I don't eat pork chops to often, but when I do, I like to cook them in onion gravy because they taste so goood.

Steps:
- Sprinkle pork chops with salt and black pepper, coat evenly with flour, of course shaking off excess.
- Cook pork chops in hot oil over medium- high heat for 3 minutes on each side.
- Add sliced onions and cook for 5 minutes, turning pork chops over.
- Add beef broth, cover, reduce heat, and simmer for 15 minutes.
- Remove pork chops only leaving onions in skillet.
- Stir together cornstarch and 2 tablespoon water.
- When well mixed together, stir in onion mixture.
- Cook over medium-high heat, stirring rapidly until gravy is thickened Spoon over pork chops and serve.

- Season the pork chops on both sides with sea salt, garlic powder, onion powder, and pepper.
- Heat the olive oil in a dutch oven over medium-high heat. Add the pork chops and sear on both sides, about 3 minutes per side without moving, until browned. Transfer the pork chops to a plate and set aside.
- Reduce heat to medium-low or medium. Using the same dutch oven, saute the sliced onions for 15-20 minutes, until caramelized.
- Once the onions are caramelized, preheat the oven to 375 degrees F (190 degrees C).
- Add the minced garlic and thyme leaves to the dutch oven. Saute for about a minute, until fragrant.
- Add the chicken broth to the dutch oven. Scrape any browned bits from the bottom of the pan. Bring to a gentle boil, then simmer for about 2-3 minutes, until it gets thicker and the volume is reduced by at least 1/4.
- Remove from heat. Add the cream cheese. Stir in the cream cheese until it melts into the sauce.
- Return the pork chops to the dutch oven and spoon the sauce and onions over them. Cover with the lid and bake for 20-25 minutes, until cooked through. (Time will vary depending on the thickness of your pork chops - use a thermometer to check and cook to 145 degrees F (63 degrees C).)

- Turn your Instant Pot to the saute "more" setting. While the pot is heating up trim your pork steaks of excess fat. Generously salt and pepper your pork steaks. When the pot reaches HOT on the display add in the oil and let it heat for a minute. Then arrange each of the pork steaks on the bottom of the pot so they are all in contact with the bottom of the pot (you may need to work in batches). Let the steaks brown for 5 minutes. Do not move the steaks or turn them over for the full 5 minutes. You'll be tempted to move them or mess around with them, but don't.
- While the meat is browning prepare your vegetables. Dice the onion, mince the garlic and peel the potatoes. Slice the potatoes into quarter inch rounds. Slice the mushrooms.
- When the 5 minutes is up remove the pork steaks and place them on a plate. I only browned one side of the steaks for sake of time but if you want you can brown both sides. Add the onion into the hot pot and saute for 3 minutes. Add in the garlic and saute for 1 more minute. Pour the chicken broth in and deglaze the pot.
- Stir in the mushrooms, mustard, lemon juice and tarragon. Nestle the pork steaks into the pot.
- Place the potatoes in a oven safe dish that will fit inside your Instant Pot. You can use a pyrex,* corningware* or cake pan*. Salt and pepper the potatoes and toss. Cover the dish with foil. Gently lower the dish into the Instant Pot on top of the pork.
- Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button (high pressure) to 6 minutes. After the time is up allow the pressure to release naturally for 10 minute. Then release any remaining pressure by moving the valve to venting.
- Carefully remove the dish of potatoes and set aside. Pour the half and half into the sauce. Turn the Instant Pot to the "saute" more setting. Stir 2 Tbsp of cornstarch and 2 Tbsp of cold water together in a small bowl until smooth. Stir the cornstarch slurry into the pot and let the sauce thicken. You may need to make more slurry and add it in, depending on how thick you want your sauce.
- Once sauce is thickened salt and pepper to taste. Serve sauce, mushrooms and pork over the top of the potatoes.

- In a small bowl, combine salt, pepper, garlic powder, and onion powder. Pat the pork steaks dry with a paper towel and sprinkle both sides liberally with the seasoning. Set aside until ready to use.
- Add the oil to a large sauté pan over medium-high heat and allow to come to temperature. Add the pork steaks to pan, taking care not to overcrowd the pan and cooking in batches if needed. Cook for 3-4 minutes on the first side, then flip and cook 3-4 minutes more. Remove from the pan and repeat with the remaining pork steaks. Set aside on a plate and make the gravy.

PORK STEAK AND ONIONS
This recipe sounds like a lot of work, but it just the old fashion method of braising. The meat is so tender, and the onions, are sweet in taste. A really large electric fry pan, works the best. I sometimes add sour cream to the liquid, the last 10 minutes or so, for an even richer taste.

- Season both sides of pork steaks with salt, pepper and garlic powder to taste.
- Spray electric fry pan or very large skillet with cooking spray.
- Heat to 375 degrees.
- Brown both sides of steak.
- When meat has been browned and starts to stick a bit, add two cups water.
- Cover.
- Cook for 15 minutes.
- Turn.
- Add water as it slowly cooks down.
- Always scraping up browned bits.
- Cook another 15 minutes, turning if necessary.
- Cover all the meat with onions.
- Add water again to keep level at 1/2 inch or so.
- Cook 15 minutes, turn meat, poke onions into liquid.
- Add more water if necessary.
- Keep cooking until onions are cooked all the way down, almost carmelized.
- Let liquid cook almost all the way down, again.
- Add just a cup of water.
- Scrap all bits and remove from pan.
- Serve with onions and juice on top.
PORK STEAK WITH ONION GRAVY

- 1. Season the steaks with salt and pepper. Add oil to large skillet. Sear the steaks on both sides. Pour two cups of beef broth over the steaks. Let cook 15 minutes turning the steaks once. Pour another cup of beef broth over the steaks and add the onions and garlic. Let cook another 15 minutes turning steaks once.
- 2. Pour the remaining beef broth over the steaks. Cook until steaks are nice and tender and falling off the bone probably another 15 to 20 minutes. Watch the stock and make sure it doesn't dry up adding some water if needed. Mix the flour into the sour cream.

- Pat dry steaks with paper towels; season steaks with garlic salt and pepper.
- Heat vegetable oil and 1 tablespoon butter in a large cast iron skillet over medium-high heat.
- Add steaks to the hot skillet and cook until browned and cooked to desired doneness; about 3 to 4 minutes per side for medium-rare steak. DO NOT crowd the skillet; cook two steaks at a time if skillet isn't big enough.
- Remove cooked steaks from skillet; set aside and keep covered.
- Set skillet back over medium-heat and melt remaining butter.
- Add in sliced onions and season with a pinch of salt; continue to cook for 10 to 12 minutes, or until onions are soft and caramelized. Stir frequently.

- Reduce heat to medium-low; return steaks to the skillet and continue to cook for 2 more minutes, or until steaks are heated through, and sauce has thickened.
- Remove from heat.
- Garnish with parsley and serve.

- 1. Get a large package of pork steaks, sprinkle with Cavanders on both sides, roll in flour and put in a hot skillet of cooking oil, brown on both sides. I usually cook about 5 minutes on each side. After browning on both sides put them in a large Casserole baking dish.
- 2. Take 2 packages of brown gravy mix,add water as directed, you can also add a can of mushroom soup with 1/2 can of water, mix well and pour over the meat. Bake in oven at 350% for an hour and fifteen minutes. It is so tender and good.
- 3. I serve this with a baked potatoe, fried okra and a small dinner salad. Down home cooking. Enjoy
