- 1. Mix the vinegar and soy sauce together in a flat dish. Add the ribs, toss until well coated then cover and refrigerate for at least 30 minutes. Drain the ribs and pat dry with paper towels. Combine the flours on a flat plate and lightly coat the ribs. 2. Fill a large wok one third full of oil and heat to 180°C (350°F), or until a cube of bread dropped in the oil browns in 15 seconds. Deep-Fry the ribs a few at a time until well cooked and golden brown. Drain on crumpled paper towels. 3. To make the chilli plum sauce, clean the wok and heat the oil. Add the garlic, ginger and spring onion and stir-fry for 1 minute. Add the plum sauce, sweet chilli sauce and soy sauce and stir to combine. 4. Add the ribs to the sauce and cook for 2-3 minutes, stirring until the ribs are well coated, heated through and a little sticky. Garnish with the shredded spring onion and chilli. Serve with steamed rice and vegetables.

- Preheat oven to 350 degrees F (175 degrees C).
- Prepare a shallow roasting pan with foil and spray the foil with non stick cooking spray. Place ribs on foil and bake uncovered 45 minutes.
- While ribs are baking, heat chili sauce, plum sauce and soy sauce in a 1 quart saucepan to boiling; stirring constantly. Set aside.
- After ribs have cooked for 45 minutes brush them with 1/2 cup of the sauce and place back in oven and bake until tender; 45 to 60 minutes. While ribs are baking, brush them 2 or 3 times with the remaining sauce.

BRAISED PORK WITH PLUMS

- Cut the pork into big pieces about the length of your thumb and twice as wide. Put into a bowl or food bag, and add the wine, soy sauces, half the ginger, half the garlic and half the chilli. Marinate for at least 1 hr or up to 24 hrs.
- Heat oven to 160C/140C fan/gas 3, then heat the oil in a large casserole. Tip in half the spring onions, remaining ginger and garlic, the star anise, five-spice powder and cinnamon. Fry gently until fragrant and soft. Stir in the sugar, turn up the heat, then lift the pork from the marinade and turn in the oniony mix for about 3 mins until the meat is just sealed but not browned. Tip in the marinade, tomato purée and stock, give it a stir, cover, then braise in the oven for 2 hrs.
- After the first hr is up, add the plums to the pan. Take the lid off and carry on the cooking, uncovered. The meat should be completely tender, turning golden brown where it breaks the surface of the sauce. Spoon off any excess fat from the surface, then scoop the meat and plums carefully from the pan with a slotted spoon. Turn up the heat and boil the sauce for 5-10 mins until reduced and slightly syrupy. Return everything to the pan, gently warm through, then scatter the rest of the spring onions over the top to serve.

OVEN PORK RIBS WITH BARBECUE SAUCE

It's easy, the ribs are meltingly tender and it's packed full of flavour from the rub, braising the ribs in cider (see Note 1 for subs!) and the homemade barbecue sauce glaze! - Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
- Preheat oven to 160°C/320°F (all oven types).
- Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
- Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
- Line a new tray with foil then baking / parchment paper (you'll thank me later).
- Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
- Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
- Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
- Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

- Prepare the marinade: in a large bowl, combine the minced garlic, plum jam, soy sauce, rice vinegar, and hoisin sauce. Whisky until smooth. Place the ribs in a gallon-size freezer bag and pour the marinade over the ribs. Close the bag and shake so that all the ribs get covered with marinade. Place the freezer bag in the fridge for at least 2 hours, or ideally overnight. Preheat the oven to 350 degrees F. Line baking sheets with tin foil or parchment paper. Place the ribs on the lined baking sheets bone-side-down. Reserve the remaining marinade and brush some of it on top with a pastry brush. Roast for 45 to 50 minutes, brushing more marinade over the top of the ribs about halfway through. The ribs are done when they are golden brown on top and cooked through. Transfer the ribs to a large platter and serve. Enjoy!

- Place spareribs in a pot large enough to cover all of them.
- Cover with water.
- Stick onion with cloves, add to pot along with garlic cloves and salt.
- Bring to a boil over high heat, reduce heat and simmer for 45-60 minutes (or until meat will no longer be pink).
- Meanwhile, prepare plum marinade.
- Open can of plums and or fresh, discard pits.
- Place plums and syrup in food processor or blender.
- Add brown sugar, soy sauce and garlic powder.
- Process mixture until completely smooth.
- Drain spareribs.
- Place in a large, flat glass or plastic container.
- Marinate in refrigerator overnight for best flavor.
- If you are in a hurry, marinate at room temperature for 2 hours.
