MAPLE AND GARLIC MARINATED PORK TENDERLOIN

Maple and Garlic Marinated Pork Tenderloin image

Grilled pork tenderloin marinated in a deliciously sweet blend of real maple syrup, Dijon mustard, and a hint of sesame oil. Because I have one step-daughter that only eats chicken or fish, I separated some of the sauce into two bags; one for pork and one for 2 chicken breasts. She gave me one of the best compliments she ever has in the last year for my cooking: 'It is fine-dining quality.'

Pork Tenderloin with Maple Glaze image

Maple syrup brings sweetness and warm color to the pork. Wild rice pilaf, brussels sprouts and a Gewürztraminer would be nice accompaniments.

2 teaspoons crumbled dried sage leaves
1 tablespoon butter
6 tablespoons pure maple syrup
6 tablespoons apple cider vinegar
2 teaspoons Dijon mustard

EASY PORK MEDALLIONS WITH MAPLE-BALSAMIC SAUCE RECIPE

Easy Pork Medallions with Maple-Balsamic Sauce Recipe image

Thirty minutes is all you need to make this delicious and easy pork medallions recipe. Try serving with crusty bread - you'll want to mop up every last drop of this maple-balsamic sauce!

Provided by The Wanderlust Kitchen

Categories     Main Dish

Time 30m

Number Of Ingredients 10

1/4 cup maple syrup (the real stuff!)
3 tablespoons balsamic vinegar
1/8 teaspoon red pepper flakes
2 teaspoons dijon mustard
1 pound pork tenderloin (one piece)
2 teaspoons vegetable oil (divided)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
Scallion chunks for garnish

Steps:

  • Combine the maple syrup, vinegar, and red pepper flakes in a small saucepan. Turn the heat to high and boil for about 3 minutes, until the mixture has reduced to 1/3 of a cup. Turn off the heat and whisk in the dijon mustard.
  • Meanwhile, slice the pork tenderloin into 8 equal pieces. Place four of the pieces between two pieces of plastic wrap and pound until they are about 1/2" to 1/4" thick.
  • Heat one teaspoon of the vegetable oil in a nonstick skillet over medium-high heat. Season the pounded-out pork pieces with salt, pepper, and garlic powder. Once the oil is hot (3 minutes or so), add the pork pieces and cook for about 90 seconds per side. Test with a meat thermometer to ensure the internal temperature is at least 145° Fahrenheit. Set aside on a plate.
  • Pound out and season the remaining four pork pieces. Add another teaspoon of oil to the pan and cook the pork for 90 seconds per side. Again, test with a meat thermometer to ensure the internal temperature is at least 145° Fahrenheit.
  • Return the rest of the cooked pork to the pan.
  • Pour in the maple-balsamic sauce and cook for 1 minute.
  • Garnish with scallions.

Time P1DT20m

Yield 6 serving(s)

Number Of Ingredients 12

2 1/2 lbs pork tenderloin (a package of two tenderloins)
1 large onion, chopped
1 -2 tablespoon minced fresh garlic (optional but good to add)
3 -4 tablespoons olive oil
3/4 cup maple syrup
1/2 cup honey
1 1/4 cups chopped pecans
1 tablespoon Dijon mustard

2 teaspoons dried thyme (or to taste)
1 teaspoon salt (or to taste, I use about 1 tsp.)
1/2 teaspoon dried red pepper flakes (or to taste)

Steps:

  • Cut slits in the pork tenderloins to absorb more marinade, and place in a shallow glass pan.
  • Top with onions and garlic (if using) with hands, distribute the onions and garlic over the pork.
  • In a separate bowl combine olive oil, maple syrup, honey, pecans, mustard, chili powder, thyme, salt and red pepper flakes; mix to combine.
  • Pour over pork and refrigerate for a minimum of 8 hours or overnight.
  • When ready to cook, place the pork on the grill or broil in the oven (reserve the marinade).
  • If grilling, cook the tenderloins on a medium-low heat (covered grill) for about 10 minutes on each side, or until done.
  • Let the tenderloin rest for 15 minutes before slicing.
  • *NOTE* When the pork is on the grill heat the marinade, and simmer for about 10-15 minutes, and serve over the tenderloins.
