GORTON (FRENCH-CANADIAN PORK SPREAD)



Gorton (French-Canadian Pork Spread) image

French-Canadian pork spread for toast and crackers....This was my memere's recipe and so far I have never had any better. Very simple to make :) I guess from what I read, Croton and Gorton are almost the same, Gorton being the New Englander translation :) Enjoy

Number Of Ingredients 7

2 pounds finely ground pork fat
2 pounds finely ground pork
2 onions, finely chopped
4 cups water
1 teaspoon ground cloves
¾ teaspoon ground nutmeg
salt and black pepper to taste

Steps:

  • Stir the pork fat, ground pork, onions, water, cloves, and nutmeg together in a large pot. Season to taste with salt and pepper. Bring to a boil over medium-high heat, then reduce heat to medium-low, and simmer until the pork is tender, at least 1 1/2 hours. Use a potato masher to mash the pork mixture every 15 minutes as it cooks.
  • The longer you simmer the gorton, the better the flavor will be. Add water as needed to keep the mixture from boiling dry. When you're ready to stop cooking, let the liquid reduce as much as possible without letting it burn. Refrigerate the gorton overnight. Remove and discard the fat layer, or stir it into the meat for a creamier spread.

Delicious pork that can be served on sandwiches, crackers, or just on the side with another salad. Best if left in fridge at least 4 hours before serving. Great next day, too.

3 green onions, sliced
4 teaspoons Dijon mustard
4 teaspoons fat-free creamy salad dressing (such as Miracle Whip Free®)
4 teaspoons prepared horseradish
2 drops hot pepper sauce (such as Tabasco®), or to taste
¼ teaspoon salt
2 cups cubed cooked pork roast

Steps:

  • Mix the pork, celery, and green onions in a large bowl.
  • Combine the mustard, creamy salad dressing, horseradish, hot pepper sauce, and salt in blender. Blend to make a saucy dressing, about 1 minute. Lightly toss the dressing with the pork mixture. Cover and refrigerate until serving.

1 cup milk
1 onion, chopped
chopped garlic
salt and pepper, to taste
1 pinch ground cloves
1 pinch ground allspice
¼ cup dry bread crumbs

Steps:

  • Place the ground pork, milk, onion and garlic into a large saucepan. Season with salt, pepper, cloves and allspice. Cook over medium heat for about 1 hour, then stir in the bread crumbs. Cook for 10 more minutes. Adjust seasonings to taste. Transfer to a small container and keep refrigerated.

Always served it with crackers for an appetizer. My father enjoyed it in a sandwich, with mustard and always had to have bread and butter pickles on the side.

1 lb ground pork
1 clove garlic, crushed
1/8 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon clove
1 large onion, diced
1 teaspoon pepper

Steps:

  • Combine all ingredients in a saucepan with enough water to make mushy.
  • Simmer on low heat, stirring occasionally for 2 hours until water is evaporated.

1 pound lean pork butt, cut into pieces
1 onion, chopped
½ teaspoon ground cinnamon
