PORK 'N' GREEN CHILI TORTILLAS
This tortilla recipe is a big hit with my family. I'm often asked to make it for special occasions.

- In a large resealable plastic bag, combine the flour, salt and pepper; add the pork. Seal bag and toss to coat. , In a large skillet, cook pork over medium heat in oil until no longer pink. Add chilies and salsa. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until meat is tender. , Spoon 1/2 cup pork mixture down the center of each tortilla. Sprinkle with cheese; roll up.

HOMEMADE FLOUR TORTILLAS
Traditional flour tortillas - homemade and much better than store bought. Do not substitute vegetable oil or shortening for the lard.

- Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
- Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.

Another recipe from Grandmother's test kitchen--the Grandson's are keeping me busy. They said they loved this with my salsa. We live in Taco-Land. Who would of thought they like this better!

Steps:
- Cut the 5 pound pork butt in 5-1 pound pieces.
- On each piece put 1 garlic clove, 2 tablespoons seasoned salt and 2 tablespoons butter.
- Wrap each pound piece of pork very tightly in the tin foil.
- Bake in a 250° oven for 3 hours, or until easy to shred.
- When cool, shred the pork-and add 1/2 the package of the taco seasoning and a little juice from the pork, as not to be dry.
- I fried the flour tortillas in a frying pan with a little oil.
- When you turn the tortilla over, put some cheese on to melt.

- salsa and roll up.

- In large bowl, mix vegetable oil, taco seasoning mix, cumin, coriander and salt. Add pork, and toss to coat; pour into 5-quart Dutch oven. Place onions and garlic on top of pork. Add water, orange juice and lime juice. Heat to boiling over high heat. Stir; reduce heat to medium-low, and simmer uncovered 2 to 3 hours, stirring occasionally, until pork is tender.
- Increase heat to medium; cook 3 to 7 minutes, stirring frequently and pressing on pork with spatula to shred meat, until sauce thickens and pork is coated in cooking liquid.
- Divide pork mixture among heated mini bowls; top with queso fresco, radishes and jalapeño chiles. Serve with lime wedges.

- All of the ingredients should be cooked as per their individual recipes. For the pickled red onion, bring a small pot of water to a boil. Blanch the onion slices in the hot water for 30 seconds. Remove the onion by pouring the pot of water over a colander. Set the colander of onions aside.

- Remove pork from the packaging and rinse with cool water. Pat dry with a paper towel. If the meat contains the fat cap (firm white fatty layer), see note below on removal.
- Combine paprika, cumin, salt, and pepper (to taste) in a small bowl and mix. Rub pork all over with dry rub. Place in a slow cooker and pour pineapple juice and optional beer over the pork. Add in chopped onion and garlic. Cover and cook on low heat setting for 7-8 hours, or high heat setting for 5-6 hours (until the meat easily pulls apart/shreds with two forks). Shoot for an internal temp of 200 °F.
- Shred the pork using two forks. You can remove the whole roast from the slow cooker and shred on a platter, or shred right in the slow cooker. Shredding in the slow cooker allows the meat to soak up some of the juices. Either way, do not discard the juices yet.
- Arguably the most important step. Use a slotted spoon to remove the pulled pork from the slow cooker. Place on a foil-lined 11X17 baking sheet or in a cast-iron skillet and drizzle with little extra juice from the slow cooker. Broil on high for 3-5 minutes until the meat starts to brown/crisp. This lends a little caramelization and crispy texture.

- Gather all of your cooking tools and then start the recipe. Read the entire recipe card. Wash and dry all produce. Cut poblano into 1/4-inch slices. Cut tomato into 1/4-inch pieces. Halve, pit and peel avocado. Juice lime.
