Grilled pork tenderloin served with a sauce made with shallots, garlic, honey, grapes, and ginger. Simple preparation with an exotic taste.

salt and freshly ground black pepper to taste
2 pounds pork tenderloin
2 teaspoons olive oil
¼ cup minced shallots
1 tablespoon minced garlic
2 cups seedless red grapes, halved
2 tablespoons soy sauce
2 tablespoons honey
1 teaspoon grated fresh ginger root
½ teaspoon Asian five-spice powder

Steps:

  • Preheat grill for medium heat.
  • Lightly oil grate. Season meat with salt and pepper, and place on grill. Cook for 15 to 25 minutes, or to desired doneness, turning meat as necessary to cook evenly. Remove from grill, and let stand 10 minutes before slicing.
  • Meanwhile, heat olive oil in a saucepan over medium heat. Cook shallots and garlic in oil until tender. Stir in grapes, soy sauce, honey, ginger, and five-spice powder. Bring to a boil. Reduce heat, and simmer for 15 minutes. Set aside to cool for 10 minutes.
  • Process cooled sauce until smooth in a blender or food processor. Serve over sliced tenderloin.

One 1 1/4-pound pork tenderloin, tied with kitchen twine
8 leaves fresh sage
Coarse salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon vegetable oil
1 pound seedless grapes, separated into small clusters
1 shallot, sliced
1 teaspoon red wine vinegar
2 cups cooked whole-grain couscous

Steps:

  • Heat oven to 425 degrees. Tuck 6 sage leaves under kitchen twine and season pork with salt and pepper.
  • Heat 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Sear pork on all sides until golden, about 8 minutes, then remove from heat and set aside. Add remaining oil to pan with grapes, shallot, and remaining sage. Season with salt and pepper. Nest pork in center of pan.
  • Transfer pan to oven and roast until pork reaches 145 degrees on an instant-read thermometer, about 15 minutes. Remove pork and let stand 10 minutes before slicing.
  • Stir vinegar into grape mixture. Spoon grape mixture over pork and serve with couscous.

1 (1 pound) pork tenderloin cut on the bias into 1/2 inch thick medallions (about 12)
salt, pepper
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons minced shallots
1 clove garlic, minced
1 cup halved and seeded Concord grapes
1 cup red wine
1 tablespoon cold butter (cut into 1/4 inch pieces

Steps:

  • 1. Using paper towels, pat any moisture from the surface of the medallions. Season the pork with salt and pepper 2. In a heavy 10 inch skillet, heat the butter and oil over high heat. Add the medallions to the skillet and sear until nicely browned. About 2 minutes. Brown other side for 1 minute. Remove and keep warm 3. Reduce the heat to low. Add the shallots to the skillet and saute for 1 mintue. Add garlic and saute 30 seconds. Add the grapes and saute for 2 minutes. Add the red wine and bring to a simmer over medium heat. When mixture is reduced by half, ad 1/4 tsp salt and pinch of pepper. 4. Place medallions back in skillet for 2 minutes. 5. Add butter to the pan and mix with grape sauce.

The meat should release easily from the pan when turning. Brown the other side for 30 seconds to 1 minute so the meat is still slightly underdone. Remove the pork medallions from the skillet to a plate, cover and keep warm.
  • Reduce the heat to low. Add the shallots to the skillet and quickly saut? for 1 minute, then add the garlic and saut? 30 seconds. Add the grapes and saut?, stirring up any browned bits from the bottom of the pan. Saut? the grapes for 2 minutes until they begin to collapse. Add the red wine. Bring to a simmer over medium heat and cook until the wine is reduced by half. Season with one-fourth teaspoon salt and a pinch of pepper, or to taste.
  • Place the medallions back into the skillet along with any drippings and simmer, spooning the sauce over the pork medallions as they warm, 1 to 2 minutes or until just pink in the center. Remove the meat from the skillet (leave the sauce in the pan) and arrange on a platter or on serving plates.
