1 pound pork tenderloin
2 tablespoons butter
1/2 cup beef broth
3/4 teaspoon dried tarragon
1/2 cup heavy whipping cream
1 tablespoon Dijon mustard
Salt and pepper to taste
Hot cooked noodles, optional

Steps:

  • Cut tenderloin into 8 pieces. Slice each piece again, but do not cut all the way through; open and flatten each piece, pounding slightly with meat mallet. , In a large skillet over medium-high heat, cook the pork in butter until no longer pink, 5-6 minutes on each side. Remove to a serving dish and keep warm; discard drippings. , In the same skillet, cook broth and tarragon over high heat until reduced by half. Reduce heat; stir in cream and mustard. Season with salt and pepper. Spoon over pork. Serve with noodles if desired.

1 tbsp olive oil
350g pork fillet, thinly sliced
1 large onion , thinly sliced
1 garlic clove , crushed
100g chestnut or button mushrooms , sliced
100ml/3½ fl oz crème fraîche
1 rounded tbsp wholegrain mustard
a good handful of fresh basil

Steps:

  • Heat the oil in a large frying pan. Add the pork and fry for 2 minutes over a high heat. Toss in the onion, garlic and mushrooms and cook for 4-5 minutes, stirring occasionally.
  • Stir in the crème frâiche and mustard, then tear in the basil. As soon as the crème frâiche has gone runny, remove the pan from the heat. Serve with rice and seasonal vegetables.

1 boneless pork loin roast (2-1/2 to 3 pounds)
2 teaspoons olive oil
1-1/4 teaspoons ground mustard
3/4 teaspoon garlic powder

1 teaspoon of Colman's Dry Mustard Powder
1 tablespoon of Latino spice mix (salt, cumin, pepper, oregano)
1 sprig of fresh sage
1/4 cup of olive oil
1 1/2 cups of heavy cream or crème fraiche
1 teaspoon of Colman's Prepared Mustard
1 tablespoon of Latino spice mix (salt, cumin, pepper, oregano)
1 teaspoon of chicken bouillon
1 tablespoon of water (if needed)

Steps:

  • In a saucepan add the heavy cream and combine with the spices and the Colman's Prepared Mustard. Cook in the stove for five minutes and add some water if needed. Keep it warm.

An easy make-ahead, mustard sauce is served on the side and completes this delicious dish.

2 pork tenderloins ((About 1-1/2 pounds each))
1/4 cup low-sodium soy sauce
1/4 cup bourbon
2 Tbsp brown sugar
2/3 cup mayonnaise
2/3 cup sour cream
2 Tbsp dry mustard
2 Tbsp green onions or scallions (thinly sliced)
1 tsp white vinegar
Kosher salt to taste

Steps:

  • Mix the soy sauce, bourbon and brown sugar in a large ziplock bag and shake well. Add tenderloins and refrigerate overnight, turning occasionally.
  • Add the mayonnaise, sour cream, vinegar, mustard and sliced green onions to a medium size bowl and mix well. Stir to combine, cover and refrigerate until you are ready to serve. Taste and add salt if necessary before serving.
  • Preheat oven to 325 degrees F.
  • Remove pork tenderloins from the marinade (reserve the marinade), and place on a parchment lined cookie sheet.
  • Add the reserved marinade to a small saucepan, heat over medium-high heat and bring to a boil. Cook for 1 minute. Set aside.
  • Bake the tenderloins until a meat thermometer registers 140°F to 145°F in the thickest part of the meat, which should take about 45 minutes depending on the size of the tenderloins. Baste the tenderloins with the reserved marinade every 15 minutes while they are cooking.
  • When the tenderloins are done, remove from the oven, tent loosely with foil and let rest for 10 minutes.
  • To serve, slice the tenderloins and serve with mustard sauce on the side.
  • Optional: garnish with chopped fresh parsley

Steps:

  • Combine first 9 ingredients. Rub mixture all over pork. **Note: At this point, you could put pork in a large ziplock and marinate in the fridge until you are ready to use. Remember to let meat come to room temperature before roasting.
  • Place pork in a casserole sprayed with nonstick cooking spray or use a roasting pan. Sprinkle sesame seeds all over pork.
  • Bake pork at 400 degrees for 45 minutes or until internal temperature reaches 160 degrees. Remove pork from oven and let rest for 5 minutes.
  • For the sauce: combine horseradish, mustard and honey in a bowl. Microwave 1-2 minutes, just until sauce is heated through. If sauce is too strong or spicy, you can tame it down by adding more honey and a tablespoon of water.
  • Slice pork and serve with hot mustard sauce.

1 1/2 package (25 ounce size) frozen roll dough

Steps:

  • For the tenderloin, combine the teriyaki sauce, bourbon and brown sugar in a 7- x 11-inch dish and mix well. Add the tenderloin and turn to coat. Marinate covered in the refrigerator for 8 to 10 hours, turning occasionally. Drain. Place the tenderloin on a rack in a shallow roasting pan. Bake at 400 degrees F for 30 minutes or until a meat thermometer registers 160 degrees F for medium. Let rest for 5 to 10 minutes. For the sauce, combine the mayonnaise, dry mustard, vinegar and teriyaki sauce in a bowl and mix well. Chill covered in the refrigerator. Sprinkle with paprika just before serving. For the rolls, thaw 3 dozen dough balls using package directions. Cut each ball into halves with kitchen shears. Roll each portion into a ball and arrange on lightly greased baking sheets. You may store in heavy-duty resealable plastic bags for up to 2 days. To serve, cut the tenderloin into thin slices on a cutting board. Serve the sliced tenderloin with the rolls and sauce.
