EASY PORTUGUESE-STYLE BEAN SOUP
One day I was looking at Portuguese recipes and decided to put together a bean soup that embraced the bright and spicy flavors of Portugal. My family liked it so much, it became a classic in our household. - Place the first 20 ingredients in a 7-qt. slow cooker. Cook, covered, on low 7-9 hours or until vegetables are tender. Remove bay leaves and orange and lemon zest strips., Transfer 4 cups soup to a blender; cool slightly. Cover; process until smooth. Return to slow cooker; add green onions, cilantro and parsley. Heat through., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

PORTUGUESE BEAN SOUP

- First, make the ham hock stock: put the ham hocks in a large pot with 2.5 quarts of water. Bring the water to a boil, then turn the heat down to low. Put on a lid on top, and let cook on low for 1.5 hours.
- Remove the ham hocks to a cutting board and let cool. Once cooled, cut off the meat and skin from the bone. Dice the meat and skin into small pieces and set aside.
- Skim the fat off the top of the ham hock stock. Bring the stock back to a boil and add in the cans of diced tomatoes and tomato sauce.
- Bring the soup back to a boil, and add the diced ham hocks back in. Then add the diced onions, carrots, and potatoes.
- Bring the soup back up to a boil, and add in the kidney beans, Portuguese sausage, cabbage, and macaroni noodles.
- Let the soup cook on medium-low heat for another 30 minutes. Season to taste with salt and lots of pepper. Enjoy!

- In a large pot over low heat, combine sausage, ham hocks, onion and water. Cover and simmer 1 hour.
- Remove ham hock from soup, remove meat, tear into small pieces, and return meat to pot. Stir in carrots, potatoes, cabbage and tomato sauce. Cover and continue cooking 60 to 90 minutes more.
- Stir in beans and pasta, adding more water as needed, and cook until heated through and pasta is tender, 10 minutes.

- Place ham hock, sausages, onion, and water into a large pot over high heat. Bring to a boil, then reduce heat to medium-low, and simmer for 1 hour, covered. Take ham hocks out and remove the meat, roughly chop, and return to soup, discard bones. Stir in potatoes, celery, carrots, stewed tomatoes, tomato sauce, garlic and vinegar. Cover, and continue simmering for 1/2 hour, stirring occasionally. Stir in macaroni, cabbage and kidney beans, cook until the macaroni has softened, about 10 minutes. Taste, then add salt and pepper and more water if needed.
PORTUGUESE BEAN SOUP
Hearty cold weather comfort food. So ono! I like to serve this with Pao Doce (Portuguese sweet bread)for sopping up every last bit of this flavorful and delicious soup. A good linguica (Portuguese sausage) really brings the flavor with its seasoning, along with the ham hocks, adds to the richness of the dish. Saboroso!

- 1. Boil ham hocks in 2 quarts water until tender (save stock). Cut meat from the bones.
- 2. Bring ham stock to a boil and add the cut meat and all the remaining ingredients except the cabbage. Simmer for 1 hour, stirring frequently.
- 3. If too thick, add a little water. Lastly, add the cabbage, cook until tender.
FAVA BEAN SOUP

- Bring a large pot of well-salted water to a boil over medium heat and set up a bowl of well-salted ice water. Add the shelled fava beans to the boiling water. Once the water has come back to a boil, cook the beans for 3 to 4 minutes. Remove them from the boiling water and immediately put them into the bowl of salted ice water. Once the beans have cooled completely, strain them from the ice water. Peel the tough, light green outer layer from the beans. You will be left with a delicate, lovely vibrantly green tender fava bean. MMMMMM! Reserve these little lovelies.
- Coat a large saucepan over medium-high heat with extra-virgin olive oil. Add the bacon (if using, if not just start with the onions and celery) and once the bacon has started to become brown and crispy and is very aromatic, add the diced onions and celery. Season with salt, to taste, and a pinch of crushed red pepper. Cook the onions and celery until they become translucent and are very aromatic. Add the smashed garlic cloves and the diced potato, stir to coat with the oil and cook for 2 to 3 minutes. Stir in 2/3 of the reserved fava beans and 4 cups stock. Taste for seasoning and add salt, if needed. Bring the stock to a boil, then reduce the heat and simmer until the potatoes are fork tender, about 20 to 30 minutes.
- When the potatoes are tender enough to slide easily off a fork when cooked, puree the soup in a blender* until smooth. You probably will have to do this in batches. Return the soup to the pot, and add the remaining fava beans. If the soup is too thick, add some the remaining stock to adjust the consistency. Taste the soup to check the seasoning and reseason, if needed.
- Ladle the soup into serving dishes, give them a little sprinkle of grated Parmesan and a drizzle of big fat finishing oil.
- Fava beany-weany delicious!

BEAN AND MACARONI SOUP
This cholesterol-free tasty dish is virtually fat free and is prepared with only 1 tbsp. of oil. You can eat the whole pot. I have a trick after reading the reviews about the pasta soaking up the liquid. Cook the pasta seperate and drain put in a bowl next to the soup for serving. Put 2 or three good size spoonfuls in bottom of bowl then ladle the soup over it. Thats how i do it with pasta and rice soups.

- Drain beans and reserve liquid, rinse beans.
- Heat oil in a 6-quart kettle; add mushrooms, onion, carrots, celery, and garlic and saute for 5 minutes.
- Add tomatoes, sage, thyme, oregano, pepper, and bay leaf.
- Cover and cook over medium heat 20 minutes.
- Cook macaroni according to directions on package using unsalted water.
- Drain when cooked.
- Do not overcook.
- Combine reserved bean liquid with water to make 4 cups.
- Add liquid, beans, and cooked macaroni to vegetable mixture.
- Bring to a boil; cover and simmer until soup is throughly heated.
- Stir occasionally.

- Peel the onions and garlic and place in cheesecloth, tie the cheesecloth into a bundle for easy removal later.
