Pork Chops With Tamarind and Ginger image

Seasoning pork chops with a paste of fresh ginger, chile, cumin and tamarind gives the brawny meat a deeply spicy, sour flavor that gets more intense the longer it marinates. Then the excess marinade is mixed into the drippings to make a heady sauce. If you can't find tamarind concentrate (also sometimes called tamarind extract), lime juice will supply the sour notes, though without the same fruity complexity.

3 garlic cloves, finely grated or minced
1 tablespoon tamarind concentrate (or extract), or use lime juice
1 tablespoon sambal oelek or other chile paste
2 teaspoons grated fresh ginger
2 teaspoons kosher salt, more as needed
1 1/2 teaspoons ground cumin
1 teaspoon fish sauce
1 teaspoon ground turmeric
2 bone-in pork chops, 1 1/2 inches thick (2 pounds total)
2 tablespoons coconut oil, grapeseed oil or safflower oil
Scallions, thinly sliced
Lime wedges, for serving

Steps:

  • In a large bowl, combine garlic, tamarind, sambal oelek, ginger, salt, cumin, fish sauce and turmeric. Rub mixture evenly over pork, and let marinate for at least 1 hour and up to overnight.
  • Heat oven to 400 degrees. Heat oil in a cast-iron skillet over medium-high heat. Scrape the marinade off the pork, reserving it (there will be a tablespoon or two), then place chops in pan and sear on one side until well browned, 2 to 3 minutes. Use tongs to hold pork chops vertically to sear the fat on the edges, another 2 to 3 minutes.
  • Flip pork so browned side is on top and add reserved marinade to pan, stirring it into the drippings. Transfer pan to oven and cook to desired doneness, about 8 minutes for lightly pink on the inside (135 degrees). Transfer chops to a plate or cutting board and let rest for 5 minutes. Slice the meat off the bone and serve slices coated with pan drippings, scallions and lime wedges.

• 1.5kg boneless rolled pork loin
• 2L boiling water
• Sea-salt flakes, to season
• ¼ cup extra virgin olive oil
• Roast vegetables and apple sauce, to serve
Note: Allow 15 minutes resting time.

Steps:

  • Preheat oven to 230°C. Untie pork and use a small, sharp knife to cut fine parallel lines into skin (in the direction you want to carve it later). Take care not to cut into the meat.
  • Put pork, skin-side up, on a wire rack set over the sink. Pour boiling water over skin and pat dry with paper towel. This will cause the skin to shrink, exposing the score lines.
  • Roll up and secure with 3 lengths of butcher's twine. Rub a generous amount of salt into skin, rubbing into scores. Drizzle with ½ the oil, then massage it into skin using your hands.
  • Put pork on a wire rack in a shallow oven tray. Bake for 20 minutes. Remove from oven and drizzle with remaining oil. Reduce temperature to 150°C and bake for a further 1 hour.
  • Remove pork from oven and baste with a little of the pan juices. Set aside, uncovered, to rest for 15 minutes. Increase oven to 220°C. Bake for a further 10 minutes.
  • Carve pork and serve with roast vegetables and apple sauce.

1 tablespoon coriander seeds
1 red Fresno chile
3 garlic cloves
2 tablespoons soy sauce
1 tablespoon fish sauce (such as nam pla or nuoc nam)
1 teaspoon hot smoked Spanish paprika
1 (7-8-pound) skin-on, bone-in pork picnic shoulder:
Kosher salt, freshly ground pepper
Special equipment:
A spice mill or a mortar and pestle

Steps:

  • Grind star anise and coriander seeds in spice mill or with mortar and pestle. Slice chile and garlic, then mash to a paste using the side of a chef's knife. Transfer to a small bowl and stir in ground spices, soy sauce, fish sauce, and paprika.
  • Lightly score pork skin crosswise in a tight pattern with a very sharp knife, cutting through the skin and some fat, but taking care not to slash the meat itself. Transfer pork to a large Dutch oven with a tight-fitting lid or a roasting pan. Season liberally with salt and pepper and rub with marinade. Cover (use foil with roasting pan) and chill overnight.
  • Preheat oven to 425°F. Place pork, covered, in oven; reduce oven temp to 300°F. Roast pork, basting with juices every hour, until meat is fork-tender and bones are very loose, 5-5 1/2 hours.
  • Uncover pork and increase temperature to 450°F. Roast, basting every 5 minutes and adding water by 1/4-cupfuls if juices become syrupy, until pork is dark brown and skin is crisp, 15-20 minutes.
  • Carefully transfer pork to a platter. Skim fat from pan juices and pour remaining juices over.

  • Pork can be marinated 2 days ahead. Keep chilled.

2 pounds boneless pork roast

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix orange marmalade, lemon juice, ginger, and mustard. Place pork in a medium baking dish.
  • Bake 20 to 25 minutes in the preheated oven, then baste with the orange glaze. Continue baking to an internal temperature of 145 degrees F (63 degrees C), about 40 minutes more. Baste with the glaze every 10 minutes while baking. Let stand 10 minutes before carving.

  • Season the pork with salt and pepper. Heat the oil in a large enameled cast-iron casserole. Add the pork and cook over moderate heat, turning occasionally, until browned all over, about 15 minutes. Add the sauce mixture and bring to a boil, scraping up any browned bits from the bottom of the casserole. Cover tightly and cook over low heat for about 3 hours, turning the roast every 30 minutes, until very tender. Remove the pork and boil the sauce until it is reduced to 1 cup, about 5 minutes. Discard the strings. Pull the pork into long shreds and return to the casserole. Garnish with the cilantro and serve.
  • Pour the sauce mixture into a large resealable plastic bag. Add the chops and marinate in the refrigerator for at least 2 hours or for up to 8 hours. Drain the chops, pat dry and season with salt and pepper. Heat the oil in a large skillet. Add the pork chops and cook over moderately high heat, turning occasionally, until browned and cooked through, about 12 minutes. Serve the pork chops.
