ROASTED PORK TENDERLOIN WITH FRESH PLUM SAUCE
When shopping for this recipe be sure to choose plums (or any other stone fruit) that are fairly firm so they keep their shape after roasting. You know that selfish jerk that has to feel-up every piece of fruit before deciding on one? This time, be that jerk.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Generously season pork tenderloin with salt and black pepper.
- Heat oil in a large, oven-proof skillet over medium-high heat. Cook tenderloin until browned on all sides, 2 to 4 minutes per side. Transfer tenderloin to a plate.
- Saute onion with a pinch of salt in the same skillet until just softening, 3 to 5 minutes. Add shallots, reduce heat to medium, and cook and stir until shallots and onion are golden brown and caramelized, about 10 minutes.
- Stir thyme into onion mixture; place tenderloin over onion mixture, and set plum quarters, skin-side down, around pork tenderloin. Transfer skillet to preheated oven.
- Cook until pork is slightly pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer pork and plums to a plate.
- Place skillet over medium-high heat and pour water and balsamic vinegar into onion mixture. Bring mixture to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook and stir until liquid is reduced by half, 5 to 10 minutes; remove from heat. Whisk butter into mixture until melted and sauce is shiny. Pour sauce over pork and plums.

SPICED PORK TENDERLOIN WITH CHERRY-THYME PAN SAUCE
Frozen cherries are the star in a vibrant, herby pan sauce that is made while the lightly spiced pork tenderloin rests.

- Combine coriander, 1 tsp. salt, and 1/4 tsp. pepper in a small bowl. Rub pork with spice mixture.
- Heat oil in a 12" heavy skillet over medium-high until hot but not smoking. Reduce heat to medium and cook pork, turning occasionally, until meat is browned on all sides and an instant-read thermometer inserted diagonally into the center of each tenderloin registers 145°F, 20-25 minutes. Transfer pork with tongs to a cutting board (do not wipe out skillet) and let stand 10 minutes.
- Meanwhile, cook shallot and thyme in skillet, stirring, until softened and lightly golden, about 2 minutes. Add wine, vinegar, and sugar. Bring to simmer and cook, scraping up any browned bits and stirring frequently, until liquid is reduced by about half and shallots are tender, about 4 minutes. Stir in cherries, any accumulated juices, and 3/4 tsp. salt and cook 1 minute. Remove from heat, add butter, and swirl skillet to combine. Pluck out thyme sprigs, then season with salt and pepper. Slice pork and serve with sauce.

- In a small bowl, combine the barbecue sauce, preserves, corn syrup, mustard and cloves; set aside., Sprinkle pork chops with salt and pepper. On a lightly oiled grill, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°, basting frequently with sauce mixture. You may want to reduce the red pepper flakes (or the types of fruit) I used canned since I needed the juice. This is just one that you use your own taste buds to determine what you want. But this is how I made it

Steps:
- Cook pork (sprinkled with pepper - optional,) I cut the tenderloin into 1" chops, and used my flavour wave to cook them at 400 degrees for approximately 15 minutes, but you can cook them using whatever method you would like.
- Mean while I added fruit to a pan (doesn't matter what kind). These were just what I happened to have.
- Stir in 1/2 of the juice saving the rest to mix with cornstarch.
- Heat, then add pepper flakes, and cinnamon. I added more than I have suggested but as they say you can always add but can not take away.
- Mix remaining juice with cornstarch until bubbling.Add more sauce with the cornstarch if you prefer it to have extra juice.
- By this time the pork should be done.
- Note: adjust types or amounts of fruit to your liking. I could not find a recipe so just put it together.
- Spoon sauce over pork, and serve with your favourite side dishes.
- Note: you end up with extra fruit in the can' but you can of course double the recipe or store the extra in containers).
- I served it with baked potato, and corn that I cut off the cob.

- In a large saucepan, bring plums and vinegar to a boil. Reduce heat; cover and simmer 10-15 minutes or until tender. Cool slightly; transfer to a food processor. Cover and process for 1-2 minutes or until blended; strain. , Return plum mixture to the pan; stir in the brown sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally. , Place pork on a rack in a roasting pan; sprinkle with pepper. Set aside 1/2 cup plum sauce for serving. Steps:
- Place roast in shallow roasting pan, and sprinkle roast with rosemary and peppers.
- Bake uncovered at 350 degrees for 1 hour.
- In a large saucepan, combine remaining ingredients.
- Bring ingredients to a boiling point, reduce heat and simmer for 20 minutes.
- Remove roast from oven and spoon about 1 cup sauce over roast, and return to oven and cook for 1 hour or till meat thermometer reads 165 degrees.
- Let roast stand 15 minutes before slicing.
- Spoon meat juices from roast into fruit sauce.
- Heat and serve with pork roast.
- Serve over hot cooked rice.

- In a small saucepan, bring broth and rice to a boil. Reduce heat; cover and simmer for 30 minutes or until rice is tender. , Meanwhile, in a small bowl, combine cornstarch and water until smooth; set aside. - Preheat oven to 425°. Remove silver skin from tenderloin, leaving a thin layer of fat. Sprinkle pork with salt and pepper. Cook pork in 6 tsp. hot oil in a large skillet over medium-high heat 3 minutes on each side or until golden brown. Transfer pork to a lightly greased jelly-roll or roasting pan, reserving drippings in skillet.

- Sprinkle roast with seasonings. Place roast, fat side up, on rack in a shallow roasting pan. Insert meat thermometer into thickest part of the meat. Bake at 325° for 1 1/2 to 2 hours or until meat thermometer registers 160° (30 to 35 minutes per pound).
