1/2 cup bourbon or reduced-sodium chicken broth
1/4 cup packed dark brown sugar
3 tablespoons white vinegar
3 tablespoons reduced-sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground allspice
1 pork tenderloin (1 pound), cut into 12 slices

Steps:

  • In a small saucepan, combine the bourbon, brown sugar, vinegar, soy sauce, garlic and pepper. Bring to a boil; cook until liquid is reduced to about 1/2 cup, stirring occasionally., Meanwhile, combine the chili powder, cinnamon, salt and allspice; rub over pork slices., In a large skillet coated with cooking spray, cook pork over medium heat for 2-4 minutes on each side or until tender. Serve with sauce.

3 tablespoons paprika
2 tablespoons light brown sugar
1 tablespoon kosher salt
2 teaspoons ground cumin
2 teaspoons dry mustard powder
2 teaspoons black pepper
1 teaspoon cayenne pepper
Two 2-pound pork tenderloins, patted dry
Canola oil
Bourbon-Chipotle Sauce, for serving, recipe follows
2 tablespoons olive oil
1 medium red onion, finely chopped
2 cups plus 2 tablespoons bourbon
4 cups homemade chicken stock
1 cup apple juice concentrate, thawed
1/4 cup light brown sugar
8 whole black peppercorns
1 chipotle in adobo sauce,chopped
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the paprika, sugar, salt, cumin, mustard powder, black pepper and cayenne pepper in a bowl.
  • Heat a large cast-iron pan over medium-high heat, and lightly coat with canola oil. Dredge the pork tenderloin in the rub, tapping off any excess, before searing on all sides, about 3 minutes per side. Place the pan into the oven and cook to medium doneness, 8 to 10 minutes. Promptly remove from the oven and let rest at least 15 minutes.
  • Serve with the Bourbon-Chipotle Sauce.
  • Heat the olive oil in a medium saucepan over medium-high heat. Cook the onions until soft, and then pour in 2 cups of the bourbon and cook until reduced to a few tablespoons. Stir in the chicken stock, apple juice, brown sugar, peppercorns and chipotle, and cook until reduced by half.
  • Strain through a fine mesh strainer, and then return to the pan and cook until it becomes the consistency of a sauce. Add the remaining 2 tablespoons bourbon and cook 2 minutes. Season with salt.

¼ cup bourbon
2 tablespoons brown sugar
2 cloves garlic, halved
3 pounds pork tenderloin

Steps:

  • Mix together soy sauce, bourbon, brown sugar, and garlic. Pour over pork, cover, and refrigerate at least 2 hours, turning occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Remove pork from marinade, and place on rack of shallow roasting pan.
  • Bake for 45 minutes or until a meat thermometer registers 145 degrees F (63 degrees C).

1/4 cup kentucky Bourbon
1/4 cup light soy sauce
1/4 cup packed brown sugar
2 large garlic cloves, chopped
1/4 cup Dijon mustard
1/2 teaspoon ground ginger or 1 teaspoon finely minced fresh ginger
2 teaspoons Worcestershire sauce
1/4 cup vegetable oil
1 dash hot sauce
2 pork tenderloin, about 1 1/2 to 2 pounds

Steps:

  • In blender or food processor, combine bourbon, soy sauce, brown sugar, garlic, mustard, ginger, Worcestershire sauce, hot sauce, and oil; pulse until smooth.
  • Place tenderloin and marinade in a food storage bag; refrigerator for 4 hours or overnight.
  • Cook 4 inches from a hot charcoal fire for 15 to 25 minutes or until the pork has reached 165 degrees internally and is no longer pink in the center.
  • Baste occasionally while cooking.
  • Slice in 1/2-inch thick slices to serve.

Bourbon, mustard, shoy (asian soy sauce) and brown sugar gives this easy dish a charming flavor. It can be cooked on the grill, but I find it best cooked in the oven. Serve the pork sliced with the mustard sauce on the side.

1 lb pork tenderloin
1/4 cup shoyu (Asian soy sauce-regular soy sauce can be used also)
1/4 cup Bourbon
2 tablespoons brown sugar (packed)
1/2 teaspoon Chinese five spice powder (optional)
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon dry mustard
1 tablespoon green onion (chopped)
1/2 teaspoon vinegar
salt

Steps:

  • Marinate pork in a mixture of shoyu, bourbon, 5 spice powder and brown sugar in a sealable plastic bag in the refrigerator for 1 hour.
  • Remove the pork.
  • Boil the marinade in a saucepan over high heat for 1 minute.
  • Bake pork at 325°F for 1 hour, basting often with marinade.
  • Combine sour cream, mayonnaise, mustard, onion, vinegar and salt in a small bowl; mix well.
  • Serve the pork sliced with mustard sauce on the side.
