I'm sure you've heard by now that corned beef and cabbage is not authentic St. Patrick's Day food. I decided to do a little mash-up and this Irish pork stew with baby cabbage was the result. By the way, baby cabbage can be a little hard to find, but you can use Brussels sprouts, and no one will know the difference, mostly because there isn't one.

1 (2 1/2 pound) boneless pork shoulder, cut into 2-inch cubes
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 bay leaf
¾ teaspoon caraway seed
1 (12 fluid ounce) bottle dark beer (such as Guinness®)
2 cups chicken broth
3 carrots, cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
¼ cup chopped fresh flat-leaf parsley
3 tablespoons balsamic vinegar
12 Brussels sprouts, halved
3 cups mashed potatoes, or as needed
1 teaspoon chopped fresh flat-leaf parsley, or to taste

Steps:

  • Season pork cubes with salt and black pepper.
  • Heat vegetable oil in a pot over high heat. Working in batches, cook and stir pork in hot oil until browned on all sides, 5 to 10 minutes. Transfer pork to a bowl and reduce heat to medium.
  • Melt butter in the pot. Cook and stir onion with a pinch of salt in hot butter until onion is softened and translucent, 7 to 10 minutes. Add garlic; saute until fragrant, about 30 seconds.
  • Stir flour into onion mixture; cook and stir until flour is completely incorporated, about 2 minutes. Add bay leaf and caraway seed; cook for 2 minutes more. Pour beer into onion mixture. Cook and stir until thickened, 1 to 3 minutes.
  • Stir pork, chicken broth, carrots, and celery into beer mixture; bring to simmer. Stir 1/4 cup parsley and balsamic vinegar into stew, reduce heat to medium-low, and simmer until pork is fork-tender, about 2 hours.
  • Bring a large pot of lightly salted water to a boil. Add the Brussels sprouts and cook uncovered until almost tender, about 5 minutes. Drain.
  • Stir Brussels sprouts into stew and simmer until heated through, about 5 minutes. Season with salt and pepper to taste. Divide mashed potatoes between 6 bowls. Ladle stew over potatoes and top each with a pinch of parsley.

1 pound fingerling potatoes
3 carrots, cut into 2-inch chunks
2 stalks celery, cut into 2-inch chunks
3 cloves garlic, smashed
1 2-inch piece ginger, peeled and grated
1/3 cup all-purpose flour
Kosher salt and freshly ground pepper
3 bay leaves
1 bone-in pork shoulder or pork sirloin roast (2 to 2 1/2 pounds)
1 teaspoon dried thyme
1/2 teaspoon ground allspice
1 14-ounce can diced tomatoes

Steps:

  • Combine the potatoes, carrots, celery, garlic and ginger in a slow cooker. Toss in half of the flour and season with salt and pepper. Scatter the bay leaves over the vegetables.
  • Season the pork generously with salt and pepper, sprinkle with the thyme and allspice and toss with the remaining flour to coat. Place the pork over the vegetables in the slow cooker. Add 2 cups water and the tomatoes, cover and cook on low 8 hours.
  • Discard the bay leaves. Remove the pork roast and slice or pull the meat off the bone into large pieces. Serve in bowls with the vegetables and broth.

2 dried red chile peppers
1 teaspoon coriander seeds
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon black peppercorns
2 teaspoons salt
2 pounds cubed pork
2 tablespoons all-purpose flour
2 tablespoons butter, cubed
2 tablespoons grape seed oil
1 large white onion, minced
3 garlic clove, lightly crushed with the side of a knife blade, and minced
1 tablespoon chili powder
1 tablespoon paprika
4 cups water

Steps:

  • Preheat oven to 250 degrees F. Spread all the spices (chile, coriander, cumin, oregano, peppercorns) on a sheet of aluminum foil with the edges turned up to avoid spillage and toast the spices for a few minutes. Transfer the toasted spices to a molcajete or mortar and pestle and grind together.
  • Sprinkle the pork cubes with the spices, covering all surfaces of the meat as much as possible. Let the pork sit covered in the refrigerator for 2 hours.
  • Create a beurre manie by mashing the flour into the butter in a small bowl. Set aside until needed as a thickener for the stew.
  • Heat the grape seed oil in a deep saute pan over medium-high heat until it begins to shimmer. Add the pork cubes and brown on all sides. Lower heat to medium and add the garlic and onion and stir to combine flavors. Cook until the onion turns translucent, then stir in chili powder and paprika. Add 4 cups water and reduce heat to low. Cover and let simmer until fork tender, about 2 hours. Add water as needed throughout the cooking process. In the last 30 minutes of cooking time, add the beurre manie to thicken. Serve hot.

Steps:

  • Heat oil and butter in 4 1/2- to 5-quart Dutch oven over medium-high heat. Cook garlic and mushrooms in oil mixture 5 to 6 minutes, stirring frequently, until mushrooms are softened.
  • Stir in pork. Cook 6 to 7 minutes, stirring frequently, until pork is lightly browned.
  • Stir in broth, wine, pearl onions, carrots, onion with cloves, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover and cook 25 to 30 minutes, stirring occasionally, until pork is tender and no longer pink in center.
  • Remove onion with cloves; discard. Beat in whipping cream and flour with wire whisk. Cook 5 to 6 minutes, stirring constantly, until hot and slightly thickened. Sprinkle with parsley.

Steps:

  • Mix all ingredients except flour and butter in 3 1/2- to 6-quart slow cooker.

  • Mix flour and butter. Gently stir flour mixture, 1 spoonful at a time, into pork mixture until blended.

Steps:

  • Sprinkle pork with salt and pepper; transfer to a 4-qt. slow cooker. Add carrots, celery and onion. In a small bowl, whisk broth and tomato paste; pour over vegetables. 6 boneless pork chops, cubed
3 tablespoons butter
6 potatoes, cubed
7 carrots, sliced thick
1/2 cup yoshida's gourmet teriyaki sauce
3 tablespoons chicken bouillon
3 cups chicken broth
1 teaspoon salt
1/4 teaspoon pepper
1 (2 3/4 ounce) package pioneer brand peppered gravy mix
1 rutabaga, cubed

Steps:

  • In a large Dutch oven pan, put the butter and the cubed pork. Cook until all the pork is browned, about 30 minutes.
  • Add the onion,and the chicken bouillon and a little chicken stock. Let this simmer until tender (this is how you get good gravy on the stew).
  • When pork is done, add the vegetables.
  • Stir all together and add the chicken broth and enough water to cover the vegetables.
  • Simmer until the vegetables are done.
  • To thicken the gravy, I use the peppered gravy mix in a 1/2 cup water.

1 teaspoon dried chili pepper flakes (or to taste)

2 med yellow onions
3 celery stalks
1 yellow bell pepper
2 bay leaves
1 cup chopped cilantro or parsley or a mix of both
1 small bunch fresh thyme, stems removed
1 large can whole tomatos with juice
3 cups homemade chicken stock
2 cups good dry white wine (Pinot Grigio)
1/2 to 1 small can chile in adobo (depending on how hot you like it)
1/3 cup soy sauce
1/2 cup olive oil
1 T tomato paste in the tube from Italy

Steps:

  • Sear pork butt in 1/2 olive oil in large LeCrueset until brown on all sides. Remove pork to a plate. Pour out the fat. Add the rest of the oil. Brown onions for a couple minutes and then add the rest of the vegetables. Saute for a couple of minutes. Pour in wine and deglaze the pan scrapping up the brown bits, then add back the pork and all of the other ingredients. Break up the tomatos in your hand prior to adding and use all the juice in the can. Cover and bring to a boil and then turn down to simmer slowly for 3-4 hours. Serve the following day with polenta or mashed potatos or white rice. Drizzle with fine oil oil prior to serving.
