CREAMY CHEESE GRITS AND MUSHROOMS



Creamy Cheese Grits and Mushrooms image

A vegetarian version of shrimp and grits made with big slices of meaty mushrooms. This dish verges on the decadent side with an abundance of butter, cheese, and cream.

7 cups (1.65 liters) water
1 ½ cups (250 grams) corn grits or polenta
½ teaspoon fine sea salt
8-12 ounces (225 - 340 g) sharp yellow cheddar cheese, shredded (use as much as you like the taste of)
3-6 tablespoons (42 - 85 g) unsalted butter
1 ½ pounds (680 g) mushrooms (I like a mix of Maitake, King Oyster, and Shiitake), cut into large chunks or slices
4 tablespoons (56 g) unsalted butter, divided use
1/2 large yellow onion, diced
1/2 large bell pepper, seeded and diced
2 cloves garlic, minced
1 cup diced ripe tomatoes and their juices
½ teaspoon dried thyme (or 1 teaspoon fresh)
2 teaspoons cornstarch
½ to 1 cup (120-245 ml) vegetable stock
1 tablespoon tomato paste
⅓ cup (80 ml) heavy cream
1 teaspoon Worcestershire sauce, tamari, or amino acids
2 dashes Tabasco (or more, to taste)
Salt to taste
Snipped chives or chopped parsley, for garnish

Steps:

  • In a large pot or dutch oven, bring the water to a boil. Stir in the grits. Reduce the heat to low, cover the pot, and cook let cook, stirring occasionally to prevent the grits from sticking to the bottom of the pot. Cook until the grits are tender and the liquid has been absorbed, 20-30 minutes. Remove from the heat, add the salt, cheese, and butter and stir until melted. Cover and keep warm.
  • Melt 1 tablespoon of the butter in a large skillet or braising pan over medium heat. Add half of the mushrooms and cook for 5 minutes or until golden on the bottom. Flip the mushrooms over and brown on the second side, about 5 minutes more. Remove the mushrooms to a large plate. Add another tablespoon of butter to the pan and repeat with the remaining mushrooms.
  • Melt the remaining 2 tablespoons butter in the now empty pan over medium heat and add the onion, bell pepper, and garlic. Cook, stirring occasionally, until softened, 3-5 minutes. Add the seared mushrooms and any juices that have accumulated. Add the tomatoes, their juices, and the thyme and bring to a simmer.
  • In a small cup, stir together the cornstarch and 1 or 2 tablespoons of cool water to make a slurry. Add this to the pot along with 1/2 cup vegetable stock. Cook for 2 or 3 minutes more. Add the tomato paste and stir until blended. Stir in the cream, Worcestershire, Tabasco, and more stock if needed to make a spoonable sauce that generously coats the mushrooms. Heat thoroughly, being careful not to let it come to a boil. Taste, adding salt if you like.
  • Serve the grits in shallow bowls topped with the mushrooms, sauce, and a sprinkle of chives.

2 teaspoons vegetable oil
4 3/4-inch-thick boneless pork chops (about 1 1/2 pounds)
Kosher salt and freshly ground pepper
2 red onions, thinly sliced
1 tablespoon all-purpose flour
1 cup low-sodium chicken broth
1 bay leaf
1 1/2 teaspoons balsamic vinegar
3/4 cup quick-cooking grits
1/2 cup shredded cheddar cheese (about 2 ounces)
1 tablespoon chopped fresh parsley, plus more for topping

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Season the pork with 1/2 teaspoon salt and a few grinds of pepper; cook until browned, 3 minutes per side. Transfer to a plate.
  • Add the red onions to the skillet and season with salt. Cook, stirring, until lightly browned, 3 minutes. Reduce the heat to medium, stir in the flour and cook, stirring, 2 minutes. Add the chicken broth and bay leaf. Cook, stirring, until thickened, about 3 minutes. Add the vinegar, then return the pork to the skillet to warm through.
  • Meanwhile, bring 2 1/4 cups water to a boil in a medium saucepan over medium-high heat. Add the grits and 1/2 teaspoon salt. Reduce the heat to low and cook, stirring, until thickened, 5 minutes. Stir in the cheese.
  • Remove the pork from the skillet; discard the bay leaf and stir the parsley into the pan sauce. Serve the pork with the grits. Top with the pan sauce and more parsley.

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

¼ cup butter, divided

2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.

1 very small onion (50g/1¾oz peeled weight), finely chopped
100g/3½oz lean pork medallion, roughly chopped
1 garlic clove, crushed (optional)
100g/3½oz mushrooms, roughly chopped
100ml/3½fl oz chicken stock
3 level tbsp half-fat crème fraîche
1 tbsp chopped fresh chives (optional)
salt and freshly ground black pepper
150g/5½oz courgetti or butternut squash noodles, to serve

Steps:

  • Heat the oil in small frying pan. Add the onion and cook for 3-4 minutes.
  • Add the pork, garlic (if using) and mushrooms and cook for 2-3 minutes.
  • Pour in the stock, cover with a lid and cook over a low heat for 5-10 minutes, or until the pork is cooked through.
  • Remove from the heat, stir in the crème fraîche and chives, if using, and season to taste.
  • Cook the courgetti in a microwave on high for 2 minutes. Leave to stand for 1 minute.
  • Serve the pork and sauce with the courgetti.

3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 medium onion, thinly sliced
1-1/2 cups sliced fresh mushrooms
1/2 cup thinly sliced celery
2 tablespoons all-purpose flour
1/2 cup chicken broth
Hot wild rice or noodles, optional

Steps:

  • In a skillet, brown pork in butter. Transfer meat to an ungreased shallow 1-1/2-qt. baking dish. Sprinkle with salt and pepper; set aside. In the pan drippings, saute the onion, mushrooms and celery until tender. Combine flour and broth until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes. Pour over meat. ½ teaspoon seasoning salt, or to taste
1 tablespoon oil
2 cups chicken broth
1 cup sliced button mushrooms
1 small chopped onion

¼ cup flour, or more as needed

Steps:

  • Trim fat off pork chops and season generously with seasoning salt.
  • Heat oil in a large skillet over medium heat. Add pork chops and cook until browned, 3 to 4 minutes per side. Transfer pork chops to a plate.

1/2 cup fresh or frozen/thawed peeled peach slices
2 to 4 teaspoons prepared horseradish (adjust as necessary to produce a more or less spicy glaze)
Pinch freshly ground black pepper
4 cups low-sodium chicken broth
1 1/4 cups yellow quick cooking grits (recommended: Bob's Red Mill Corn Grits/Polenta)
1/2 cup heavy cream
6 tablespoons drained and chopped pimientos
1 cup grated sharp Cheddar
1 sweet potato
Peanut oil, for frying
Kosher salt
1/2 small Vidalia onion (or other sweet onion), peeled
1/3 cup sugar
1/3 cup plus 2 tablespoons apple cider vinegar
1/3 cup olive oil

3 cups fresh watercress, washed and dried
6 (approximately 8-ounce) bone-in, fully cooked smoked pork chops (recommended: Smithfield)

Steps:

  • Begin the components of this meal by beginning with the following:
  • Bring cola to a boil over high heat in a large wide, shallow saucepan.
  • Bring chicken broth to a boil over high heat in a large deep pan.
  • Bring 2-inches peanut oil to 350 degrees F in a large Dutch oven.
  • Preparing the glaze: Once cola is boiling, continue to cook vigorously, over medium-high heat, until it's reduced to about 1/3 cup and becomes slightly syrupy, about 15 to 20 minutes. While the cola is reducing, place the peach pieces into a blender and puree. Once the cola has reduced, stir in the horseradish, peach puree, and pepper. Set aside. The glaze will have the consistency of a thin syrup.
  • Preparing the grits: Once the chicken broth comes to a boil, slowly whisk in the grits and stir vigorously to avoid lumps. Continue to cook the grits over medium-low heat, stirring frequently, until they are soft and thick, about 10 to 15 minutes. Cover the pot and allow the grits to sit for 5 minutes. Stir in 1/4 cup cream, pimientos, and cheese, and stir to combine. Just before serving, check the consistency of the grits. Stir in the additional 1/4 cream, if necessary, to thin them out.
  • Prepare the sweet potato frizzles: Peel and grate the sweet potato using the large holes in a box grater. Using a tea towel, squeeze as much liquid as possible from the potato. Carefully drop the dry potato shreds in the oil once it reaches 350 degrees F. Fry for about 1 minute, until crispy and lightly browned. Remove from oil, drain on paper towels, and season lightly with salt.
  • Prepare the watercress salad: Grate the onion using a box grater. In a jar or shaker, mix the onion, sugar, vinegar, oil, and salt. Shake vigorously until blended. Just before plating the salad, drizzle about 1/4 to 1/2 cup of the dressing over the watercress and toss gently to coat.
  • Preparing the chops: (Note the chops are fully cooked, so the preparation is to give them color, glaze them, and heat them through.)
  • Preheat a large grill pan to medium-high heat. Brush each chop with about a tablespoon of oil, and season scantily with salt and pepper. Be cautious about oversalting the chops, since they are generally salty. Place the chops on the grill pan. Allow to sear for about 1 to 3 minutes, and then rotate the chop to get nice hash marks on the chop for another 2 to 3 minutes. Turn chops over. Cook on the other side for 3 to 4 minutes total. Reduce heat. A few minutes before serving, spoon about a teaspoon of glaze over each chop. Turn over and repeat, being careful not to burn the glaze.
  • To serve: Place a mound of the grits on each plate. Lean a chop next to the grits. Sprinkle about a tablespoon of sweet potato atop the grits/chop. On the side of the chop, mound a serving of the dressed watercress. Drizzle a tablespoon or so of the glaze over the chop and allow it to run into the grits.

1 large or 2 small pork tenderloins , about 1 1/2 pounds
2 tablespoons butter, divided
2 tablespoons extra-virgin olive oil, divided
2 medium onions, thinly sliced
1 teaspoon sugar
8 ounces sliced mushrooms
1/3 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup dry white wine or Marsala wine
1/2 cup chicken broth

Steps:

  • Gather the ingredients.
  • Slice the pork crosswise, about 3/4- to 1-inch in thickness.
  • With the heel of your hand or a meat tenderizer, gently pound to make the medallions about 1/2-inch thick.
  • In a large skillet or sauté pan, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium-low heat.
  • Saute the onions, stirring frequently until softened. Add the sugar and continue cooking-stirring frequently-for about 15 minutes.
  • Add the mushrooms to the onion mixture, and continue cooking for about 5 minutes or until the mushrooms are tender and golden brown.
  • Remove the onions and mushrooms to a plate and set aside.
  • Sprinkle the pork with the salt and pepper; dredge in the flour. Add the remaining 1 tablespoon of butter and 1 tablespoon of oil to the skillet. ​
  • Pan sear the pork medallions over medium heat for about 3 to 4 minutes on each side, or until nicely browned.
  • Add the wine and broth to the skillet along with the onion and mushroom mixture. Simmer, uncovered, for 2 minutes.
  • Cover and reduce heat to low; cook for about 10 minutes longer.
  • Serve the pork tenderloin with hot cooked rice, potatoes, or pasta.

  • Preheat oven to 325°F. Place pork on a rack in a roasting pan, and bake in preheated oven until meat shreds easily with a fork, 4 to 4 1/2 hours.
  • Meanwhile, stir together water and grits in a lightly greased 3- to 4-quart slow cooker. Let stand 2 minutes, allowing grits to settle to bottom; tilt slow cooker slightly, and skim off solids using a fine wire-mesh strainer. Cover and cook on HIGH until grits are tender and thickened, 2 1/2 to 3 hours, stirring every 45 minutes. Add cream and grated Parmesan, and whisk until cheese is melted. Stir in 1 teaspoon of the salt and 1/4 teaspoon of the pepper. Cover and keep warm.
  • Remove pork from oven; let stand 15 minutes. Shred pork with 2 forks. Heat 1 tablespoon of the oil in a large skillet over medium-high. Add kale, and cook, stirring constantly, until wilted and tender, about 3 minutes. Stir kale into grits. Wipe skillet clean.
