PORTILLO'S CHOPPED SALAD
This Portillo's Chopped Salad is a knock off from the famous salad recipe at Portillo's in Chicago. It's hearty and topped with the tastiest dressing.

Steps:
- Cook Ditalini pasta according to package instructions. Make sure you salt the pasta water while cooking to give it some flavor. Drain and cool. Set aside.
- Cook bacon in a skillet until done. Let bacon cool, then crumble it.
- Combine romaine, iceberg, red cabbage, tomatoes and green onions in large salad bowl.
- Add cooled pasta, bacon and gorgonzola cheese to salad. Add chicken if desired.
- Add dressing to taste right before serving so that it doesn't get soggy.
- For the Dressing: Whisk together olive oil, vinegar, garlic, Dijon mustard, sugar, oregano, salt and pepper.

White balsamic can be found right next to the regular balsamic vinegar at the store.
PORTILLO'S CHOPPED SALAD (KINDA LIKE)
Portillo's is a Chicago institution, a hot dog stand that was started in 1963 by Dick Portillo's in a small trailer with no running water, and has now grown to 47 locations. Their chopped salad is famous. The Italian Dressing is from the Chicago Sun-Times. It is similar to the dressing found on salads at Portillo's and Maggiano's restaurants. Tip: If you make the dressing ahead of time and add a little bit to the cooled pasta and let it soak it up in the refrigerator for added flavor. Also, I believe chopped grilled chicken is in the original recipe.

- DRESSING: Place all the dressing ingredients in a small blender jar. Blend until combined, creamy, and emulsified. Transfer dressing to a mason jar and store in the fridge until ready to eat. Shake up the dressing before dressing the salad.
- COOK PASTA: Cook the pasta according to package directions to al dente. Make sure to generously salt the water; this is what will actually season the pasta! I add 1 teaspoon salt to every 4 cups of water. Drain and cool; run under cold water and shake off to dry. When dry, toss with a few tablespoons of the prepared dressing.
- BACON AND CHICKEN: Cook bacon in a skillet or on an electric griddle. Remove, let cool slightly, and then chop coarsley. Chop a rotisserie chicken (or leftover grilled chicken) into small bite-sized pieces.
- SALAD ASSEMBLY: In a large bowl, combine the lettuce, red cabbage, halved or quartered tomatoes, and thinly sliced green onions. Add in the cooled pasta, chopped bacon, and chopped chicken. Add gorgonzola cheese. If eating all of this salad, add dressing to desired preference (you may not use it all -- See Note 1) and toss to combine. If not, only dress what will be eaten; this salad doesn't sit well with the dressing.

- Set a pot to boil and cook the ditalini noodles until al dente (according to the package instructions). Drain and run under cool water. Set aside.
- While the pasta is cooking, cut the romaine lettuce, iceberg lettuce, radicchio, tomatoes, and red onion. Add all of that to a big bowl and set aside.
- Cut or rip the prosciutto into small pieces and add to a nonstick pan over medium heat. You can add a tiny bit of olive oil if you want them to fry a little more, but the fat from the prosciutto will start to break down and they'll crisp up within a few minutes. Once crisped, set them on a plate with a paper towel to soak up some of the grease.
- Cut the chicken into bite sized pieces and add that to the pan you cooked the prosciutto in. Stir until the chicken is cooked through, about 7 minutes. Remove from the heat.
