GRILLED PORK TENDERLOIN WITH WATERMELON BULGUR SALAD



Grilled Pork Tenderloin with Watermelon Bulgur Salad image

Perfectly charred pork tenderloin rubbed with garlic oil is accompanied by a citrusy bulgur salad inspired by tabouli. Typically made with lots of parsley, the salad instead features mint and we added watermelon for a touch of sweetness.

1 cup bulgur
1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more for the grill
Juice of 2 lemons, plus wedges for serving
2 cloves garlic, grated
2 teaspoons paprika
1 large pork tenderloin (about 1 1/4 pounds)
Kosher salt and freshly ground pepper
1 tablespoon red wine vinegar
2 cups cubed watermelon
1 cup finely chopped fresh mint
4 scallions, thinly sliced

Steps:

  • Preheat a grill to medium high. Cook the bulgur as the label directs; drain well, transfer to a large bowl and set aside.
  • Whisk 2 tablespoons olive oil, the juice of 1 lemon, the garlic and paprika in a small bowl. Butterfly the pork: Slice lengthwise down the center, stopping about 1/2 inch before cutting all the way through. Open the pork like a book and flatten slightly with your hands. Lay a piece of plastic wrap on top and pound with the flat side of a meat mallet or a skillet until 1/2 inch thick; discard the plastic wrap. Transfer the pork to a shallow baking dish; season with salt and pepper, then rub all over with the garlic oil. Let sit 10 minutes.
  • Brush the grill grates with olive oil. Grill the pork until well marked, about 6 minutes per side. Transfer to a cutting board and let rest.
  • Add the remaining 1/4 cup olive oil, the juice of the remaining lemon, the vinegar, watermelon, mint and scallions to the bulgur; toss and season with salt and pepper. Slice the pork and serve with the watermelon tabouli and lemon wedges.

½ gallon water
½ cup salt
½ cup dark brown sugar
1 orange, zested and juiced
1 lemon, zested and juiced
1 lime, zested and juiced
½ bunch cilantro, chopped
6 cloves garlic, smashed
2 sprigs fresh rosemary, chopped
2 sprigs thyme
4 bay leaves
1 tablespoon whole black peppercorns
1 tablespoon fennel seeds
1 tablespoon coriander seed
1 ½ teaspoons whole cloves
2 (1 1/4 pound) pork tenderloins, trimmed and halved lengthwise
1 tablespoon vegetable oil

Steps:

  • Warm water in a large pot over high heat. Add salt and stir to dissolve. Stir in brown sugar, orange, lemon, lime, cilantro, garlic, rosemary, thyme, bay leaves, peppercorns, fennel, coriander, and cloves. Bring to a boil, reduce heat to low, and cover. Let brine simmer for 20 minutes.
  • Fill a sink with ice water. Remove brine from heat and place pot into the sink. Cool, stirring, until brine reaches room temperature. Pour into a large plastic or glass vessel such as a 12-quart Cambro®. Add pork tenderloin pieces. Cover and let soak 6 hours to overnight.
  • Remove loins from brine and rinse. Let rest at room temperature for 30 to 45 minutes while you prep the grill. Preheat the grill for indirect heat at 275 degrees F (135 degrees C).
  • Place loins on cooler side of the grill and cook, rotating every 20 to 30 minutes, until an instant-read thermometer inserted into the centers read 130 to 135 degrees F (54 to 57 degrees C), 35 to 40 minutes.
  • Paint loins with vegetable oil and move over the direct heat side of the grill. Sear until golden brown all over and internal temperature just reaches 145 degrees F (63 degrees C), about 2 minutes per side.
  • Remove loins from heat, place on a serving dish, and tent with foil. Let rest for about 5 minutes. Slice into 1/2- to 1-inch-thick medallions.

Tender and juicy pork tenderloin, with a decadent and well-balanced mustard sauce. I often serve this at a holiday buffet dinner with small rolls - double the sauce and serve it as a condiment for sandwiches.

½ cup finely chopped yellow onion
⅓ cup dry white wine
¼ cup unsalted butter
¼ cup Dijon mustard
3 tablespoons white balsamic vinegar
2 tablespoons lemon juice
1 tablespoon whole grain mustard
1 tablespoon turbinado sugar
1 teaspoon lemon zest
1 teaspoon kosher salt
1 teaspoon dried tarragon, divided
2 (1 pound) pork tenderloins
2 tablespoons olive oil
1 teaspoon ground black pepper
1 cup heavy cream

Steps:

  • Prepare a thermocirculator and water bath according to manufacturer's directions. Set thermocirculator to 135 degrees F (58 degrees C); if you want pork cooked medium instead of medium-rare, set to 145 degrees F (63 degrees C), and allow water bath to come up to temperature.
  • Combine onion, wine, butter, Dijon mustard, vinegar, lemon juice, whole grain mustard, turbinado sugar, lemon zest, salt, and 1/2 teaspoon tarragon in a medium microwave-safe bowl. Place in microwave and cook on high power until butter melts and sugar dissolves, stirring halfway through, about 1 minute. (This yields 1 1/2 cups sauce).
  • Place tenderloins in a vacuum-sealable bag with 3/4 cup of the mustard mixture and massage contents of bag to ensure meat is coated evenly in sauce, spacing tenderloins in a single layer in the bag. Seal bag with a vacuum sealer according to manufacturer's directions.
  • Transfer vacuum-sealed tenderloins to warm water bath with thermocirculator; cover vessel with aluminum foil to reduce evaporation. Cook to desired doneness, 45 to 50 minutes; meat will be 135 or 145 degrees F (58 to 63 degrees C) when done depending on desired doneness.
  • Remove bag from water bath, transfer meat to a plate and pat dry with a paper towel. Rub with olive oil and sprinkle with pepper.
  • Heat a large nonstick skillet over medium-high heat. Sear tenderloins in skillet until deeply browned on all sides, 3 to 4 minutes on each side. Transfer to a cutting board to rest for 5 minutes. Wipe skillet clean with a paper towel if any drippings are too dark.
  • Reduce heat to medium. Add remaining 3/4 cup mustard sauce to skillet and allow to come to a simmer, reducing until slightly thickened, 1 to 2 minutes. Add cream and remaining 1/2 teaspoon tarragon to skillet, and cook, stirring occasionally, until sauce has thickened enough to coat the back of a spatula, about 1 minute. Slice tenderloins and serve with sauce.
