PORK CHOPS WITH GINGERSNAP GRAVY
I first found the recipe in a low-cal cookbook, and lost it. Searching online turned up this version, which is how I remember it. Adding crushed gingersnaps to the gravy thickens it and gives it a great zing.

Steps:
- In a skillet, brown chops in hot oil on both sides.
- Drain on paper towels.
- Place chops in a baking dish.
- Drain excess fat from skillet.
- Add onion and 1 1/4 cups water.
- Cover and simmer 2 minutes or until onions are tender.
- Add remaining ingredients.
- Cook and stir just until bubbly.
- Gravy will thicken with the gingersnaps.
- Spoon over chops.
- Bake, covered, in 375 degree oven for 50-55 minutes or until hot-- OR-- cover skillet and allow to simmer on low for 40 minutes.

PORK CHOPS WITH GINGER PEAR SAUCE
In this quick and healthy recipe pan cooked chops are topped with a lovely combination of pears spiked with fresh ginger. Have not had a chance to try this out but it looks like something I would enjoy. Nutritional information: 237 calories; 5 g fat; 2 g fiber

Steps:
- Season porkchops with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, two to three minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
- Add vinegar and sugar to the pan and stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine and bring to a simmer while stirring.
- Add broth, pears and ginger to the wine-vinegar sauce bring to a simmer. Cook, uncovered, turning the pears occasionally, for 4 minutes. Add scallions and cook until the pears are tender, about 2 minutes more.
- Mix together the water and cornstarch into a slurry and add to the pan. Stir until the sauce thickens. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce.
- Serve immediately.

- Place pork chops, soy sauce, ginger garlic and black pepperinto a large resealable plastic bag.
- Shake well to combine flavors.
- Refrigerate for at least two hours, longer if possible.
- Heat oven to 350 degrees.
- In shallow dish combine breadcrumbs and sesame seeds, coat chops on all sides.
- Place on a baking sheet, sprayed with cooking spray, and bake approximately 45 mins.

GINGER-APPLE PORK CHOPS

- Cut a pocket in each pork chop. Sprinkle with salt and pepper. In a large skillet, brown chops in oil on both sides. Cool for 5 minutes.
- Combine the pie filling and gingersnaps; stuff some of the mixture into the pocket of each pork chop. Set the remaining mixture aside. Secure pork with toothpicks. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Cover and bake at 350F for 25 - 30 minutes or until a meat thermometer reads 160 degrees. Discard toothpicks.
- In a small saucepan, combine cornstarch and apple juice until smooth. Stir in the reserved pie filling mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over pork chops.

THICK PORK CHOPS WITH GINGERSNAP GRAVY
A variation on an Alsatian recipe that is roast pork and gingerbread sauce.

- 1. Preheat oven to 450F. Rinse and pat dry pork chops. Salt and pepper them to taste.
- 2. In a Dutch oven or large heavy pot, heat the oil and add the onion and salt and cook on medium for 7 minutes. Add the gingersnaps, beer, ground ginger, sugar, pepper and cinnamon. Bring to a boil over medium heat, reduce to a simmer and cook for 10 minutes. Whisk to smooth gravy.
- 3. Whisk in cream. Taste for seasoning and add more salt and pepper, if needed. Keep warm.
- 4. Oil an ovenproof skillet and heat it until it is very hot. Sear the pork chops on both sides until they turn golden. Place pan in oven and roast pork chops from 5-10 minutes, depending on thickness. They should reach 135F. on a meat thermometer. Let them rest 10 minutes.
- 5. Place cooked egg noodles on each plate and add one chop on each plate. Ladle gravy over noodles and serve extra gravy in a bowl on table.
APPLE GINGER PORK CHOPS
Steps:
- In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
- Preheat oven to 350 degrees F.
- In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
- In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
- Remove chops from oven and add to the apple mixture. Serve hot.
GINGER PORK CHOPS
A pleasant combination of honey, soy sauce and ginger glazes these tender pork chops and makes them seem special. Serve with buttered green beans and instant mashed potatoes as shown in the photo above right. Or complete the meal with peas and scalloped potatoes from a boxed mix.

- Pat chops dry with paper towels and season with salt and pepper.
- Heat 1 tablespoon oil in large skillet over medium-high heat until just smoking.
- Add chops and cook until well browned, about 4 minutes per side.
- Transfer chops to a plate.
- Add remaining oil and onion to skillet and cook until lightly browned, about 3 minutes.
- Stir in ginger and cook until fragrant, about 30 seconds.

- Combine the seasoning mix ingredients in a small bowl and set aside.
- Melt the fat and butter in a large skillet over medium heat.
- When almost melted, add the onions, celery, and garlic; saute 5 minutes, stirring occasionally.
- Stir in the seasoning mix and cook 5 minutes more, stirring occasionally.
- Add the stock and pan drippings; bring to a boil over high heat and boil rapidly until liquid reduces to about 1 quart, about 25 minutes.
- Then crumble the gingersnaps into the stock mixture and whisk with a metal whisk until they are dissolved.
- Continue cooking 10 minutes, whisking frequently and making sure the gingersnaps are thoroughly dissolved.
- During this time, taste the gravy; if the ginger flavour is not pronounced,m add the 1 tablespoon brown sugar and the 1 teaspoon ginger or add both to taste.
- Strain the gravy.
