- Mix brown sugar, pepper, salt, garlic powder, mustard powder, ground ginger, onion powder, red pepper flakes, cayenne pepper, cumin, paprika, and thyme in a bowl. Rub spice mixture over pork loin and wrap tightly in plastic wrap. Place pork on a 9x13-inch baking dish and refrigerate for 4 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from pork and discard; return pork to baking dish.
- Bake in the preheated oven until pork is slightly pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Cover pork loosely with aluminum foil and let rest for 10 minutes before slicing.

- Mix all ingredients together in a medium sized bowl.
- Once mixed well, transfer to an airtight container.
- When ready to use, apply generously over your chosen cuts of meat. Rub in firmly and try to cover as much of the meat as possible.

- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. - Pat pork tenderloin dry with a paper towel.
- Mix dry rub ingredients together in a small bowl and then season both pork tenderloins on all sides. Use your hands to rub it in.
- Whisk together the marinade ingredients in a separate bowl. Then, pour the marinade into a large Stasher bag or Ziploc. Add dry-rubbed pork tenderloins to the bag and make sure they are completely submerged. Seal the bag and let the pork marinate in the fridge for at least 2 hours or overnight.
- When ready to cook, heat grill to 450°F - 500°F.
- When the grill is preheated, carefully spray grill grates with a little cooking spray (be careful this will ignite the flames) and sear pork tenderloins over direct heat for 2 minutes per side.
- Then, turn ½ the burners to low and move pork tenderloin to the low heat side, leaving the other side burners on high. Your grill should drop down to around 400ºF.
- Grill pork tenderloin for around 12 minutes*, flipping halfway through. Use a meat thermometer to check the internal temperature of the pork. It should reach an internal temperature of at least 145ºF.
- Remove from the grill and let rest for at least 5 minutes.
- Use a sharp knife to slice pork tenderloin and serve it with the grilled carrots.

- Preheat oven to 400 degrees. Use a sharp knife to carefully remove any silver skin or excess fat. Pierce tenderloin all over with a fork or sharp knife. Rub oil and lime juice onto all sides of the meat.
