JAGERSCHNITZEL
This is a delicious dish I ordered again and again when I was stationed in Germany with the Army. It is best served with French fries to clean up the remaining gravy and a nice garden salad.

- In a shallow dish, mix together the bread crumbs and flour. Season with salt and pepper. Place the egg in a separate dish. Heat oil in a large skillet over medium-high heat. Dip pork steaks in egg, then coat with the bread crumb mixture. Fry in the hot oil until browned on both sides and cooked through, about 5 minutes per side.
- Remove the pork to a platter and keep warm. Add onion and mushrooms to the skillet and cook until lightly browned. Pour in water and dissolve the bouillon cube. Simmer for about 20 minutes. Stir together the cornstarch and sour cream; stir into the skillet. Cook over low heat until thickened but do not boil. Spoon over the pork cutlets and serve immediately.

- Place the pork chops between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/8-inch. Trim any fat from the edges, and make a few small slits along the edge to prevent the pork from curling during cooking.
- Combine the flour, 1 teaspoon salt, and pepper in a bowl. Whisk the egg and milk together in another bowl until well blended, then mix the panko bread crumbs and paprika together in a third bowl. Dredge the pork chops in the flour mixture one at a time, then dip them into the egg mixture followed by the panko mixture.
- Heat the vegetable oil in a large skillet over medium-high heat. Arrange no more than two pork chops in the skillet at a time, cooking until the meat is golden brown no longer pink in the center, 3 to 4 minutes on each side. Place the pork chops in a warm oven to keep warm.
- Pour the chicken stock into the skillet used to cook the pork. Reduce the heat to low, and scrape up any brown bits in the bottom of the pan. As the stock simmers, mix the dill, 1/2 teaspoon salt, and sour cream together in a bowl. Whisk about 1/4 cup of the hot stock into the sour cream mixture, then pour it back into the skillet. Heat until warm and thick, about 5 minutes. Serve with the pork chops.

- Flatten meat to 1/2-in. thickness. In a shallow dish, combine the flour, seasoned salt and pepper. In another shallow bowl, combine egg and milk. BREADED PORK CHOPS WITH SOUR CREAM DILL GRAVY
I've been making these for years. They are so good, and the dill and sour cream in the gravy makes it different from others! YUM!

- If pork chops are thick, pound thin.
- Prepare three shallow dishes. One with flour mixed with seasoned salt and pepper, one with beaten egg and milk, and one with breadcrumbs and paprika.
- Dip chops first in flour, then in egg mixture, then in breadcrumbs.
- In a large skillet heat shortening (or oil) to hot.
- Brown pork chops for 3 minutes on each side, or until done.
- Remove and keep warm.
- Pour broth into skillet, scraping to loosen crusty bits.
- Blend the 2 tablespoons flour and dill weed into the sour cream.
- Stir into broth.
- Cook and stir over low heat until thick and bubbly.
- Cook and stir 1-2 minutes more.
- Serve chops with gravy.

HOMEMADE SCHNITZEL
Steps:
- Pound the pork tenderloin until it is flat. Dredge in flour and pan fry in corn oil, browning both sides. Remove the schnitzel from the pan. Add chopped onion and mushrooms to the pan, and then saute. To finish, add red wine, Worcestershire sauce, sour cream, and brown gravy. Place on serving dish and top with sauce from pan.
PORK SCHNITZEL WITH MUSHROOM GRAVY
Steps:
- In shallow dish, combine flour, salt and pepper; press pork into flour mixture and turn to coat. Reserve remaining flour mixture. In skillet, melt butter over meduim-high heat; fry pork, in batches and turning once, until just a hint of pink remains inside, about 6 minutes (or until no longer pink for chicken and turkey). Transfer to plate; keep warm. In the same skillet, fry mushrooms and garlic until no liquid remains, about 5 minutes. Add reserved flour mixture; cook, stirring, for 1 minute. Stir in stock and bring to boil; reduce heat and simmer, stirring, until thickened, about 3 minutes. Stir in sour cream and soy cause; pour over pork. Sprinkle with parsley.
PORK SCHNITZEL WITH SOUR CREAM GRAVY
Steps:
- Pound pork steaks to 1/4 inch thickness. Beat egg with a little milk in wide shallow bowel. Dredge cutlets in flour seasoned with salt, pepper and onion powder. Shake off excess flour, dip in egg then coat with coarse bread crumbs, pressing them into the meat. Set aside. Mix chicken bouillon with 1/3 C hot water. Preheat wide skillet to medium and add 2 TBS butter when hot. Clean & trim mushrooms and slice thin. Fry mushrooms until brown & set aside. Add most of remaining butter to skillet and fry steaks until golden on both sides, adding more butter if needed. Set aside and keep warm. Turn heat to low and scrape bread crumbs out of skillet. Mix 1 TBS remaining flour with chicken broth and add to skillet with mushrooms and sour cream. Bring to simmer and stir to loosen brown bits until thickened. Thin with water if needed. Serve cutlets with gravy and garnish with capers. Chicken or veal can be substituted for pork.
