Meaty portobello mushrooms and tender shiitakes make this a dish that is both comforting and filling. Serve it with buttered egg noodles for a meal your family will enjoy on meatless Mondays - or any night of the week.

1 pound portobello mushrooms, stemmed
8 ounces shiitake mushrooms, stemmed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
1 1/4 cups mushroom broth
1/2 teaspoon soy sauce
1 teaspoon Dijon mustard
2 ounces soft goat cheese
1/2 cup sour cream
2 tablespoons chopped parsley
Cooked and buttered egg noodles, for serving

Steps:

  • Slice the portobellos into 1/2-inch-thick strips, then cut each strip in half crosswise. Repeat with the shiitakes, keeping the two mushrooms separate.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. When the foam starts to subside, add the portobellos and cook, tossing once or twice, about 1 minute. Add 1/4 teaspoon salt and a generous pinch of pepper and cook, stirring occasionally, until browned, juicy and tender but firm, about 2 minutes. Transfer to a medium bowl.
  • Add 1 tablespoon of the remaining butter to the skillet, let it sizzle, then add the shiitakes and toss for about 30 seconds. Add the remaining 1 tablespoon butter, 1/4 teaspoon salt and a generous pinch of pepper and cook, tossing occasionally, until browned and tender but still firm, 1 to 2 minutes.
  • Return the portobellos to the skillet and sprinkle the flour over the mushrooms. Then toss, scraping the bottom of the skillet, until the flour disappears, about 30 seconds. Stir in half the broth and all the soy sauce and mustard, scraping the bottom of the skillet until it's clean, then stir in the remaining broth. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 6 minutes. Cover, reduce the heat to low and simmer 5 minutes, stirring once or twice. Stir in the goat cheese.
  • Remove the skillet from the heat, and stir in the sour cream and parsley. Taste and add more salt and pepper as needed. Serve the stroganoff over buttered egg noodles.

2 tablespoons butter
1 tablespoons olive oil
1 large onion (peeled and thinly sliced end to end (8 ounces) )
2 teaspoons garlic (minced or pressed)
1½ pounds Baby Bella mushrooms (sliced ⅛-¼ inch thick)
¼ cup flour (We recommend using Wondra)
1 teaspoon paprika
1 teaspoon Kosher salt
¼ teaspoon freshly ground pepper
¾ cup white wine (I use Riesling. Or ½ cup white grape juice & ½ cup water)
½ cup vegetable broth (or beef broth)
1 tablespoon Worcestershire sauce
3 cups baby spinach leaves (coarsely chopped)
½ cup sour cream
water ( as needed, up to ¾ cup)
8-10 ounces egg noodles (uncooked)

Steps:

  • Cook egg noodles according to package directions to al dente. Drain and set aside. (Tip: Do this while the stroganoff is cooking.)
  • In a small bowl, combine flour, paprika, remaining salt, and pepper. Set aside.
  • Melt butter with olive oil in a large skillet over medium high heat. Add in the onions and cook until they soften and begin to turn slightly brown on the edges, stirring occasionally; about 5 minutes. Add the garlic and cook an additional minute.
  • Add mushrooms. Sprinkle in ½ teaspoon salt. Cook until mushrooms begin to soften about 3-4 minutes. Continue to cook until liquid reduces by about half, an additional 2-3 minutes.
  • Sprinkle the flour-seasoning mixture over cooked mushrooms and toss to thoroughly combine.
  • Add broth, wine, and Worcestershire sauce to mushroom mixture and stir.Stir in spinach, cover with lid and turn heat down to very low. (I just turn it off.) The spinach will wilt in just a few minutes.
  • Just before serving, stir in sour cream and heat on low for a minute or two to bring it up to temperature. DO NOT BOIL.
  • Serve over cooked egg noodles.

8 ounces vegan sour cream (such as Tofutti®)
½ cup water
3 tablespoons dried minced onion
2 tablespoons all-purpose flour
2 teaspoons vegan no-beef bouillon
¼ teaspoon garlic powder
¼ teaspoon dried basil
¼ teaspoon ground black pepper
½ cup dry red wine
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon balsamic vinegar
2 cloves garlic, minced
2 large portobello mushroom caps, stems and gills removed
cooking spray
¼ cup water, or as needed

Steps:

  • Whisk vegan sour cream, 1/2 cup water, minced onion, flour, vegan bouillon, garlic powder, basil, and black pepper in a bowl. Cover and refrigerate.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk red wine, olive oil, soy sauce, balsamic vinegar, and garlic in another bowl.
  • Arrange mushroom caps with gill sides up in a baking dish and pour red wine mixture on top. Marinate for 20 minutes, then cover baking dish with aluminum foil.
  • Bake mushrooms in the preheated oven for 30 minutes. Remove foil, flip mushrooms, and continue baking until very tender, about 10 minutes more. Set aside to cool; dice mushrooms.
  • Heat a saucepan sprayed with cooking spray over medium heat. Cook and stir mushrooms in sauce pan until lightly browned, about 5 minutes; reduce heat to low.
  • Stir sour cream sauce into mushrooms. Continue to cook and stir until thickened, 1 to 2 minutes more. If the sauce becomes too thick, stir in 1/4 cup water.

8 ounces uncooked fettuccine or egg noodles
2 tablespoons olive oil
1 onion (diced)
2 cloves garlic (minced)
4 large portabella mushrooms (about 1 pound, cleaned, stemmed, halved and sliced)
3 tablespoons all-purpose flour
1/2 cup red wine
1 1/2 cups vegetable broth
2 teaspoons Tamari or soy sauce
1 teaspoon vegetarian worcestershire sauce
1/4 teaspoon liquid smoke
1/2 teaspoon salt
1/2 teaspoon smoked paprika
1/4 teaspoon Black Pepper
1/2 cup plain Greek yogurt (or sour cream)
2 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain and set aside.
  • Meanwhile, add the olive oil to a large skillet set over medium heat. When hot, add the onion and cook, stirring occasionally, until it starts to soften, about 2 minutes. Add the garlic and cook for 30 seconds, until fragrant. Add the mushrooms and cook until they're tender and have released most of their juices, 5 to 7 minutes. Sprinkle in the flour and cook, stirring constantly, for 2 minutes. Slowly pour in the red wine, stirring the entire time. Cook, stirring frequently, until most of the wine has evaporated, 2 to 3 minutes.
  • Add the broth, Tamari, Worcestershire, liquid smoke, salt, smoked paprika and pepper. Increase the heat to medium high and bring the mixture almost to a boil. Turn the heat down slightly and let the mixture continue to simmer, stirring occasionally, until it thickens, 5 to 7 minutes. Turn off the heat. Stir in the Greek yogurt.
  • Add the drained pasta to the skillet with the sauce and toss to combine. If desired, let stand for about 5 minutes before serving (the sauce will thicken even more). Garnish with the fresh parsley and serve.

1 large onion, chopped
¾ pound portobello mushrooms, sliced
1 ½ cups vegetable broth
1 ½ cups sour cream
3 tablespoons all-purpose flour

Steps:

  • Bring a large pot of lightly salted water to a boil. Add egg noodles, and cook until al dente, about 7 minutes. Remove from heat, drain, and set aside.
  • At the same time, melt butter in a large heavy skillet over medium heat. Add onion, and cook, stirring until softened. Turn the heat up to medium-high, and add sliced mushrooms. Cook until the mushrooms are limp and browned. Remove to a bowl, and set aside.
  • In the same skillet, stir in vegetable broth, being sure to stir in any browned bits off the bottom of the pan. Bring to a boil, and cook until the mixture has reduced by 1/3. Reduce heat to low, and return the mushrooms and onion to the skillet.
  • Remove the pan from the heat, stir together the sour cream and flour; then blend into the mushrooms. Return the skillet to the burner, and continue cooking over low heat, just until the sauce thickens. Stir in the parsley, and season to taste with salt and pepper. Serve over cooked egg noodles.
