Pork chops with a wonderfully different zing. Easy to make, yet it appears as though you slaved all day long! This dish is great served with any type of potato.

1 tablespoon vegetable oil
4 large boneless pork chops, that can be butterflied
3 tablespoons butter
2 sweet apples of your choice, peeled and chopped
1 ½ cups crumbled gorgonzola cheese

Steps:

  • Butterfly each pork chop by slicing horizontally through the center with a sharp knife. Leave them attached on one side so they can be flipped open to create a butterfly shape.
  • Heat oil in a large skillet over medium high heat. Add pork chops, reduce heat to medium and cook slowly for 5 to 7 minutes each side, or until they are done to your liking. Set aside.
  • Melt butter or margarine in a medium skillet over medium heat. Add apples and saute until tender, then turn off heat and add cheese to skillet. Mix together slowly to form a creamy thick sauce.
  • Place reserved chops on serving plate and stuff each one with 1/4 of the apple/cheese mixture. Serve hot.

1 package (16 ounces) bulk pork sausage
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
3/4 cup crumbled Gorgonzola cheese
3/4 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
4 cups fresh spinach, lightly packed
3 tablespoons minced fresh basil

Steps:

  • Cook pasta according to package directions. Drain; return to pan. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 4-6 minutes, breaking into crumbles; drain., In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat. Stir in cheese, salt and lemon pepper. Add cheese sauce, sausage and spinach to hot pasta; toss to combine. Sprinkle with basil.

For the Gorgonzola Sauce:
3 ounces Gorgonzola cheese (or other blue cheese, crumbled; about 3/4 cup)
2 tablespoons white wine vinegar (or cider vinegar)
1/3 cup sour cream
2 tablespoons olive oil
2 tablespoons fresh parsley (chopped)
For the Steak:
4 (6-ounce) boneless beef steaks (such as strip steak, tenderloin, or sirloin)
1 teaspoon Kosher salt
1 teaspoon freshly ground​ black pepper
1 to 2 tablespoons vegetable oil

Steps:

  • Gather the ingredients.
  • To make the sauce: In a small bowl, combine the Gorgonzola and vinegar. Mash with a fork until almost creamy (some lumps will remain).
  • Stir in the sour cream and olive oil until blended. Stir in the parsley and season to taste with salt and pepper.
  • Generously season the steaks on both sides with the salt and pepper.
  • In a large, heavy skillet, heat the vegetable oil over medium-high heat. Add the steaks and cook for 4 to 5 minutes on each side for medium-rare, or 5 to 6 minutes for medium.

This is from Bon Appetit from a few years back. It's one of my old stand by's for dinner parties or birthday dinners. It's quick and easy so you can enjoy your guest and still impress them at the same time!

1/4 cup Dijon mustard
1 tablespoon olive oil
1 tablespoon dried thyme
2 3/4 lbs pork tenderloin
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup whipping cream
1/4 cup dry white wine
1/4 cup reduced-sodium chicken broth
1 cup crumbled gorgonzola (about 4 oz)

Steps:

  • For the pork: Orl a large rimmed baking sheet. Whisk the Dijon, olive oil and Thyme in a small bowl. Sprikle the tenderloins with salt and pepper. Heat a large nonstick skillet over high heat. Add pork and sear until brown all over, about 10 minutes.
  • Transfer seared pork to prepared baking sheet. Spread Dijon mixture all over the pork. (Can do this a couple of hours ahead and refrigerate until your ready to cook).
  • Preheat the oven to 425°F Roast pork until internal temp is 150, about 30 minutes. Remove from the oven and stand for 5 minutes.
  • Meanwhile prepare the sauce.
  • Melt 1 tbsp butter in a heavy small saucepan over medium heat. Add 1 Tbsp flour and whisk for 1 minute. Gradually whisk in the cream, white wine and chicken broth. Boil until the mixture is thick enough to coat the back of the spoon, whisking frequently, about 1 minute.
  • Add Gorgonzola and whisk until the cheese is melted and smooth, about 5 minutes.
  • Slice pork onto plates. Ladle over the sauce. Pass additional sauce seperately.

This is a full-flavored, pungent, yet subtle special occasion dish. We served the meal with diced, spiced new potatoes with chopped onions baked in foil for 40 minutes, and a Caesar salad.

1 tablespoon butter
½ tablespoon dried thyme
½ cup chopped Granny Smith apples
ground black pepper to taste
¼ cup Gorgonzola cheese at room temperature, crumbled
2 thick cut pork chops
½ teaspoon olive oil
2 cloves garlic
¼ cup Gorgonzola cheese
3 tablespoons dry sherry
⅛ cup heavy cream
½ cup chicken broth
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • To make the apple stuffing: In a saute pan or skillet on medium heat, melt the butter and saute thyme, chopped apples, salt and pepper together until the apples are completely softened; about 15 to 20 minutes.
  • Place the apple mixture in a bowl and mix in 1/4 cup Gorgonzola cheese. The cheese should liquefy into the stuffing within a couple of minutes.
  • To prepare the pork chops: Butterfly the pork chops by slicing them parallel to the plane of the chop from the fat side to the bone. Stuff each one with about 2 to 3 tablespoons of the apple mixture.
  • Bake the chops for about 1 hour. Place the chops on a rack with the two stuffing sides pressed together to hold the stuffing inside the chops.
  • To make the sauce: Heat the oil in a saute pan or skillet on medium heat, then saute the garlic until transparent, and the cheese until slightly melting. Immediately add the sherry, let cook for a minute until combined, then add the cream and 1/4 cup of the chicken stock, salt and pepper. Stir until well blended. Stir occasionally and reduce the liquid on medium high heat until the sauce begins to toast/caramelize and turn darker brown. Add the remaining 1/4 cup chicken stock, reincorporate the cheese and continue reducing until there is just 1/4 to 1/2 cup of thick liquid remaining.

1 generous teaspoon kosher salt
1/4 teaspoon black pepper
1 tbsp unsalted butter
1 tbsp coconut oil
3 tbsp Fig Spread
1 tbsp unsalted butter
1 tbsp balsamic vinegar glaze (or reduction)
1 teaspoon fresh thyme
1 bunch asparagus (trimmed)
1 tbsp butter
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 400° and set rack in middle of oven
  • Season pork chops on both side with salt and pepper and set aside
  • Place cast iron skillet or oven safe skillet over medium-high heat and add 1 tablespoon of butter and 1 tablespoon of coconut oil. Once bubbling add pork chops. Cook 5 minutes or until chops are brown and release from pan. Flip cops and cook an additional 5 minutes
  • Add pan directly to preheated oven and cook an additional 10 minutes or until chops internal temperature is 145°
  • Remove pan from oven and place chops on serving plate, cover loosely with foil to keep warm.
