Easy Angel Hair Pasta With Creamy Mushroom Sauce image

Don't let the simplicity of this easy recipe fool you, it's good enough to serve to guests, when you make this you will get rave reviews! This dish is best served as soon as it is made.

Number Of Ingredients 10

8 ounces angel hair pasta
3 cups fresh white button mushrooms, sliced (can use more or less mushrooms)
1 medium onion, finely chopped
1 tablespoon fresh minced garlic (optional or to taste)
3 -4 tablespoons butter (more if needed)
2 (3 ounce) packages cream cheese (cut into small cubes)
salt and black pepper
2/3 cup half-and-half cream or 2/3 cup full-fat milk
3 -4 tablespoons chives, snipped
grated parmesan cheese

Steps:

  • For the sauce; in a medium saucepan cook the mushrooms in butter until the mushrooms loose there moister (you can remove the mushrooms or leave them in the saucepan).
  • Add in onions and garlic; saute for about 3 minutes, or until the onions are soft (adding in more butter if needed).
  • Stir in the cream cheese; cook over low heat, stirring constantly until the cheese has melted.
  • Gradually add in half and half cream or milk and chives; stir to heat through.
  • Season with salt and pepper to taste.
  • Cook the pasta in a large pot of boiling salted water until only al dente; drain and place in a large serving bowl.
  • Pour the sauce over the cooked pasta; toss to coat.
  • Sprinkle grated Parmesan cheese over top and serve.
  • Pass more Parmesan cheese at the table,.

1/2 pound uncooked multigrain angel hair pasta
4 large portobello mushrooms (3/4 pound), stems removed
1 tablespoon olive oil
2 garlic cloves, minced
4 plum tomatoes, chopped
1/4 cup pitted Greek olives
1/4 cup minced fresh basil
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
2/3 cup crumbled feta cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions for al dente. Meanwhile, cut mushrooms in half and thinly slice. In a large skillet, heat oil over medium heat. Add mushrooms; saute until tender, 8-10 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes and olives. Reduce heat to low; cook, uncovered, until slightly thickened, about 5 minutes. Stir in herbs, salt and pepper., Drain pasta, reserving 1/4 cup pasta water. Toss pasta with mushroom mixture, adjusting consistency with reserved pasta water. Sprinkle with cheeses.

10 ounces dried angel hair pasta
5 tablespoons extra virgin olive oil
1 large leeks or 2 bunches scallions, cut into 1/4 inch pieces including some of the green
4 garlic cloves, minced
2 large portabella mushroom caps, sliced
1 tablespoon balsamic vinegar
salt

Steps:

  • Pour the oil into a saute pan and heat over medium heat for about 30 seconds.
  • Saute the leek for about 2 minutes until softened.
  • Add the garlic and saute for another 30 seconds.
  • Add the mushrooms and saute, stirring frequently, until the mushrooms are wilted and the liquid they have given off has evaporated.
  • Add the balsamic vinegar, stir well, and season with salt to taste.
  • Bring a large pot of lightly salted water to a boil and add the pasta, stirring to make sure the pasta is well separated.
  • Boil 2 to 3 minutes, until done.
  • Drain and transfer to a large bowl.

This is one of my favorite meals, and sadly one I dont get too often anymore, as my wife hates mushrooms. I actually found this recipe on a package of portabello mushrooms,and I am mostly recalling this from memory, as I cant seem to find the original recipe anywhere.

1 (4 count) package portabella mushrooms
10 ounces angel hair pasta
8 tablespoons teriyaki sauce
5 tablespoons olive oil
2 garlic cloves, minced or 2 garlic salt

Steps:

  • Cut scallions into ¼-inch pieces including some of the green. Sauté for about 2 minutes until softened.
