HAWAIIAN PORK CHOPS
Quick and Easy Hawaiian Pork Chops. Pan fried pork chops simmered in a sweet and tangy Hawaiian sauce. Ready in under 25 minutes!

Steps:
- Heat 1 tablespoon of oil in a large skillet.
- Season pork chops on both sides with salt and pepper. Add pork to the hot skillet and cook for 2 minutes on each side or until each side is nice and browned. Remove from the pan and set aside.
- In a large measuring cup combine soy sauce, ketchup, brown sugar and only the pineapple juice (reserve the slices for later). Set aside.
- Add the remaining tablespoon of oil to the large skillet. Add garlic and ginger and sauté for 1 minute.
- Pour in the sauce ingredients and bring to a simmer and cook for 2-3 minutes. Add the pork back to the sauce.
- In a small bowl mix together cornstarch and water.
- Slowly add the cornstarch mixture to the skillet and stir.
- Add in the reserved pineapple slices and simmer for 10 minutes or until sauce is thickened and pork reaches 145 degrees. The thin pork do not take very long.
- Serve immediately with chopped parsley for garnish, if desired.

SPICED PINEAPPLE PORK

- Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
- Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Tip in the soy mix and let it bubble around the pork and pineapple for a few mins until slightly reduced and sticky. Sprinkle with coriander, and serve with rice and Chinese greens.

MARINATED PORK STEAKS
My local grocery store seems to put pork steaks on sale quite often, so I needed to find some other ways to make them. This makes them a little bit tropical, plus I just love grilled pineapple!!

Steps:
- Trim the excess fat from the pork steaks, and place them in a large shallow container.
- Drain the pineapple (if using fresh, just sub a can of pineapple juice in the marinade), reserving juice or syrup. Set pineapple slices aside.
- Combine pineapple juice/syrup, onion, soy sauce, oil, corn syrup, and ginger in a small saucepan, stirring well. Cook, uncovered, over medium heat for 10 minutes, stirring frequently. Pour over the pork steaks. Cover and refrigerate for at least 8 hours, turning steaks occasionally if possible.
- Remove the steaks from the marinade, reserving marinade. Grill steaks over low to medium coals for 35 minutes or until the desired degree of doneness. Turn and baste occasionally with the marinade.
- Grill the pineapple slices over medium coals for 1 minute on each side. Garnish the pork steaks with the pineapple slices.

- Whisk all the ingredients. Add the beef or pork, toss to combine. Cover and marinate in the refrigerator for a minimum of 6 hours, preferably overnight, tossing occasionally to ensure even flavoring.

SWEET AND SOUR PINEAPPLE PORK

- Cut pork into bite-size pieces and marinate for 30 minutes in mixture of soy, vermouth, garlic, ginger, and 2 tablespoons oil. Set aside.
- Meanwhile, make the sweet and sour sauce:
- In a medium saucepan, combine all ingredients except the cornstarch mixture, blend well and bring to a boil. Add cornstarch mixture. Reduce heat and simmer, stirring frequently until thickened. Be sure and bring your sauce to a boil before adding the cornstarch, otherwise the sauce may retain an unpleasant starchy taste.
- Heat oil in a Dutch oven to 350 degrees F.
- Remove pork pieces from marinade and roll in cornstarch to coat well. Deep fry in hot oil until golden brown and crispy.
- In a large saute pan, heat 2 tablespoons oil on medium-high heat. Stir-fry red and yellow pepper and diced onion for 2 minutes, then add sweet and sour sauce and fold in fried pork. Let simmer for 2 minutes, arrange on serving platter and garnish with long strips of green onion and toasted sesame seeds.

To my surprise, my 5-year-old, who is very picky, loved it and kept asking for more. I guess I should try to experiment more often.

- Place pork loin in a 9x13-inch baking pan.
- Combine pineapple juice, Worcestershire, mustard, and garlic-pepper seasoning in a small bowl. Pour mixture over the pork loin and allow to marinate in a refrigerator for 20 minutes, or up to 24 hours.
- Preheat the oven to 350 degrees F (175 degrees C). Remove pork from the refrigerator.
- Bake in the preheated oven for 1 hour and 45 minutes. Remove from the oven and pour crushed pineapple on top. Continue to bake until pork is slightly pink in the center, 10 to 15 minutes. - In a bowl, combine pork, calamansi or lemon juice, soy sauce, onions, garlic, and pepper. Massage the marinade into the meat and marinate for about 30 minutes.
- Drain meat, onions, and garlic from marinade, squeezing and reserving excess liquid. Set aside.
- In a pan over medium-high heat, heat 2 tablespoons of the oil. Add pork chops and cook for about 2 to 4 minutes per side or until lightly browned. Spoon out and reserve released meat juices during frying. Remove meat from pan and keep warm.
- In the pan, add the remaining 1 tablespoon oil. Add the reserved onions and garlic, and cook, stirring regularly, until softened.
- Return meat to pan.
- Add reserved marinade and meat juices.
- Add water and bring to a boil, skimming scum that floats on top. Cover, lower heat and simmer for about 40 to 50 minutes or until meat is fork-tender and liquid is reduced.
- Season with salt to taste.
- Add the onion rings. Turn off heat, cover and allow onion slices to cook slightly in the steam. Serve hot.
