SALT BEEF WATERCRESS



Salt Beef Watercress image

Beef brisket, watercress, sea salt, and patience (one week to be exact!) is all you'll need to make this classic local dish. Comforting and onolicious. Eat with rice.

Number Of Ingredients 3

2 pounds beef brisket
1 cup sea salt (or kosher salt)
2 bunches watercress

Steps:

  • Make the salted water. Over medium heat, combine the sea salt with 8 cups of water. Stir to dissolve the salt. Once the salt has dissolved, remove from heat and let the salt water solution cool to room temperature.
  • Place the beef brisket in a large container. Pour the cooled salt water over the brisket. There should be enough water to cover the brisket entire (add more water if not). Cover and place in the refrigerator. Let it sit in the refrigerator for one week.
  • Remove brisket from the salt water solution. Rinse and place the brisket in a large pot. Add enough water to cover the brisket. Bring to a boil, and then let simmer for 15 minutes.
  • Discard the water and repeat Step 3 (boil and simmer the brisket for 15 minutes).
  • Discard the water and place the brisket on a cutting board. Cut the brisket into bite-size pieces and place them back into the pot.
  • Add 6 cups of water to the pot. Bring to a boil and let simmer for 1-2 hour (until the brisket is as tender as you like).
  • Add the watercress stems and simmer for another 15 minutes.
  • Stir in the watercress leaves. Ladle the soup out into bowls and serve with a side of rice. Eat and enjoy ^_^

This pork watercress soup is a quick and easy dinner, done in under 30 minutes!

1.25 lb Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet ((about half of a larger one))
1 tbsp olive oil
8- oz package of portabella mushrooms, sliced
1 inch piece of ginger, peeled and minced ((about 1 tbsp))
1 tsp garlic, minced
3 cups chicken broth
2 scallions, chopped
3 cups watercress or upland cress, thick stems removed

Steps:

  • Heat oil in a large pot over medium heat. Meanwhile, chop pork into one-inch pieces. When oil is hot, add pork and sauté. Turn pieces occasionally, until the pork is golden on all sides - about 5 minutes.
  • Add mushrooms, ginger, and garlic. Sauté for another minute.
  • Add chicken broth. Simmer for 10 minutes, until mushrooms are tender and pork is cooked through.
  • Stir in scallions and watercress. Cook for 1-2 minutes until watercress is lightly wilted, then serve!

1 bunch of watercress - ends trimmed and washed
300 g pork ribs
6-8 dried red dates
1 carrot - peeled and cut into large pieces
6-8 dried oysters
3 tbsp of goji berries
2 honey dates
20 g ikan bilis (dried anchovies) - rinsed
6 cups water
Salt - to taste

Steps:

  • Blanch the pork ribs in a pot of boiling water for about 5 minutes to remove surface scum. This process makes for a clearer soup. Remove, rinse and set aside.
  • Transfer all the ingredients into a soup pot and bring to a boil. Once it is boiling, turn to the lowest heat and simmer for about 1.5 to 2 hours or until pork ribs are soft.
  • Season with salt to taste.

500 gram (1 lb.) pork spare ribs, cut into bite size pieces
12-15 dried jujube fruits/red dates (Chinese: hong zao)
2 teaspoon salt
6 cup (1.5 liter) water
250 gram watercress (Chinese: xi yang cai / Indonesian: selada air), remove ends and roughly chopped
1 tablespoon goji berries (Chinese: gou qi)

Steps:

  • (Optional) Blanch pork spare ribs in a pot of boiling water to ensure a final clear soup.
  • Boil together blanched pork spare ribs with red dates, salt, and water, the reduce the heat to a simmer and cook until the pork is tender. About 1 hour
  • Add watercress into the pot bring it to a boil again. Reduce heat and simmer until the the watercress is tender. About 20-30 minutes.
  • Add goji berries and cook for another 5 minutes.

1 (14 ounce) package tofu, cubed (semi-firm or firm)
2 fresh garlic cloves, minced
1 tablespoon ginger, minced
1 lb round onion, sliced
5 large fresh shiitake mushrooms, sliced
1 bunch green onion, cut into 2-inch pieces
1 bunch watercress, cut into 2-inch pieces
1 tablespoon vegetable oil (for frying)
1/2 cup soy sauce
3 tablespoons mirin (sweet cooking sake)
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Add vegetable oil to large pan to heat. Add ginger, garlic and pork. Brown pork then add round onion, mushrooms. Add sauce ingredients: soy sauce, mirin and sugar. Let simmer 20-25 minutes. Adjust sauce to nappe consistency, then add tofu, green onions and watercress. Simmer 5 minutes. Enjoy!
