1 medium onion, chopped
1 medium green pepper, chopped
3/4 cup chopped celery
2 cans (15-3/4 ounces each) pork and beans
1 can (8 ounces) tomato sauce
1 tablespoon sugar
1 tablespoon ground mustard
1 tablespoon white vinegar
1/4 teaspoon dried thyme

Steps:

  • In a large skillet, cook beef, onion, green pepper and celery over medium heat until the meat is no longer pink; drain. Add the remaining ingredients., Transfer to a greased 3-qt. baking dish. Bake, uncovered, at 375° for 30-35 minutes or until heated through.

Steps:

  • Sprinkle pork with salt and black pepper. Cook bacon in a large Dutch oven over medium heat until crisp and well browned; transfer to paper towel-lined plate, reserving 1/4 cup drippings in pot.
  • Brown pork pieces in bacon drippings over medium-high heat, 3 to 5 minutes per side. Work in batches; transfer browned pieces to a plate as they brown. Transfer all pieces back to pot, along with accumulated juices. Stir in onion, serrano pepper, broth, and tomato sauce. Bring to a boil, then reduce heat to medium-low or low to maintain a low simmer. Simmer, covered, 1 hour.
  • Stir in beans and cactus; simmer, uncovered, until heated through, 20 minutes more. Stir in bacon. Serve over rice and garnish with avocado and cilantro.

A similar version of this barbecue bean recipe was served as a side dish at our church 4th of July picnic every year. This is a very hearty recipe and it is very popular at potlucks.

1 tablespoon vegetable oil, or as needed
2 cups chopped onions
2 (15 ounce) cans red kidney beans, drained
2 cups barbeque sauce
¾ cup packed brown sugar
¼ cup white vinegar
1 tablespoon liquid smoke
½ teaspoon ground black pepper
2 (15 ounce) cans black beans, drained
1 ½ pounds bacon
2 (28 ounce) cans pork and beans, drained
2 (28 ounce) cans pork and beans, undrained

Steps:

  • Heat oil in a Dutch oven over medium heat. Add onions and fry until translucent, about 5 minutes. Add kidney beans, barbeque sauce, brown sugar, vinegar, liquid smoke, and pepper; cook until bubbly, about 5 minutes. Reduce heat to low, cover, and simmer for 1 hour.
  • When the beans have simmered for about 50 minutes, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Add black beans and chopped bacon to the Dutch oven. Cover and simmer over low heat for 30 minutes.
  • Add drained pork and beans and undrained pork and beans. Cover and simmer until heated through, about 15 minutes.

2 tablespoons low-sodium soy sauce
1/2 cup dark brown sugar

Steps:

  • Preheat a charcoal grill to 225 degrees F. Carefully edge the coals to 1 side and then add 1/2 cup drained wood chips. Place 1 cup of water in metal drip pan on opposite side.
  • Inject the pork butt with brine about every 2-inches and then rub with marinade and dust with Dry Rub. Place the pork on the grill, directly over the drip pan and cook. Be sure to replenish the coals as the temperatures drops, the chips as the smoke dissipates and the water in the drip pan.
  • After 6 hours, spray the pork with Cider Mop every half hour. Cook until a thermometer placed into the thickest part of pork reaches 195 degrees F. Transfer to a platter, brush with the sauce and let rest 30 minutes. To serve, slice into 1/2-pound servings, place on plates and serve with extra sauce alongside.
  • Combine all ingredients in a bowl until the salt and sugar dissolve and then place into meat syringe for immediate brining or reserve, refrigerated, for later use.
  • Place all ingredients into a blender and puree. Remove to an airtight container and store in the refrigerator until needed.

2 cups cranberry, pinto, red, kidney or pink beans, rinsed and picked over
2 tablespoons neutral oil, like corn or canola
1/2 pound slab bacon, cut into 1/2-inch cubes
3 pounds boneless pork butt or shoulder
Salt and pepper
2 large yellow onions, peeled and chopped
4 cloves garlic, peeled and chopped
1 tablespoon tomato paste
2 tablespoons Dijon mustard
2 tablespoons maple syrup
2 tablespoons molasses
2 bay leaves
1 1/2 cups chicken broth (canned is fine)

Steps:

  • Soak beans in water to cover for several hours, or combine them in a saucepan with cold water to cover and simmer for about 10 minutes.
  • Heat oven to 350 degrees. Put oil in a large casserole or Dutch oven, and turn heat to medium-high. Add bacon and cook, stirring occasionally, while you trim pork of excess fat and cut it into 2-inch cubes. When bacon is nicely browned, add pork, a bit at a time, and cook until nicely browned, sprinkling with salt and pepper as it cooks.
  • Add onions and garlic and cook until they soften a bit, then add remaining ingredients, including 2 teaspoons ground black pepper and drained beans. Stir and barely cover with water.
  • Bring to a bare simmer on stove top, then cover and put in oven. Cook for 2 hours, one with lid on, one with lid off. Check occasionally, adding a splash of water if necessary.
  • When beans are done, check for seasoning, adding salt if necessary. Serve immediately, or keep warm in a low oven or over a low flame, or refrigerate and reheat when ready to serve.

2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°F.
  • Combine flour, baking soda, baking powder, cinnamon, and salt together.
  • Combine the above mixture with eggs, sugar, and oil in a large mixing bowl.
  • Beat at medium speed for 2 minutes.
  • Mash drained beans and pineapple to the mixture. You could use a blender for this part and probably would be better to get a smooth bean mixture.
  • Bake 30-35 minutes until toothpick test comes out clean.
  • Cool for 25 minutes.
  • Topping:.
  • Mix all ingredients except 1/2 of the pecans; spread between layers, or if a bundt cake style, over the whole thing.
  • Once icing on top, sprinkle remaining pecans.

I like this recipe because its simple and quick and a good way to empty out those ketchup bottles! Once it is put together in the cooker you can forget about it until supper. I serve this with toast and a salad. The leftovers are frozen and added to homemade chili. For those on gluten free diets, please make sure all your ingredients are GF.

3 -4 cups raw dried navy beans, cover with
8 -12 cups cold water, and soak overnight
3 teaspoons salt
1 tablespoon molasses or 1 tablespoon corn syrup
2 teaspoons prepared mustard
1/2 cup brown sugar
2 cups ketchup
1 tablespoon soya sauce (optional)
3 cups water
1/4-1/2 lb bacon, slices raw

Steps:

  • If your beans have soaked overnight, Add enough HOT water to cover beans by about an inch.
  • Stir.
  • Cover.
  • Cook on High 1 hour or longer until beans are tender.
  • Beans need to be tender before you add the other ingredients otherwise it is hard to cook them to the soft stage.
  • Drain.
  • If you forgot to do this step then, place 4 cups beans into slow cooker.
  • Add at least 10 cups hot water, cover.
  • Cook on High for 2 hours.
  • Test a bean - they should be soft/tender BEFORE adding remaining ingredients.
  • Drain.
  • Put remaining ingredients into slow cooker.
  • Stir gently.
  • Cover and cook: On Low for 8 to 10 hours or on High for 4 to 5 hours.

ONE-POT BARBECUE PORK AND BEANS



One-Pot Barbecue Pork and Beans image

Two beloved barbecue staples are cooked together in one pot (or a slow cooker) for mutually beneficial results. As the pork shoulder braises, the pork juices flavor the barbecue sauce and the sauce tenderizes the pork. Beans are then added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (To mimic a North Carolina-style sauce, add apple cider vinegar with the beans, or yellow mustard for a South Carolina-style sauce, or even gochujang and soy sauce for a Korean-inspired take.) To serve, slice the pork or shred it into pulled pork. Cornbread, biscuits or Texas toast are great additions.

Steps:

  • Heat the oven to 350 degrees. Season the pork all over with 1 tablespoon salt and 3/4 teaspoon pepper. In a large Dutch oven, heat the olive oil over medium-high. Add the pork shoulder and sear until browned on all sides, 8 to 10 minutes. Spoon out all but 1 or 2 tablespoons of fat.
  • Meanwhile, in a small bowl or measuring cup, stir together the barbecue sauce, chipotle and brown sugar. Taste, and add more brown sugar or chipotle, as needed.
  • Add the onion and garlic to the oil in the Dutch oven, season with salt and pepper and stir to coat. Cook over medium-high until the onions are softened, just 1 minute. Spoon the barbecue sauce over the pork, seeking to cover all exposed sides. Pour the chicken broth over the onion and garlic.
  • Cover and transfer to the oven, basting the pork with the sauce every 30 minutes or so until the pork falls apart when prodded with a fork, 2 1/2 to 3 hours. Open the cans of beans and drain and rinse one of the cans. When the pork is tender, add 1 can of beans and its liquid along with the rinsed beans; stir to combine. Cook, uncovered, in the oven until the pork is glazed and the beans are warmed through, about 20 minutes.
  • Transfer the pork to a cutting board, then season the beans to taste with salt and pepper. Slice the pork against the grain into 1/2-inch-thick slices, or shred the pork with two forks. Serve the pork with the beans right out of the pot.

3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped
200g whole cherry tomatoes
2 tbsp tomato purée
2 x 400g cans butter beans , drained
⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

Steps:

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.
