1 (12 ounce) pork tenderloin, cut into 1/2 inch circles (boneless loin chops work well also)
1/2 lemon, juice of
1/3 cup all-purpose flour
1/4 teaspoon poultry seasoning
2 large eggs
1 tablespoon dijon-style mustard
1 cup Italian breadcrumbs
2 tablespoons canola oil or 2 tablespoons vegetable oil, for frying
2 tablespoons unsalted butter
2 tablespoons minced shallots
1/3 cup dry white wine
1/3 cup chicken broth
1/4 cup heavy cream
1/4 cup jarred lemon curd
1/4 cup small caper, drained, room temperature

Steps:

  • Pound pork circles between pieces of plastic wrap to flatten to 1/4 inch thickness.
  • Sprinkle both sides of medallions with lemon juice.
  • Combine flour and poultry seasoning in shallow dish. Coat medallions with flour mixture; shake off excess flour and set aside.
  • In a deep pie plate, beat the eggs and mix in the mustard.
  • Place bread crumbs in another pie plate. Dip the pork medallions into the egg mixture; coat well with bread crumbs.
  • Place in refrigerator for 15 minutes.
  • For the cream sauce, melt the butter in a small heavy saucepan.
  • Add shallots and sauté over medium heat until fragrant (approximately 2 minutes).
  • Remove saucepan from heat; add the wine, chicken broth and cream.
  • Return saucepan to heat and bring to a boil.
  • Reduce heat to medium-low and simmer, uncovered, for 12 to 15 minutes to reduce by half.
  • Meanwhile, heat 1 tablespoon of oil in a large heavy skillet.
  • Add half of the medallions; fry over medium-high heat on both sides for 1-2 minutes or until no longer pink.
  • Transfer to a plate and tent with foil. Repeat with remaining oil and medallions.
  • Remove sauce from heat and stir in lemon curd & capers.
  • Serve with buttered spaetzle and garnish with lemon wedges.

This is a great simple recipe. The applesauce and sage combine to add a subtle tasty coating for the pork. I have used dried sage with this also without a problem.

2 teaspoons fresh sage, finely chopped
pepper
8 pork schnitzels, uncrumbed
2 cups dry breadcrumbs
oil, to shallow fry

Steps:

  • Combine applesauce, sage and pepper.
  • Coat schnitzel with applesauce mixture.
  • Cover both sides with breadcrumbs. Regrigerate for 30 minutes (optional).
  • Shallow fry in hot oil for approximately 2 or 3 minutes each side until golden.

1 pork tenderloin (about 1 1/2 pounds), sliced into 20 pieces
2 teaspoons Dijon mustard
3/4 cup flour
1/2 teaspoon coarse salt
1/2 teaspoon black pepper
3 pieces white bread, processed into breadcrumbs
2 tablespoons unsalted butter
2 tablespoons vegetable oil
1 lemon, cut into wedges
3 eggs

Steps:

  • Lightly flatten each piece of pork. Beat the eggs with the mustard in a flat dish. Mix the flour with salt and pepper in another flat dish. Place the breadcrumbs in another dish. Place them all side by side.
  • Working in two batches, coat each piece of pork in flour, egg, and breadcrumbs.
  • For each batch add 1 tablespoon butter and 1 tablespoon oil to a hot saute pan. Cook the pork until golden and cooked through, about 2 to 3 minutes per side. Wipe out the pan and repeat the process with the second batch. Drain on a rack. Serve the medallions on a platter with wedges of lemon for garnish.

2 teaspoons cornstarch
2/3 cup reduced-sodium chicken broth
1/4 cup apple juice
1 tablespoon butter
2 medium apples, thinly sliced
2 green onions, sliced
1 garlic clove, minced
3/4 teaspoon dried thyme
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound pork tenderloin, cut into 1-inch slices

Steps:

  • Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, green onions and garlic; cook and stir 2-3 minutes or until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Keep warm., Mix thyme, paprika, salt and pepper. Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle both sides with seasonings., Place pork on a broiler pan. Broil 3 in. from heat 3-4 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with apples.

A honey-shellacked chop, a sharp salad to break through the porky richness, and-best news yet-just one pan and bowl to clean.

1 (1-lb.) bone-in pork loin chop (1"-1 1/2" thick)
Kosher salt
Freshly ground black pepper
3 tsp. honey, divided
5 Tbsp. extra-virgin olive oil, divided
3 Tbsp. skin-on hazelnuts, crushed
1 medium shallot, finely chopped
1 lemon, halved
1 small Pink Lady apple
1 large or 2 small endive, leaves separated
1 oz. Parmesan, shaved, broken into small pieces

Steps:

  • Pat pork chop dry with paper towels; season generously with salt and pepper. Let sit at room temperature 1 hour.
  • Heat a medium skillet, preferably cast iron, over medium. Drizzle 1/2 tsp. honey over 1 side of pork chop, then drizzle with 1 Tbsp. oil. Rub all over; repeat on the other side. Cook until deeply browned, about 3 minutes per side. Turn upright onto fat cap and hold with tongs; cook until browned, about 2 minutes. Reduce heat to low; cook 1 more minute on each side (an instant-read thermometer inserted about ½" from bone should register 130°F; cook another minute if needed). Transfer to a cutting board and let rest 10 minutes.
  • Add hazelnuts and 2 Tbsp. oil to same skillet; cook over medium-low heat, tossing, until nuts are golden, about 3 minutes. Add shallot; season with salt and pepper. Cook, stirring often, until shallot is softened and browned, about 2 minutes. Add remaining 2 tsp. honey and squeeze in juice from a lemon half; toss well. Remove from heat.
  • Cut around apple core to remove flesh in 3 lobes. Thinly slice 2 lobes (do as you will with remaining apple). Toss apple slices, endive, and Parmesan in a medium bowl; season with salt and pepper. Drizzle with remaining 1 Tbsp. oil, squeeze in juice from remaining lemon half, and toss again.
  • Cut bone away from pork chop and slice meat 1/2" thick. Arrange on a plate and drizzle juices over. Mound salad alongside and spoon hazelnut mixture over.

Can you hear the sizzle? I love any kind of schnitzel, and especially these thin pork medallions that are breaded and fried to a perfect crisp. The tart salad of apple and endive provides a nice fresh counterpoint to the pork, and it's a dinner you can get on the table in just about 30 minutes!

1 garlic clove, grated on a rasp grater
1 scallion, thinly sliced
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1/4 cup red wine vinegar
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil
3 heads of endive, halved lengthwise and thinly sliced on the bias
1 large tart apple, such as a Granny Smith, cored, halved, and thinly sliced
1/2 cup torn flat-leaf parsley leaves
1/2 cup toasted salted pecans, roughly chopped
One (1-pound) pork tenderloin, trimmed and cut crosswise into 12 medallions
1 garlic clove, minced, then mashed to a paste with flat side of a chef's knife
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper
2 large eggs
1 tablespoon Dijon mustard
2 cups whole wheat or regular panko
2 tablespoons unsalted butter
2 tablespoons vegetable oil
1/4 cup flat-leaf parsley, finely chopped
1 lemon, cut into wedges, for garnish

Steps:

  • For the apple endive salad: Make the vinaigrette: Whisk together the garlic, scallion, mustard, honey, red pepper flakes, cayenne pepper, vinegar, and 1/2 teaspoon salt in a large bowl. While whisking, add 1/2 cup oil in a slow, steady stream. Season to taste with salt and pepper. Cover and refrigerate until ready to serve (see Cook's Note).
  • When ready to serve, place the endive, apple, parsley, and pecans in a large bowl. Drizzle with the dressing and toss to coat completely. Serve immediately.
  • For the pork schnitzel medallions: Line a cutting board with plastic wrap. Working in batches, arrange half of the pork medallions in a single layer on top of the plastic wrap. Place another piece of plastic wrap on top of the pork medallions. Pound the pork medallions with a meat mallet until 1/4 inch to 1/8 inch thick. Repeat the process with the remaining pork medallions. Place the flattened pork medallions on a sheet pan. Rub the garlic all over the pork medallions, then sprinkle lightly on both sides with salt and pepper. Let sit for 15 minutes.
  • Set up three shallow dishes. Combine the flour, paprika, and cayenne pepper into one dish. Whisk together the eggs and mustard in the second dish, and place 1 cup of the panko into the third dish, reserving the remaining panko to replenish as needed.
  • Dredge one pork medallion in the flour mixture, shake off the excess, then coat evenly in the egg mixture, then press into the panko so that the breadcrumbs adhere evenly all over. Place on a sheet pan. Repeat with the remaining 11 pork medallions.
  • Melt 1 tablespoon of the butter in 1 tablespoon of the oil in a large 12-inch nonstick skillet over medium-high heat. Place some of the pork medallions into the pan in a single layer, being careful not to crowd them, and cook on each side until golden-brown, about 3 minutes per side. Remove to drain on a sheet pan or plate lined with paper towels and sprinkle lightly with salt. Repeat the process with the pork medallions, adding the remaining 1 tablespoon of butter and 1 tablespoon of oil as needed.
  • Sprinkle the schnitzel with the chopped parsley and serve immediately with the Apple Endive Salad, garnished with the lemon wedges.
