to taste. Serve the chicken and vegetables on top of the rice, and serve the additional sauce separately.

3/4 cup olive oil
2 jalapeno peppers, coarsely chopped, including stems and seeds
1 poblano pepper, coarsely chopped, including stems and seeds
1 1/2 teaspoons red pepper flakes
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 1/2 teaspoons garlic, minced

Steps:

  • Combine all of the ingredients except the garlic in a medium heavy saucepan and cook, stirring, over high heat for 4 minutes.
  • Add the garlic, remove from the heat, and let cool to room temperature.
  • Pour into a food processor or blender and pulse until smooth.
  • Strain through a fine-mesh strainer.
  • Refrigerate in an airtight container for 7 days before using.

It's hard to go a day in Mozambique without eating something that's touched with piri piri sauce (sometimes written as peri peri). The sauce, made with chiles, citrus, and oil, is Portuguese in origin, but peri is actually the Swahili word for "chile" and refers to a specific type of chile pepper that is said to have been first cultivated in Africa. While the sauce is traditionally made with piri piri chiles, all different kinds of hot peppers work well. We found that red Fresno chiles, readily available in the United States and not quite as hot as jalapeños, work really well. However, if you can only find jalapeños, just use three fresh ones in place of the red Fresno chiles. Use the sauce anywhere you would use sriracha. Try it on grilled chicken, toss it with raw cashews and then roast them for a great snack with cocktails, stir it into a seafood stew, or use it for Prego Rolls (Steak and Piri Piri Sandwiches).

10 red Fresno chiles, stemmed, seeded, and coarsely chopped
2 garlic cloves, minced
2 tablespoons minced ginger
1/2 cup freshly squeezed lime juice
1/4 cup extra-virgin olive oil
1 tablespoon granulated sugar, plus more as needed
1 teaspoon kosher salt, plus more as needed

Steps:

  • In the jar of a blender, combine the chiles, garlic, ginger, lime juice, oil, sugar, and salt and puree until smooth. Season to taste with more salt or sugar if you'd like. Transfer to a jar and store, covered, in the refrigerator for up to 2 weeks.

I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.

4 tablespoons lemon juice
5 tablespoons olive oil
1/4 cup vinegar (balsamic gives an excellent flavour)
1 tablespoon cayenne pepper
1 tablespoon garlic, minced
1 tablespoon paprika
1 teaspoon salt
1 tablespoon chili flakes

Steps:

  • Add all ingredients to a bowl and whisk together.
  • Brush on chicken before barbecuing (or baking in oven @ 350 °F for 1.25 hours WITHOUT opening the door during during entire cooking process.) It helps the flavour if you marinate the chicken for a few hours prior to cooking!

This recipe is very similar to the Nando's chicken and if used the way I direct it will turn out to be a fraction of the price. I'm no expert chef but I can tell you that if done right, these babies will come out heavenly. I searched for this recipe on this site to see if a similar one had been posted but obviously not so here I am with the awesome recipe. This chicken comes out sweet with Chilly and ripe with the tang of lemon.

1 roasting chicken
8 garlic cloves, crushed
1 pinch salt
2 lemons, juice of
1 teaspoon bay leaf powder
2 teaspoons paprika
2 tablespoons very soft butter
1 pinch salt
4 tablespoons ground piri-piri pepper
100 ml olive oil
1/2 lemon, juice of

Steps:

  • Mix all ingredients for the marinade together. If you find it annoying crushing up the garlic you can buy it pre crushed from the shops.
  • Use a sharp knife cut chicken into six pieces so that you have the breast and lower part of the chicken as well as the 4 drumsticks and wings, (visualize the look of the chicken at Nando's). Cut off any excess fat but leave most of the skin as it will add to the flavor.
  • Make several small incisions into the chicken to later help it absorb the marinade.
  • Bask the chicken well in the marinade and allow it to marinate in the fridge for at least 1 hour.
  • Meanwhile mix the Piri Piri seasoning with the lemon juice and the oil. You can find Piri Piri seasoning easily from the shops and it saves you having to chop if 10-12 red chillies and chop up a bay leaf and such, just makes the process a lot simpler. Also add a pinch of salt.
  • Pre heat the grill and insert the chicken. Bask the chicken frequently with any excess marinade.Turn the chicken frequently and make sure it doesn't burn.Cook for approximately 30 minutes.
  • Remove the chicken from the grill/BBQ and allow it to cool before lathering it in the Piri Piri sauce. Serve with potatoes and what ever else you desire.
  • Charcoal grill or BBQ preferred but gas grill works almost as well.
