Steps:
- Cook rice according to the package instructions.
- In a small pot heat your milk, stopping just before it begins to simmer.
- In a small bowl whisk the eggs yolks and then temper them by very slowly pouring just a bit of the hot milk into the eggs and whisking quickly so that they do not cook. Add the tempered eggs to the hot milk whisking constantly.
- Add the sugar, butter, vanilla, and lemon rinds to the milk and whisk together.
- Pour the milk mixture into the cooked rice and stir together.
- Bring the mixture to a boil and then reduce to a simmer. Cover and cook for 15-20 minutes until you reach an oatmeal consistency.
- Once the pudding has reached the desired texture remove the lemon peels and divide the rice pudding into dishes, or pour into one large dish, and let cool.
- Once the pudding has cooled to room temperature use a stencil and ground cinnamon to create a design on top. This is optional. If you would like to save time you can sprinkle a bit of cinnamon over the top of your rice pudding.
- Serve immediately or store in refrigerator until needed

Steps:
- Preheat oven at 350 F
- Grease an oven proof baking dish (I used a 9×7 Pyrex dish)
- Cut the bread into large or big pieces... that's up to you, and fill the baking dish to the very top...leave aside.
- In a medium bowl beat together the milk, sugar, vanilla, and eggs until creamy.
- Pour the creamy mixture slowly over the bread, making sure to stop in-between pours to allow the bread to absorb the liquid.
- Once you pour all the mixture, let it rest for about 15 minutes. Also, make sure to use your fingers and press down on the bread in ares where it looks a little dry so that the creamy mixture can be absorbed.
- Last but not least, sprinkle the cinnamon sugar over the whole top of the bread and bake in the oven for 45-50 minutes.
- Let it cool before serving... Enjoy!!!

Steps:
- Place the water, salt, and lemon peel into a medium pan and bring to a boil. Then reduce the heat to low and allow the water to simmer with a lid on for about 15 minutes.
- Remove the lemon peel from the water with a slotted spoon and discard.
- Add the rice to the water and bring it back up to a boil. Then reduce it to a simmer and allow the rice to absorb all of the water (about 10 minutes).
- Now slowly add the hot milk, a bit at a time, to the rice mixture. After each addition (of about 1/2 cup), allow the liquid to absorb before adding the next batch of milk. Stir frequently and keep the heat low, so that the rice does not burn at the bottom of the pan. This should take about 25 to 30 minutes.
- Pour the rice into a serving dish. Sprinkle the top with the cinnamon and the lemon slice if you like.
- Chill the rice and then serve.

Steps:
- 1. Combine the yeast, semolina flour, and water by churning 10 seconds in a large heavy-duty food processor fitted with the metal chopping blade. Scrape down the sides of the work bowl, re-cover, and let stand until foamy, about 15 minutes.
- 2. With the machine running, add half the all-purpose flour down the feed tube. It's easier if you pour the flour from a spouted measuring cup into a wide-mouth canning funnel inserted in the feed tube or failing that, a stiff piece of paper rolled into a cone (the opening at the bottom should be at least 1 inch across).
- 3. Using a plastic spatula, scrape the work bowl, and if necessary, redistribute the dough so that it evenly surrounds the blade - take care! Add the salt and remaining flour, distributing evenly over the dough, and churn for 10 seconds. Again scrape the work bowl and redistribute the dough.
- 4. Churn the dough for 20 seconds nonstop, shut the machine off, and let the dough rest in the sealed work bowl for 5 minutes. Now churn for another 20 seconds.
- 5. Leaving the blade in place, carefully redistribute the dough until it's of uniform thinness. Re-cover the work bowl, keeping the pusher in. Note the level of the dough in bulk, estimate what it should be when doubled in bulk, and mark that level on the side of the work bowl.
- 6. Let the dough rise in the sealed work bowl until doubled in bulk, about 1 hour. Meanwhile, lightly coat an 8-inch springform pan or 8-inch pie pan with nonstick cooking spray and set aside.
- 7. When the dough has fully doubled, pulse quickly 4 to 5 times to punch down, then churn for 20 seconds nonstop. Let the dough rest in the sealed work bowl for 5 minutes, then churn for another 20 seconds. The dough will roll into a ball and leave the sides of the work bowl reasonably clean.
- 8. Turn the dough onto a lightly floured surface, shape into a ball, then roll in the flour to dust lightly. Place the loaf in the prepared pan, cover with a clean, dry dish towel, and set in a warm, dry spot until nearly doubled in bulk - this will take about 30 minutes.
- 9. When the dough has risen for 10 minutes, position one rack in the middle of the oven and slide a second rack in the slot just below. Place a large shallow baking pan on the lower rack - I use a 15 1/2 X 10 1/2 X 1-inch jelly roll pan - and half-fill with water. Preheat the over to 500°F.
- 10. Center the risen loaf on the middle rack and bake for 15 minutes. Reduce the oven temperature to 400°F and continue baking until richly browned and hollow sounding when thumped, 20 to 25 minutes longer.
- 11. Remove the bread from the pan as soon as it comes from the oven, set right-side-up on a wire rack, and cool to room temperature before cutting.

- In a large bowl, soak the stale bread in the warm milk until bread is softened and the milk is almost cool. In a blender, blend the mixture of bread and milk, the eggs, sugar, cinnamon, vanilla, and wine. Then, stir in the lemon zest and raisins.
- Pour the blended bread mixture into the pan. Place ring mold pan in a larger, rectangular baking pan, and fill with boiling water to come halfway up the side of the ring mold pan (Bain-Marie). Bake for about 45-55 minutes, or until a toothpick inserted in the pudding comes out clean.
- Let pudding cool down on a rack. When it is slightly warm, run a small metallic icing spatula or knife around the edges of the pan to loosen the pudding. Invert onto a serving plate. Cover and refrigerate for at least 4 hours. Serve with the port sauce on top.

- Queijadas de Sintra. A traditional sweet found in the majestic town of Sintra, Queijada de Sintra’s are a cheese, egg and cinnamon tart with a crunchy outer layer.
