This stuffed pork tenderloin is filled with spinach, cheese and sun dried tomatoes, then rolled up and roasted to perfection. An elegant meal that's actually quite simple to make!

1 1/4 pound pork tenderloin
1 teaspoon Italian seasoning
1/3 cup sun dried tomatoes (sliced)
1/2 box frozen spinach (thawed and excess water squeezed out)
3/4 cup shredded mozzarella cheese
1 1/2 tablespoona olive oil
1 pound small potatoes (, sliced or cut into 1 inch pieces)
Salt and pepper to taste
Cooking spray
1 tablespoon chopped parsley

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with foil and coat it with cooking spray.
  • Cut a deep slit all the way down the length of the pork - do not cut all the way through. Lay the pork open like a book and pound to approximately 3/4 inch thick with a meat mallet.
  • Sprinkle the Italian seasoning, salt and pepper over the pork. Layer the spinach, cheese and sun dried tomatoes over one side of the pork.
  • Roll the pork up tightly and secure with lengths of kitchen twine - tie each string about 2-3 inches apart.
  • Season the outside of the pork generously with salt and pepper. Place the pork on the lined sheet pan.
  • Place the potatoes in a bowl. Add the olive oil to the bowl; toss the vegetables to coat and season to taste with salt and pepper.
  • Place the potatoes on the sheet pan around the pork.
  • Place the pan in the oven and cook for 30 minutes or until potatoes are browned and tender and the internal temperature of the pork reaches between 145 degrees F. (medium rare) and 160 degrees F. (medium), on a meat thermometer.
  • Remove pork from heat and let rest for 5 minutes. Remove the string and slice the pork. Sprinkle with parsley and serve immediately with the potatoes.

I came up with this spinach and mushroom stuffed pork tenderloin one day when looking for something new to do with pork tenderloin. This dish is very easy to make and assemble and is so pretty to serve to family and guests. I like to serve this with a nice salad and roasted potatoes.

1 tablespoon extra-virgin olive oil, or as needed
10 white mushrooms, minced
1 shallot, minced
½ teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoon dried sage
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup chopped fresh parsley
2 cups fresh spinach
1 teaspoon Dijon mustard
1 (2 pound) pork tenderloin, butterflied and pounded flat
4 slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 teaspoon olive oil in a skillet over medium heat; cook and stir mushrooms, shallot, thyme, garlic powder, sage, black pepper, and salt in the hot oil until liquid has evaporated and mushrooms and shallots are softened, 5 to 10 minutes. Add parsley; cook and stir for 1 minute. Mix in spinach; cook and stir until spinach is wilted, about 5 minutes. Stir in mustard. Remove from heat.
  • Place pork tenderloin on a work surface; lay prosciutto atop tenderloin. Spread mushroom-spinach mixture over prosciutto, leaving 1/2-inch border on all sides. Tightly roll tenderloin around the filling and tie together with kitchen string to keep closed.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat; place rolled tenderloin in the hot oil. Sear until all sides are golden brown, about 10 minutes. Transfer seared tenderloin to a 9x13-inch casserole dish.
  • Bake in the preheated oven until pork is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

Juicy, baked pork tenderloin topped with a blueberry balsamic glaze that is sure to please! It's a quick and healthy weeknight meal. Can be paired with any side, best with asparagus and brown rice.

1 1/2 pounds pork tenderloin
1 teaspoon black pepper
1 teaspoon salt
2 teaspoons garlic powder
1/2 cup frozen or fresh blueberries
2 teaspoons minced garlic
1 tablespoon honey
1/2 cup balsamic vinegar

Steps:

  • Pre-heat oven to 375° F. Line baking sheet with aluminum foil.
  • Mix together pepper, salt and garlic powder in a small bowl or ramekin. Rub mixture all over the pork tenderloin.
  • Place tenderloin on the baking sheet and onto the center rack of the oven. Be sure to have baking sheet in the center of the rack. Allow to bake for 20-30 minutes. Oven temperatures may vary, so use an internal thermometer to check for doneness. If it reads 140° F-150° F it is done. If you do not have an internal thermometer, the center of the tenderloin when cooked will be slightly pink, but will not look raw!
  • Place blueberries in a medium sauce pan on med-high heat. Using a wooden spoon or potato masher, begin breaking the blueberries while cooking. Add garlic and honey. Blueberries will begin to boil and sauce will begin to form. Stir in balsamic vinegar. Bring sauce to a boil and allow to reduce. Reduction time is about 12-15 minutes.
  • Once tenderloin is done baking, remove from oven and allow to sit for 10 minutes before slicing. Remove sauce from stove heat once it has reduced and become slightly thick, it should flow almost like the consistency of honey off of a spoon.
  • Slice tenderloin into medallions, about 3/4 to 1 inch thick. Place 4 medallions (1 serving) onto dish and spoon sauce over medallions. Serve with any veggie or starch and enjoy! Also great with a white wine.

This holiday stuffed pork tenderloin is filled with caramelized onion, fresh cranberry sauce, goat cheese and fresh spinach. It's a show stopped and super delicious, along with being fairly simple to make!

1 boneless pork tenderloin (,about 1 to 2 pounds)
1 sweet onion (,thinly sliced)
2 tablespoons unsalted butter
3 tablespoons fresh sage, (chopped)
3 cups fresh spinach
3 cloves garlic (minced)
1/2 cup cranberry sauce
6 ounces goat cheese (crumbled)
salt and pepper

Steps:

  • Heat a large pot over medium-low heat and add 1 tablespoon of butter. Add the onions with a pinch of salt and stir. Cook, stirring often, until the onions begin to caramelize, about 30 to 40 minutes. Keep an eye on them so they don't burn! Stir in the sage.
  • Transfer the onions to a bowl. Add the remaining butter and heat over medium heat. Stir in the spinach and cook, stirring occasionally, until it wilts. Stir in the garlic and cook for 30 seconds.
  • Preheat the oven to 450 degrees F. Line a roasting pan or baking sheet with aluminum foil and spray it with nonstick spray.
  • Place the pork on a cutting board and get a sharp knife. This is a great tutorial. I like to slice it twice to open it up so I have a lot of space to work with. I start at the bottom of the pork (about 1/4 inch from the bottom) and slice it lengthwise, then continue to cut again and open up the pork. You want to have a flat surface to work on. Season the inside with salt and pepper.
  • Spread the cranberry sauce on top of the pork, leaving an inch or two around the edges so you can roll it up. Add the spinach, followed by the caramelized onions. Crumble the goat cheese on top.
  • Tightly roll up the tenderloin and tie it together with kitchen twine. Season the entire outside with the salt and pepper.
  • Place the pork on the roasting pan or baking sheet and roast for 30 to 35 minutes, or until the inside is cooked and reads about 140 to 145 degrees F. Let the pork rest for 20 minutes before slicing. Slice and serve with extra cranberry sauce, gravy or your choice of side!

1 pork tenderloin (medium-sized)
16 leaves Baby Spinach
2 ounces hazelnuts, chopped
2 ounces wild blueberries
2 ounces cream cheese
1 tablespoon Dijon mustard
coarse sea salt
ground pepper
olive oil

Steps:

  • Trim the tenderloin and remove a bit of the tail part where it is thinner. Cut the tenderloin in half. Butterfly each piece lengthwise about 1/2-inch, then do the same the opposite way. This will give you two flat pieces.
  • Lay half the spinach on each piece of meat. Add half the hazelnuts,then half the blueberries to each piece; then split the cream cheese in two and with your hand; make flat discs to place on top of the ingredients. Then roll tenderloin back up nice and tight without losing any of the stuffing.
  • Rub Dijon mustard on the outside; sprinkle with salt and pepper. In a frying pan, heat the olive oil and sear the tenderloins for two minutes on each side.
  • Place on a baking sheet lined with parchment paper and bake in a preheated 350F oven for 20 minutes. Remove from oven and let rest for 10 minutes, cut 4 times on the bias and serve.
  • This dish can be accompanied with a warmed blueberry jam.
